After trying plenty of hash brown casserole recipes, I finally discovered the perfect mixture on my own! I always make this for any potluck I go to, and it's ALWAYS the first thing to be eaten! From dinner parties to football game gatherings, you won't be disappointed.

2 cups shredded Cheddar cheese
1 (10.75 ounce) can cream of potato soup
1 (8 ounce) container sour cream
½ (8 ounce) package cream cheese, softened, or more as needed
½ cup chopped green onions
2 cloves garlic, minced
½ teaspoon salt, or to taste
1 (16 ounce) package frozen hash brown potatoes
½ cup grated Parmesan cheese, or more to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch casserole dish.
  • Mix Cheddar cheese, potato soup, sour cream, cream cheese, green onions, garlic, and salt together in a large bowl. Fold potatoes into the mixture; pour prepared casserole dish. Top with Parmesan cheese.
  • Bake in the preheated oven until bubbling and cheese is golden brown, about 1 hour.

These easy Cheesy Potluck Potatoes are a perfect side dish that pairs well with anything from a casual barbecue to Thanksgiving dinner!

2 lb (32 oz bag) of frozen cubed hash brown potatoes (defrosted (use a zero point hash brown if following the myWW Purple plan))
¼ cup chopped onion
1 cup fat free sour cream
10.75 oz can of 98% fat free cream of chicken OR cream of mushroom soup for a vegetarian option
1 cup 2% reduced fat shredded cheddar cheese
Salt and pepper to taste
¾ cup of corn flakes (crushed)

Steps:

  • Preheat the oven to 350. Lightly mist a 9 x 13 baking dish with cooking spray and set aside.
  • In a large bowl, combine all the ingredients except the corn flakes and stir until thoroughly combined.
  • Pour the mixture into the prepared baking dish and spread evenly. Sprinkle the corn flakes over the top and bake for one hour until potatoes are cooked through. Slice into eight pieces and serve.

1 cup crushed potato chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large baking dish, mix together potatoes, soup and sour cream. Mix in cheese and butter. Salt and pepper to taste, if desired. Top the mixture with potato chips.

This is a wonderfully not-healthy dish that everyone asks for the recipe everytime I take it to a potluck!! ENJOY!!

2 lbs O'Brien potatoes (Frozen cubed hashbrowns with green and red peppers and onions)
1 pint half-and-half
1/2 cup margarine
1 small onion, chopped (optional)
1 (8 ounce) package Velveeta cheese, cubed
1 (8 ounce) package shredded cheddar cheese
salt and pepper, to taste

Steps:

  • Add frozen potatoes to 13 X 9 pan, set aside.
  • In heavy sauce pan, over low heat,add half and half, margarine, onion, and cheeses and mix until melted and smooth, stirring frequently.
  • Add salt and pepper to taste.
  • Pour over potatoes.
  • Allow to set approximately 1 hour at room temperature.
  • (I have skipped this step and they have turned out fine!!) Bake for one hour at 350 degrees until bubbly and lightly browned.

3-1/2 pounds potatoes (about 7 medium), peeled and cut into 3/4-inch cubes
1 can (10-1/2 ounces) condensed cream of potato soup, undiluted
1 cup French onion dip
3/4 cup 2% milk
2/3 cup sour cream
1 teaspoon minced fresh parsley
1/4 teaspoon salt
1/4 teaspoon pepper
1 package (16 ounces) process cheese (Velveeta), cubed
Additional minced fresh parsley

Steps:

  • Preheat oven to 350°. Place potatoes in a Dutch oven; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 8-12 minutes. Drain. Cool slightly., In a large bowl, mix soup, onion dip, milk, sour cream, parsley, salt and pepper; gently fold in potatoes and cheese. Transfer to a greased 13x9-in. baking dish., Bake, covered, 30 minutes. Uncover; bake until heated through and cheese is melted, 15-20 minutes longer.
