- Heat oven to 350°. Mix zucchini, tomato, oregano and garlic pepper in medium bowl.
- Place 4 tortillas on ungreased large cookie sheet. Sprinkle 1/2 cup of the cheese evenly over each of the 4 tortillas. Spoon one-fourth of the vegetable mixture over cheese. Top with remaining tortillas.

- In a small saucepan, cook spaghetti sauce over medium-low heat for 3-4 minutes or until heated through. , Meanwhile, spread butter over one side of each tortilla. Sprinkle unbuttered sides of two tortillas with mozzarella cheese; top with salami and pepperoni. Sprinkle with Parmesan cheese and oregano. - Place a grill pan over med heat. Spray with non stick spray
- On one tortilla, place half the cheese, the green pepper, the pepperoni, and the remaining cheese.
- Transfer the tortilla to the grill pan. Cover the quesadilla with the other tortilla. Press down
- Cook for 2 - 4 minutes or until the cheese is beginning to melt and there is color developing on the bottom tortilla.
- Carefully turn the tortilla over to cook the other side. Leave it again 2 - 4 minutes or until the cheese is completely melted and there are grill marks on the other tortilla.
- Remove from heat, transfer to a plate, and slice into sticks. Let sit for 1 - 2 minutes.
- In a small bowl, combine the marinara sauce with the garlic powder and Italian seasoning.
- Dip the sticks into the marinara sauce and enjoy!

- Lay a tortilla flat, and on the bottom half only, spread 2 tablespoons pizza sauce. Sprinkle half the mozzarella, fontina, provolone, and Parmesan cheeses. Repeat with second tortilla. Evenly lay the pepperoni over the cheese, if using.
- Carefully fold the top half over to create a half-moon shape.
- Place the in a pre-heated panini press and cook until cheese is melted and outside is golden-crisp. Alternately, cook in a saute pan drizzled with vegetable oil or canola oil over medium-high heat, carefully flipping occasionally, until the cheese is melted and both sides are golden-brown.
- Cut into wedges and serve with additional pizza sauce for dipping.

- In 12-inch nonstick skillet, melt 1 tablespoon of the butter over medium heat; rotate skillet so butter coats bottom of skillet. Cook 1 quesadilla in butter 6 to 8 minutes, turning once, until lightly browned. Remove from skillet; place on cutting board.

CHEESY POTATO MUSHROOM QUESADILLA | DOMINOS TACO MEXICANA - MY STYLE
Steps:
- I first made tortillas and then started the filling. You can check my recipe on HOMEMADE TORTILLAS here. If not, use store-bought tortillas or any flatbread of your preference.
- In a pan on medium heat, add butter. Once the butter has melted, add onion and saute till translucent.
- Add finely chopped mushrooms and saute till it's cooked through. Add salt, curry powder, and switch off the flame.
- In a bowl, add mashed potatoes and sauteed ingredients from above. Mix well and keep this aside.
- Take one tortilla at a time. Spread 1 tsp of chili sauce and pizza sauce as shown in the video. Add cheese as desired on one side of the tortilla, followed by a thick layer of potato mushroom mixture and some more cheese. Fold over the other side of the tortilla. Check video for more details
- In a pan on medium heat, add oil and place the tortilla. When it becomes golden on the underside and cheese has melted, flip and cook it on another side. You may drizzle oil if needed.
- Repeat the process for the remaining mixture and tortilla. Serve hot and enjoy.

- In a pan heat some oil. As the oil gets hot, add chopped Onions. Cook on medium high for 1-minute. Then add Chopped Bell pepper and sliced Jalapeños. Sautè for another 30-seconds.
- In the same pan add Garlic powder, Smoked Paprika, Ground Cumin, Dried Oregano, Salt, and Pepper. Toss well to combine. Cook on medium high for 30-seconds.
