1 (16 ounce) package tri-color rigatoni pasta
2 onions, diced
3 tomatoes, diced
12 ounces provolone cheese, cut into strips
2 green bell peppers, diced
1 (8 ounce) package sliced pepperoni
¼ cup sliced olives, or to taste
1 cup olive oil
½ cup vinegar
2 tablespoons grated Parmesan cheese
1 tablespoon white sugar
½ teaspoon dried oregano
salt and ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook rigatoni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 13 minutes. Drain and let cool, about 10 minutes.
  • Combine pasta, onions, tomatoes, provolone cheese, green bell peppers, pepperoni, and olives in a large bowl.
  • Whisk olive oil, vinegar, Parmesan cheese, sugar, and oregano together in a bowl to make dressing. Pour over pasta mixture; toss until well mixed.

1 pkg. (9 oz.) refrigerated cheese tortellini, uncooked
1 green pepper, cut into strips
1 cup KRAFT Shredded Mozzarella Cheese
24 slices OSCAR MAYER Pepperoni
1/2 cup KRAFT Tuscan House Italian Dressing
4 cups torn romaine lettuce

Steps:

  • Cook pasta as directed on package, omitting salt. Rinse with cold water; drain well. Place in large bowl.
  • Add all remaining ingredients except lettuce; mix lightly.
  • Refrigerate 1 hour.
  • Place lettuce in 1-1/2-qt. bowl just before serving; top with pasta mixture.

3 3/4 cups uncooked regular or multigrain rotini pasta (12 oz)
3/4 lb lean Italian turkey sausage, casings removed
1 large onion, chopped (1 cup)
1 lb fresh mushrooms, sliced (6 cups)
1 can (14.5 oz) Muir Glen™ organic diced tomatoes, undrained
1 jar (25.5 oz) Muir Glen™ organic Italian herb pasta sauce
1/2 teaspoon dried basil leaves
1 package (6 oz) sliced turkey pepperoni
1 bag (8 oz) shredded reduced-fat Italian cheese blend (2 cups)

Steps:

  • Heat oven to 350°F. In 5-quart Dutch oven, cook pasta as directed on package, omitting salt. Drain; return to Dutch oven.
  • Meanwhile, in 12-inch nonstick skillet, crumble sausage. Cook over medium heat 5 to 7 minutes, stirring occasionally, until no longer pink; drain if necessary.
  • Add onion and mushrooms to sausage in skillet; cook 7 to 8 minutes, stirring frequently, or until vegetables are tender. Stir in tomatoes; heat to boiling. Reduce heat; simmer uncovered 3 to 4 minutes or until slightly thickened. Stir in pasta sauce and basil. Heat just to boiling.
  • Add sausage mixture, pepperoni and 1 1/2 cups of the cheese to pasta in Dutch oven; stir until well mixed. Spread in ungreased 13x9-inch (3-quart) glass baking dish. Spray sheet of foil with cooking spray; cover baking dish with foil, sprayed side down.
  • Bake 30 minutes or until bubbly and thoroughly heated. Remove foil; sprinkle with remaining 1/2 cup cheese. Bake uncovered 5 to 10 minutes longer or until cheese is melted.

I love cheese in a pasta salad - good with BBQ or for a picnic, or any time you want a creamy pasta salad!

1 (8 ounce) package elbow macaroni, cooked according to package directions and drained
3 dill pickles, finely chopped
3 hard-boiled eggs, finely chopped
2 cups frozen peas, thawed
3 celery ribs, sliced thinly
1/2 medium onion, finely chopped
8 ounces sharp cheddar cheese, diced into 1/4 inch cubes
1 cup mayonnaise (can use low-fat Hellmann's or Kraft)
1/2 cup milk
1/4 cup sugar or 1/4 cup Splenda sugar substitute
1/4 cup cider vinegar
salt and pepper

Steps:

  • Gently toss all the salad ingredients together in a large bowl.
  • Set aside.
  • For the dressing, combine the mayonnaise and milk.
  • Then add the sugar and vinegar.
  • Stir well, and season with salt and pepper to taste.
  • Pour the dressing over the salad, and toss gently to combine.
  • Refrigerate at least 2 hours Overnight is even better.

1/2 cup mayonnaise
1/3 cup ranch dressing
4 green onions (chopped)
6 strips bacon (cooked and crumbled)

Steps:

  • Cook noodles according to package directions.
  • In a large mixing bowl, combine the mayonnaise, ranch dressing, green onions, bacon, garlic salt, onion powder, and pepper until well combined.

This creamy pasta salad came about when I combined ingredients from two different recipes. It got rave reviews when I served it at a baby shower.

4 cups cubed cooked chicken
1 package (8 ounces) spiral pasta, cooked, drained and cooled
1-1/2 cups cubed Gouda or Monterey Jack cheese
1 cup sliced celery
1 cup seedless green grapes
1 cup mayonnaise
1/4 cup sour cream
3 tablespoons lemon juice
3 tablespoons honey
1 teaspoon dried thyme
1/2 teaspoon ground mustard
1/4 teaspoon white pepper
2/3 cup chopped pecans, toasted
Lettuce leaves, optional

Steps:

  • In a large bowl, combine chicken, pasta, cheese, celery and grapes. In a small bowl, combine next seven ingredients. Pour over chicken mixture and toss to coat. Cover and chill until ready to serve; toss with pecans.

1/2 cup Mozzarella cheese (cubed)
1/2 cup sharp cheddar cheese (cubed)
3/4 cup cherry tomatoes (halved)
1/2 cup mini pepperoni slices
1 (2.25 ounce) can sliced olives (drained)
1 green bell pepper (diced)
1/2 teaspoon pizza seasoning
3/4 cup olive oil
1/2 cup red wine vinegar
2 teaspoons oregano
1 teaspoon garlic powder
1 teaspoon salt

Steps:

  • In a large bowl, combine your pasta, Parmesan cheese, Mozzarella cheese, sharp cheddar cheese, cherry tomatoes, pepperoni slices, sliced olives, green pepper, and pizza seasoning.
  • In a smaller separate bowl, make your dressing by combining your olive oil, red wine vinegar, oregano, garlic powder, and salt. Mix until well combined.
  • Pour the dressing mixture over the pasta salad, and let refrigerate for about an hour.
  • Serve cold.

  • While the pasta is cooking, cook and crumble the sausage in a very large oven-proof skillet over medium high heat. Transfer the cooked sausage to a medium size bowl and return the skillet to the stove. Drizzle the oil into the skillet along with any remaining grease from the sausage. Add the peppers, onions, and garlic to the hot skillet.
  • Cook the vegetables, stirring frequently, over medium high heat. When the peppers are almost tender, about 3-4 minutes, add the mushrooms and continue cooking for an additional 3 minutes, until the mushrooms have browned and softened. Transfer the cooked vegetables to the bowl with a sausage.
  • Turn off the heat under the skillet and add the sauce to the skillet, along with the Italian seasoning, red pepper flakes, salt, and pepper. Stir to combine and remove about 1 1/2 cups of the sauce, setting it aside for the moment.
