- Mix 1 cup grated Gruyere, 3 tablespoons softened butter, 2 teaspoons chopped rosemary or thyme, and a pinch of red pepper flakes. Spread on 2 pieces lavash (or other flatbread); top with 1/2 cup thinly sliced red onion. Bake at 425 degrees F on a parchment-lined baking sheet until golden and crisp, 10 minutes. Season with salt; cut into pieces.

Steps:
- Preheat oven to 400°.
- Line baking sheet with parchment paper (or foil) and spray w/ nonstick spray.
- Unroll dough onto parchment paper.
- Spread 1/2 the herb cheese over one long half of dough, leaving 1/2" plain borders.
- Sprinkle with 1/2 Parmesan and 2 T parsley.
- Using parchment paper as aid, fold the dough over filled half *do not seal edges.
- Spread remaining cheese on top, sprinkle with remaining Parmesan cheese.
- Peel off enough outer layers of onion to have 2" circles. Cut into 1/8" thick rounds.
- Arrange 1 row of zucchini down along one side of dough. Arrange onions down the center. Add one more row of zucchini along the outside of onio row (you will have 3 rows of veggies).
- Brush veggies with Olive Oil. Sprinkle w/ salt and pepper.
- Bake until the bread is puffed up & golden brown, about 24 minutes.
- Sprinkle with1 T parsley before serving.

- Heat dressing in large skillet on medium heat. Add onions; cook on medium-low heat 20 min. or until golden brown, stirring frequently. Add garlic; cook and stir 2 min. Remove from heat.
- Heat oven to 400°F. Unroll dough onto baking sheet sprayed with cooking spray; press into 14x12-inch rectangle. Bake 5 min.
- Sprinkle crust with cheese; top with onions and peppers.

- In bowl, combine water, egg whites, salt, sugar and yeast. Using wooden spoon, stir in 2 cups (500 mL) of the flour, cheese and thyme; beat until smooth. Add enough of the remaining flour to form soft dough. Turn out onto lightly floured surface; knead several times to form ball. Place in greased bowl, turning to grease all over. Cover with plastic wrap; let rise for 45 minutes.
- Punch down dough and turn out onto lightly floured surface; divide into 4 portions. Roll out each portion into 1/8-inch (3 mm) thick circle or oval. Place on lightly greased baking sheets; prick all over with fork. Brush lightly with water; sprinkle with poppy and sesame seeds.
- Bake in 400°F (200°C) oven for 10 to 15 minutes or until golden brown. Transfer to racks and let cool. Break into shards. (Flatbread can be stored at room temperature in airtight container for up to 3 days.).

- Add the flour, olive oil and salt and pepper to a large mixing bowl. Gradually adding the water, knead the mixture with clean hands until it comes together into a dough. The dough should be moist but not overly sticky, so you may not need all of the water (or you may need a dash more!). Continue to knead for a few more minutes, until the dough is fairly elastic. Place the ball of dough into a lightly oiled bowl, and cover with a tea towel. Leave to rest for 1 hour.
- After an hour, divide the dough into six equal pieces. On a lightly floured surface, roll one of the balls into a rough oval or circle shape (don't worry if it's a bit irregular!). On one half of the circle, add a bit of the cheese and a few of the sliced spring onions (one sixth of each), leaving a small gap around the edge. Fold over the other half of the circle, and press down to remove as much of the air as possible. Seal around the edge with a fork (I also flipped mine over and used the fork on the other side as well to make sure it was well sealed). Again, press the flatbread down so that it's really flat with no air inside. Repeat with the remaining dough and fillings.
- Add a little of the fat (I used a mixture of oil and butter) to a large frying pan, and allow it to heat up. When it's just sizzling, add your flatbreads (I did two at a time). Cook over a medium heat for a few minutes each side until golden brown. Transfer to a plate lined with kitchen paper while you cook the other flatbreads. Serve warm.
