Steps:
- Preheat oven to 350°. In a large skillet over medium heat, heat oil. Add onion and sauté until soft. Stir in garlic and cook until fragrant, about 30 seconds. Add chicken and about 1/2 cup enchilada sauce, or until the chicken is fully coated. Toss until evenly combined. Stir in lime juice, and season with salt and pepper to taste.
- Working one burrito at a time, lay a tortilla on a cutting board or clean working service. Add a scoopful each of rice and beans to the center. Add the chicken mixture then top with a small handful each of both cheeses. Reserve about ½ cup of cheese total to sprinkle on the burritos before baking. Roll the burrito tightly and place in a large casserole dish. Repeat with remaining tortillas.
- Pour the remaining enchilada sauce over the burritos then sprinkle the extra cheeses on top. Cover until the cheese is melted, about 15 minutes.
- Garnish with cilantro and serve with sour cream and hot sauce, if desired.

- Place the two tortillas on a flat surface, like a wooden cutting board.
- Strain the chili with a slotted spoon and place about ½ cup in the middle of each tortilla.
- Top with ¼ cup rice and ½ cup of Mexican cheese.
- Fold the burrito one side at a time, long side, short side, short side, long side. Place them seam-side down on a plate or the cutting board.
- Heat a non-stick skillet over medium-high heat.
- Add two of the chili burritos, seam-side down, on the skillet. Heat for 3-5 minutes.
- Then use a spatula to flip to the other side. Place a lid on the skillet to speed up the warming process.
- The burritos are ready when they are warm and are just starting to brown.
- Repeat with the remaining two burritos.

- In a mixing bowl, add taco seasoning to chili and stir to combine.
- Spoon 1/4 cup of chili onto each tortilla. Fold two opposite sides in about 1/2" then fold the other two side in as tightly as possible to form each chili-stuffed tortilla into a burrito.

- 1. Scramble up some eggs, mix with a little water or milk to make them fluffy. Or, just scramble them and season with salt and pepper.
- 2. In a saucepan or microwave, heat your leftover chili.
- 3. Zap the flour tortillas in the microwave for about 20 seconds to make them soft.
- 4. Place a tortilla on a microwave-safe plate. Spoon some chili onto the middle of the tortilla being careful to leave enough tortilla edge to fold up into your burrito. (I would suggest using a slotted spoon. You don't want too much soupiness or it will soak right through the tortilla and make it doughy and fall apart.)
- 5. Layer some scrambled eggs on top of the chili. Then top with shredded cheese. Dollop with sour cream.
- 6. Roll up into burrito.
- 7. Put into microwave for about 30 seconds or long enough to melt the cheese.

- In a large pot or dutch oven, cook ground beef, onions, chili powder and salt. Cook until ground beef is cooked through and onion is translucent. Add water and rice to pot. Mix well and bring to a boil. Put lid on pot and lower heat to low. Cook for 20 minutes. Once rice is cooked through, add re-fried beans and tomato paste. Stir to combine. If mixture is soupy then mix 2 Tablespoons of cornstarch with 1Tablespoon of water in a small bowl. Mix well and add it to rice mixture. If rice is NOT soupy, skip this step. Add 1 1/2 cups of cheese to rice mixture and mix well. Scoop 1/2 cup of mixture into each tortilla and roll up like a burrito. Serve immediately.
