PIEROGI QUESADILLA
I'm always trying something new when it comes to quesadillas and I decided to experiment with this after having some Pierogi Pizza from the Boston Pizzaria in Niagra Falls, CA. It came out much better than I thought it would and was a quick and easy lunch to prepare.

Steps:
- Heat oil in skillet on medium high heat.
- Peel and slice potato into 1/8 inch slices.
- Mix basil, salt and pepper with pototo slices.
- Cook potatoes in skillet until they start to soften (do not burn or fry them).
- Remove pototoes from the skillet and place the tortilla in the hot oil.
- Mix cheeses together and evenly distribute over the entire tortilla.
- Place potatoes, crushed red peppers and italian dressing on one half of the tortilla.
- When the cheese has started to melt, fold the cheese only half on top of the half with the toppings.
- Cook until both sides are a light golden brown (flip as needed).
- Place on a plate, cut into quarters and garnish with salsa, sour cream and guacamole.
- Enjoy!

- Heat mashed potatoes according to package directions., Spritz cooking spray over one side of each tortilla. Place half of the tortillas on a griddle, greased side down. Spread with mashed potatoes; top with ham, cheese and remaining tortillas, greased side up. Cook over medium heat until golden brown and cheese is melted, 2-3 minutes on each side.

MASHED POTATO QUESADILLA
I had something like this at a restaurant last night and I had to try to duplicate it at home! It reminds me of a perogies! I think that this recipe can really be played up with just about anything you like with potatoes! This can be a super fast meal if you use the heat and serve bacon and premade mashed potatoes!

- Stir together the mashed potatoes, bacon, and green onions. Spread the mashed potato mixture onto one side of half of the tortillas, spreading to within 1/2 inch of the edges. Sprinkle the shredded cheese on top of the mashed potatoes and top with the remaining tortillas. Lightly butter each side of the quesadillas.
- Preheat a large skillet over medium heat. Place a quesadilla into the preheated pan, and cook until golden brown and crispy, then turn over, and continue cooking on the other side until browned, 2 to 3 minutes per side. Repeat with remaining quesadillas. Serve with salsa and sour cream.

THE CHEESIEST QUESADILLAS

- Roast the chiles by using metal tongs to hold them one-by-one over the flame of your stovetop until the skin is totally charred. (If you don't have a gas stove, you can use an outdoor grill OR place them on a baking sheet directly under your oven's broiler.) When totally blackened, place the chiles in a large resealable plastic bag and seal the bag to allow them to sweat for a good 20 minutes. Then use a knife to scrape off most of the blackened skin. Stem, seed and finely mince the chiles.
- Butter a large cast-iron skillet generously and set over medium heat. Put 1 tortilla in the skillet and sprinkle on a third of the Monterey Jack and pepper jack cheese, evenly spreading it all the way to the edges so that the surface will be totally covered. Sprinkle on a third of the roasted chiles. Wait for the cheese to mostly melt, then fold half of the tortilla over itself. Cook for 20 more seconds, then flip the half-moon over and cook until the tortilla is buttery and golden, for 30 more seconds. Keep warm and repeat with the remaining tortillas, cheese and chiles. Cut into 4 or 5 wedges each and serve with bowls of chili.
CHEESY QUESADILLAS

- Place the tortillas on a greased baking sheet. Combine the cheese and salsa; spread over half of each tortilla. Fold over. , Broil 4 in. from the heat for 3 minutes on each side or until golden brown. Cut into wedges.

JALAPENO PIEROGI QUESADILLAS - NOSHING WITH THE NOLANDS

- Boil the potatoes in salted water for about 17-18 min. until very tender. Mash with the butter and skim milk. Set aside to cool slightly.
- Cook onions and jalapenos in canola oil in a medium saute pan on medium heat until onions are translucent. Season with salt and pepper. Set aside.
- Divide the mashed potato among 4 large tortillas shells and smooth out to 1/2" of the edge. Top each with a 1/4 of the onion, jalapeno mixture.
- Place about 3/4 cup of the cheese over top of each tortilla. Cover with the second tortilla on each. Spray the top of the tortilla with cooking spray and also a large sized saute pan. Place the quesadilla in the saute pan with the sprayed tortilla up. Cook on medium high heat until golden brown, flip and cook the other side until golden also.
