Steps:
- Wash mushrooms and pat dry with a paper towel. Slice off stems and slice mushrooms in half so that you have 2 pieces, almost like a hamburger bun. Soak mushrooms in soy sauce for 2 hours.
- While mushrooms soak, mix turkey, bread crumbs, ketchup, mustard, garlic, salt, and pepper together in a bowl. Form turkey mixture into 2-inch patties.
- Heat oil on a griddle over medium heat. Cook turkey patties on the hot griddle until browned and no longer pink in the centers, 5 to 7 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
- Heat a nonstick pan over medium heat. Cook mushrooms, cut-sides down, covered, until tender, 5 to 7 minutes.
- To serve, place turkey patties in between 2 pieces of mushroom.

CHEESY STUFFED MUSHROOMS
These are delicious mushrooms my boyfriend's father made that I tweaked into my own. You can play with different cheeses and sauces including salad dressings. I have found these to be my favorites. I have taken the stems, put them in a food processor and then combined them with some butter and flour to make a steak sauce that is delicious! Nothing goes to waste!

Steps:
- In a large bowl, combine the onion, garlic, parsley, breadcrumbs, Parmesan, eggs, milk, red pepper, flakes, oregano, Italian seasoning, salt and pepper. Stir to combine thoroughly before adding the meat.
- Then add the meat to the breadcrumb mixture.
- Form the meatballs, using the size of your dinner rolls as a guide. I made mine a little bigger than a golf ball.
- Broil the meatballs at 400 degrees for 15-20 minutes, until they're golden brown, flipping them once during cooking.
- While the meatballs cook, heat up the marinara sauce in a saucepan on medium heat.
- After the meatballs are browned, remove them from the oven and place them into the hot marinara sauce.
- Lower the heat and simmer the meatballs for another 15 minutes.
- Toast the slider buns until they're slightly golden, then place the bun bottoms onto a baking sheet.
- Place a meatball onto each bun, and top each meatball with a generous sprinkle of mozzarella cheese.
- Broil the meatballs at 400 degrees F for 3-5 minutes, just until the cheese is melted.
- Place a bun top onto each slider, then serve.

- Begin by marinating the portobello. Cut the mushrooms into 1/2" strips and set aside. Mix together the ingredients for the marinade in a flat, shallow dish. Place the portobello strips in the marinade, submerging them completely. Allow mushrooms to marinate for at least 30 minutes.
- While the mushrooms marinate, heat one tablespoon of olive oil in a medium sauté pan placed over medium heat. Add sliced onions and reduce heat to low. Saute for 15-20 minutes, stirring frequently, until the onions are golden and caramelized. Remove the onions from heat and set aside.
- In a small bowl mix together the ingredients for the basil aioli. Place in the refrigerator until ready to use.
- Transfer the portobellos, along with the marinade, into the hot sauté pan. Turn the heat up to medium-high and bring the liquid to a simmer. Heat until the liquid is absorbed and mushrooms are browned and have reduced in size by about 50%.

- Heat 1 tablespoon of the oil in a large (PFOA-free) nonstick skillet over medium heat. Add the onions and 1/4 teaspoon of salt and cook while stirring for 1 minute, then increase heat to medium-high and sauté until the onions are lightly caramelized, about 10 minutes. Adjust seasoning. Transfer to a bowl and cover to keep warm.
- Toss the fresh arugula with the lemon juice and 1/8 teaspoon of the pepper in a medium bowl; set aside.
- Rub or brush the rounded side of the mushroom caps with the remaining 1 tablespoon oil, then sprinkle the gill side with the nutmeg and remaining 1/4 teaspoon each salt and pepper. Heat the large skillet over medium-high heat. In batches, if necessary, cook the mushroom caps, gill side up, covered for 3 minutes; reduce to medium heat and cook the mushroom cap gill side down, covered, until fully cooked, about 4 more minutes. Remove the lid and immediately place the cheese triangles on top of each mushroom cap. (Note: If you’re having a cookout, grill the mushrooms instead of pan searing for a smokier flavor!)
- Place the cheesy portabella caps on the bottom portion of each roll. Top with the caramelized onions, dressed arugula, and roll tops. Serve while warm.
