4 cups cooked cream of buckwheat
1 1/2 cups of chopped onions
1/8 cup butter
1 cup sour cream
1 cup cottage cheese
1 teaspoon salt
1/2 teaspoon pepper
2 cups shredded mexican cheese
8 ounces green chilies, chopped
16 ounces refried beans
1 lb ground beef or 1 lb shredded chicken, cooked and seasoned
2 1/2 teaspoons cumin
1 tablespoon hot sauce
2 garlic cloves
1 cup of chopped green pepper

Steps:

  • Prepare cream of buckwheat using either milk, water, or broth.
  • Sauté onion, green pepper, garlic, butter and ground beef (or chicken) in pan along with a taco seasoning.
  • Combine buckwheat, sour cream, cottage cheese, refried beans, hot sauce, cumin, salt, and pepper.
  • In at least a 3 quart casserole dish, layer buckwheat mixture, meat and vegetable mixture, shredded cheese, and green chillies then repeat layers.
  • Bake uncovered at 375° for approximately 60 minutes or until bubbly and golden.
  • Let stand for 10 minutes before serving dish.

1 (10.75 ounce) can condensed cream of chicken soup
1 (8 ounce) container fat-free sour cream
1 (4.5 ounce) can chopped green chilies
½ cup low-fat milk
2 ½ cups cooked, shredded chicken breast meat
8 (6 inch) yellow corn tortillas, torn into bite-size pieces
1 teaspoon taco seasoning mix, or more to taste
1 large tomato, chopped
1 ½ cups shredded Mexican-style cheese blend, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Stir condensed soup, sour cream, green chilies, and milk together in a large bowl. Add chicken, tortilla pieces, and taco seasoning; stir. Mix tomato and 1 cup Mexican-style cheese blend into chicken mixture.
  • Spread chicken mixture out into the prepared baking dish and cover the dish with aluminum foil.
  • Bake casserole in the preheated oven for 40 minutes. Discard aluminum foil. Sprinkle remaining cheese over the top of the casserole and continue baking until cheese melts and casserole is bubbling, 5 to 10 minutes more. Let rest for 5 minutes.

1/2 lb ground beef round
1 can (15 oz) ranch-style pinto beans, drained
1 can (10 oz) diced tomatoes with green chiles, drained
1 teaspoon garlic powder
1 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon pepper
1 can (10 3/4 oz) condensed cream of celery soup
1 can (10 3/4 oz) condensed cream of mushroom soup
1 can (10 oz) Old El Paso™ enchilada sauce
9 soft corn tortillas (6 inch)
2 cups shredded sharp Cheddar cheese (8 oz)
2 cups shredded Monterey Jack or pepper Jack cheese (8 oz)
1 medium tomato, chopped (3/4 cup)
4 medium green onions, chopped (1/4 cup)
1 medium avocado, chopped
Sour cream, if desired
Fresh cilantro leaves, if desired

Steps:

  • Heat oven to 350°F. Lightly spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In 12-inch nonstick skillet, cook sausage and beef over medium-high heat 5 to 7 minutes, stirring often, until thoroughly cooked; drain. Stir in beans, diced tomatoes, garlic powder, cumin, salt and pepper. Cook 2 minutes or until thoroughly heated.
  • In 2-quart saucepan, stir together soups and enchilada sauce. Cook over medium heat 3 minutes, stirring constantly, until thoroughly heated.
  • Spoon one-third of the sauce into baking dish; top with 3 of the tortillas. Spoon half of the meat mixture over tortillas; top with another one-third of the sauce and 1 cup of the Cheddar cheese. Top with 3 tortillas. Repeat layers with remaining meat mixture, sauce, Cheddar cheese and tortillas. Sprinkle with 1 cup of the Monterey Jack cheese.
  • Cover loosely with foil. Bake 20 minutes. Uncover; sprinkle with remaining 1 cup Monterey Jack cheese. Bake 10 minutes longer. Let stand 10 minutes before serving. Top with tomato, onions, avocado and dollop of sour cream. Garnish with cilantro.

10 g vegetable stock cubes, crumbled
1 cup buckwheat groats, kernels
3 -4 cups Italian parsley, chopped as rough or fine as you like it
1 cup sun-dried tomato, chopped (available from delis, can use fresh tomato if preferred)
1/2 cup lemon juice
1 1/2 tablespoons olive oil
1 clove garlic, finely chopped,more to taste

Steps:

  • Place water in a medium sized saucepan and bring to the boil.
  • Add crumbled stock cube, or powder, and the buckwheat kernels.
  • Simmer for 20 minutes or until buckwheat is tender.
  • Drain, discard stock.
  • Place the buckwheat in a large bowl.
  • Add the parsley, tomatoes, lemon juice, olive oil and garlic.
  • Toss to combine and serve.

1 tablespoon olive oil
500 g diced chicken fillets
1 (420 g) can kidney beans, drained
1 (420 g) can Mexican chili beans
1 (420 g) can corn kernels, drained
1 (300 g) jar mild salsa
1 cup grated cheese

Steps:

  • Heat oil and brown chicken in pan.
  • Tip beans over base of 4 cup capacity ovenproof baking dish.
  • Top with all the cooked chicken.
  • Tip corn over chicken layer.
  • Pour over salsa.
  • Sprinkle cheese over the top.
  • Bake for 20 minutes or until chicken is cooked through
  • Serve with guacamole and/or sour cream if desired.
