32 oz bag of frozen diced potatoes (thawed)
21 oz Cheddar Soup ((2 - 10.5 oz cans))
12 oz can evaporated milk
1 1/2 cups French fried onions (divided)
salt and pepper to taste

Steps:

  • In a large bowl, mix together all of your ingredients except for your French Fried Onions.
  • Pour your mixture into a greased 6-quart or casserole crock.
  • Sprinkle with 1 cup of your French Fried Onions on top.
  • Cover and cook on high for 4 hours.
  • If you are using an oven-safe crock (check with your manufacturer to know for sure), sprinkle your remaining onions on top and pop it in your broiler for about 90 seconds to crisp up the top.

3 1/2 pounds russet potatoes, washed and peeled
1/2 cup finely chopped green onions
1 tablespoon butter, melted
2 ounces low fat cream cheese, softened
1 1/2 cups plain non fat Greek yogurt
1/2 cup skim milk
1 1/2 teaspoons kosher salt
1/2 teaspoon black pepper
3/4 cup part skim mozzarella, divided
3/4 cup sharp cheddar cheese, divided

Steps:

  • Spray a 3 quart casserole dish or a 9x13 dish with cooking spray and set aside.
  • Cut the washed and peeled potatoes in half and add them to a large pot of salted water.
  • Bring the potatoes to a boil and cook them until almost tender, but still have some bite, about 8-10 minutes.
  • Let the potatoes cool until you are able to handle them, then using a box grater shred them using the largest grate.
  • In a large bowl whisk together the melted butter, cream cheese, Greek yogurt, milk, salt, and pepper.
  • Add in the shredded potatoes, green onions, and 1/2 a cup each of the shredded mozzarella and cheddar cheese.
  • Fold everything together until combined then pour the potatoes into the prepared casserole dish.
  • Top the potatoes with the remaining 1/2 cup each of shredded mozzarella and cheddar cheese.
  • Bake the potatoes at 375 degrees for about 30 minutes or until the cheese is melted and bubbly.

olive oil
salt, to taste
pepper, to taste
10 slices bacon, cooked and crumbled
3 cups sour cream
4 cups shredded cheddar cheese
fresh chive, for garnish

Steps:

  • Place potatoes on a baking sheet and poke holes in two sides with a fork.
  • Coat potatoes with olive oil, and sprinkle with salt and pepper.
  • Bake for at 425°F (220°C) for 45 minutes.
  • Remove potatoes from oven, and let cool. Chop into 1-inch (2 ½ cm) pieces.
  • Lay half of the potatoes on the bottom of a greased 9x13 inch (23x33 cm) baking dish.

10 oz can cream of chicken soup
1 tsp kosher salt
1/2 tsp black pepper
1/2 tsp onion powder
1/4 - 1/2 tsp garlic powder
1/4 tsp smoked paprika
32 oz frozen diced hash brown potatoes, (thawed)
1 1/2 cups shredded cheddar cheese ((I prefer medium or sharp))
1/2 cup shredded mozzarella cheese
1/4 cup unsalted butter, (melted)
3 cups cornflake cereal, (lightly crushed)

Steps:

  • Preheat oven to 350 F degrees. Grease a 9x13 or 3 quart baking dish and set aside.
  • In a large mixing bowl, add 1/2 cup melted butter, sour cream, cream of chicken soup, salt, pepper, onion powder, garlic powder and smoked paprika. Stir well.
  • Add in thawed hash brown potatoes and the cheddar cheese and stir well to combine.
  • Transfer to prepared baking dish, and sprinkle with mozzarella cheese.
  • In a small mixing bowl, combine 1/4 cup melted butter and cornflakes, stirring well. Spread evenly over the top of the casserole.

1 stick salted butter, plus more for the pan
1 yellow onion, chopped
2 cloves garlic, chopped
16 oz. sour cream
2 10.5-oz cans condensed cream of chicken soup
1 30-oz bag frozen shredded hash brown potatoes, thawed
8 oz. shredded cheddar
1 c. breadcrumbs
1 tbsp. chopped parsley

Steps:

  • Preheat the oven to 375˚. Heat a medium skillet over medium heat. Add 2 tablespoons of butter, then add the onion. Cook for 5 minutes, then add the garlic. Cook until the onion are slightly softened, about 2 minutes more. Transfer to a plate and let cool slightly.
  • In a large mixing bowl, combine the sour cream, cream of chicken soup, cheddar, hash brown potatoes and the onion mixture. Transfer to a greased three-quart casserole dish. Cover the casserole and bake for 45 minutes.
  • Meanwhile, place the remaining 6 tablespoons of butter in a small bowl. Cover and microwave for 45 to 60 seconds until melted. Mix in the breadcrumbs and parsley.
  • Top the casserole with the breadcrumb mixture and return to the oven, uncovered, for another 25 to 30 minutes, until the top is golden brown and the casserole is bubbly all over.

1 shallot, minced
2 cups heavy cream
1 clove garlic, minced
Kosher salt and freshly ground pepper
3 medium russet potatoes (about 2 1/4 pounds), peeled and sliced 1/8-inch thick
2 cups grated sharp white Cheddar cheese
1/4 cup grated Parmesan

Steps:

  • Heat oven to 375 degrees F. Butter a 1 1/2 to 2-quart baking dish and sprinkle with just a bit of the shallot.
  • Add the heavy cream to a medium saucepan along with the remaining shallot, garlic, salt and pepper. Place over medium heat and bring to a simmer while stirring. Let simmer until you see the liquid begin to thicken, 2 to 3 minutes.
  • Layer 1/3 of the sliced potatoes in the baking dish, cover with some Cheddar and a sprinkling of Parmesan; repeat the layering 2 more times.

2021-10-27 Preheat the oven to 400° and grease a 13×9 inch baking dish. In a large bowl, combine the frozen potatoes, onion, sour cream, cream of chicken soup, cheese and pepper. Spread this mixture out in the prepared baking dish. Sprinkle the crushed cornflakes on top of the potato mixture, and then pour the melted butter on top of the cornflakes.
