Cheesy Peas image

This delicious side dish of cheesy peas is courtesy of Jamie Oliver and can be found in his cookbook, "Cook with Jamie."

Number Of Ingredients 7

Coarse salt
1 pound peas, fresh or frozen
1 tablespoon unsalted butter
1/4 cup freshly grated parmesan cheese
Juice of 1/2 a lemon
Freshly ground white pepper
Chopped fresh mint leaves, for garnish

Steps:

  • Bring a small saucepan filled with water to a boil, add salt and return to a boil. Add peas and cook until tender, about 2 minutes. Drain, reserving 4 tablespoons cooking water.
  • Return peas to saucepan with reserved water and place over medium heat. Add butter and stir until combined. Add cheese and continue to stir until butter and cheese have melted and evenly coat peas. Add more of the reserved cooking water if necessary.
  • Season peas with lemon juice and white pepper. Ganish with mint and serve immediately.

4-1/2 teaspoons butter
4-1/2 teaspoons all-purpose flour
1/4 teaspoon salt
1/8 teaspoon white pepper
1-1/2 cups 2% milk
3/4 cup cubed process cheese (Velveeta)
2 packages (10 ounces each) frozen peas, thawed

Steps:

  • In a large saucepan, melt butter over low heat. Stir in the flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Add the cheese; stir until melted. Stir in peas; cook 1-2 minutes longer or until heated through.

1 package (10 ounces) frozen peas, thawed
1 jar (6 ounces) sliced mushrooms, drained

Steps:

  • In a large bowl, combine all the ingredients. Transfer to a greased 1-1/2-qt. baking dish. Cover and bake at 350° for 20 minutes or until heated through. Stir before serving.

12 ounces uncooked medium shell pasta
1/2 pound fresh mushrooms, quartered
1/2 cup chopped green onions
1 garlic clove, minced
2 tablespoons butter
2 tablespoons all-purpose flour
1 tablespoon cornstarch
3 cups whole milk
1/2 cup chicken broth
1 cup frozen peas
1 teaspoon chopped seeded jalapeno pepper
1/2 to 1 teaspoon salt
1/4 teaspoon pepper
Dash hot pepper sauce
2 cups shredded cheddar cheese, divided
1-1/2 cups shredded Monterey Jack cheese
1/4 cup dry bread crumbs

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large skillet, saute the mushrooms, onions and garlic in butter for 5 minutes or until tender. Stir in flour and cornstarch until blended. Gradually add milk and broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. Add peas, jalapeno, salt, pepper and hot pepper sauce; simmer for 1 minute. Stir in 1-1/2 cups cheddar cheese and Monterey Jack cheese until melted. Remove from the heat., Drain pasta; transfer to a greased 13x9-in. baking dish. Stir in cheese sauce. Sprinkle with bread crumbs and remaining cheddar cheese. , Bake, uncovered, at 375° for 35-40 minutes or until golden brown and bubbly.

1 large head cauliflower (about 2 pounds), broken into florets
1/3 cup butter, cubed
1/3 cup all-purpose flour

1-1/2 cups shredded cheddar cheese, divided
