SOUTHERN PINEAPPLE CASSEROLE

- Preheat oven to 350°. In a large bowl, mix sugar and flour; stir in cheese. Stir in both cans of drained pineapple., Transfer to a greased 1-1/2-qt. baking dish. In a small bowl, mix crackers and butter. Sprinkle over top. Bake, uncovered, 30-40 minutes or until topping is brown and cheese is melted. Let stand 10 minutes.

PINEAPPLE CHEESE CASSEROLE
Steps:
- Preheat the oven to 350°F and spray a 2-quart baking dish with nonstick cooking spray. Drain the pineapple very well and reserve 6 tablespoons of the juice for the recipe.
- In a large bowl, stir together the sugar, flour and 6 tablespoons of the juice. Add the pineapple and mix well. Pour it into the prepared dish. Sprinkle the cheese over the top.
- In a medium bowl, add the melted butter to the crushed cracker crumbs and stir to coat them in the butter. Sprinkle them evenly over the cheese. Bake for about 30 minutes and then allow the casserole to rest for about 10 minutes and thicken before serving.

- Preheat oven to 350 F. Spray a medium size casserole dish with cooking spray (I use an oval casserole dish that is about 2.5 quarts).
- Place the shredded cheese in a large bowl. In a smaller bowl, combine the flour and sugar and toss with cheese until combined. Stir in the pineapple and pour into casserole dish.
- Combine the reserved pineapple juice, crackers and melted butter and spread over pineapple-cheese mixture.
