Time 25m

Number Of Ingredients 5

2 large leeks , washed, trimmed and halved
4 slices ham
50g parmesan
100ml crème fraîche
1 slice bread , whizzed into crumbs

Steps:

  • Heat oven to 200C/fan 180C/gas 6 and boil the kettle. Place the leeks in a single layer in a large saucepan and add enough hot water from the kettle to cover. Bring to the boil, then cover and simmer for 5 mins until the leeks are just tender.
  • Lay 2 slices of ham, overlapping, on a board, then sit 2 leek halves at one end. Wrap up, repeat with the other leeks, then place the parcels in a small ovenproof dish.
  • Mix three-quarters of the cheese with the crème fraîche, then season and spoon over the parcels. Mix the remaining parmesan with the breadcrumbs and scatter over the top. Bake for 15 mins until the cheese is golden and bubbling. Serve with a green salad and crusty bread to mop up the sauce.

HAM AND LEEK PIE

Ham and Leek Pie image

Ham and leek pie is a comforting, creamy, savory pie recipe that uses simple ingredients - just ham, leeks, potatoes, carrots, and a few other ingredients. Topping with a puff pastry crust makes it complete!

Provided by Savory With Soul

Categories     Main Course

Time 1h

Number Of Ingredients 14

2 Tbsp butter
2 cups cooked ham ((cut in chunks))
½ cup carrot, (sliced (1 large))
1 cup leeks, (sliced - white and light green part only (about 2 leeks))
2 cups potatoes, (peeled and chopped (about 2 medium size))
2 tsp marjoram ((dry))
¼ tsp salt, (more to taste)
¼ tsp black pepper, (more to taste)
1 cup chicken stock (or broth (or ham stock if you have it))
4 Tbsp flour ((all purpose))
½ cup milk (or cream)
⅛ tsp nutmeg ((ground))
1 puff pastry sheet
1 tsp yellow mustard ((or Dijon))

Steps:

  • Remove puff pastry from freezer to thaw.
  • In a medium sauce pan, cook potatoes and carrots in boiling water until tender (5 minutes).
  • Meanwhile, preheat cast iron skillet to medium heat. Melt butter and brown ham with leeks and marjoram for 5 minutes.
  • Preheat oven to 350 F.
  • Sprinkle flour over top of ham. Then add nutmeg and stock and blend with a fork or whisk to eliminate any lumps. Cook this mixture on medium heat for about 5 minutes to thicken, stirring frequently.
  • Drain potatoes and carrots and add to skillet along with cream and mustard. Mix together.
  • Unroll puff pastry and cut appropriate size to cover top of pie (can use an inverted plate of the same size).
  • Top pie filling with puff pastry dough. Poke the top with a fork a few times to prevent over rising.
  • Place skillet on cookie sheet to catch any drips.
  • Bake for 30 minutes or until browned and bubbly.

CHEESY LEEKS à LA OLIVER

Cheesy leeks à la Oliver image

If you want to take this dish to the next level, invest time in cooking your leeks super-slowly until sticky and sweet.

Provided by Jamie Oliver

Categories     Sides     Jamie Magazine     Dinner Party     Christmas     Thanksgiving     British     Leek

Time 1h

Yield 12 as a side

Number Of Ingredients 9

6 large leeks
2 cloves of garlic
5 sprigs of fresh thyme
olive oil
1 knob of unsalted butter
100 ml single cream
100 g Cheddar cheese
50 g Parmesan cheese
100 g brie

Steps:

  • Preheat the oven to 180ºC/350ºF/gas 4.
  • Trim, wash and slice the leeks, about 2cm thick, at an angle. Peel and slice the garlic, then pick the thyme leaves.
  • Put a large casserole-type pan (ideally one you'd be happy to serve in) on a medium heat and add a drizzle of oil, the butter, thyme leaves and garlic.
  • Cook until it begins to bubble and fry, then stir in the leeks. Continue cooking and checking on it every few minutes to stir and make sure it doesn't catch.
  • At this point, you have two choices: one is good, one is great. You can either stir the rest of the ingredients into the leeks, grating in the Cheddar and Parmesan, and tearing in the brie, then put it into the oven to cook for 45 minutes uncovered, or, if you want the sweetest leeks in the world (and I think you do), do the following...
  • Turn the heat under the pan down a little and cook the leeks for about 35 minutes, or until soft and intensely gorgeous, stirring every now and then.
  • Season, then spoon it all into a dish, or leave in the pan.
  • Stir in the cream and splash of water, grate over the Cheddar and Parmesan, then pull the brie into parts and bomb those on top.
  • Pop in the oven for 15 minutes, or until golden and bubbling.

CHEESY LEEKS

Cheesy leeks image

Cheesy leeks are great as a side dish for roast chicken - especially if you are serving vegetarians as well as meat eaters. This recipe makes enough for a generous supper for two or a vegetable accompaniment for four.

Provided by Justine Pattison

Categories     Side dishes

Yield Serves 2-4

Number Of Ingredients 8

4 slender leeks (around 575g/1lb 4½oz total weight), trimmed
20g/¾oz butter, plus extra for greasing
20g/¾oz plain flour
200ml/7fl oz milk, semi-skimmed or full-fat
1 tsp English or Dijon mustard
100g/3½oz mature cheddar cheese, or other cheese, finely grated
2 tbsp dried white breadcrumbs (ideally panko breadcrumbs), optional
salt and freshly ground black pepper

Steps:

  • Preheat the oven to 220C/200C Fan/Gas 7. Lightly butter a shallow baking dish. (It will need to hold around 1 litre/1¾ pint.)
  • A third-fill a medium saucepan with water and bring to the boil. Remove any tough or damaged leaves from the outside of the leeks if not already done. Trim the leeks, leaving all of the white part and some of the green.
  • Cut the leeks into roughly 3cm/1¼in pieces and add to the water. Return to the boil and cook for 5 minutes, depending on the thickness, or until the leeks are tender. They are ready when the tip of a knife slides in easily. Drain in a colander over a large mixing bowl to reserve the cooking water.
  • To make the sauce, return the empty pan to the heat, add the butter and melt gently. Stir in the flour and cook for 10-15 seconds stirring. Gradually add the milk and then a ladleful (around 100ml/3½fl oz) of the reserved cooking liquid, stirring or whisking well between each addition to make a smooth, creamy sauce.
  • Add the mustard, half the cheese and season generously with salt and pepper. Simmer gently for 1-2 minutes, stirring constantly.
  • Scatter the leeks into the baking dish and pour the sauce on top. Mix the remaining cheese with the breadcrumbs, if using, and sprinkle on top. Bake for 12-15 minutes or until bubbling and golden brown.
