OLD FASHIONED POTATO KUGEL
I got this recipe from a British grandmother. It is hands-down the best potato kugel my family (and most of my guests) ever tasted. It's fabulous served hot with sour cream. It's also incredible put in a cholent overnight.

- Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan with 1 tablespoon of vegetable oil.
- Combine the potatoes and onions in a large bowl. Mix in the eggs, 1/3 cup of vegetable oil, salt, and pepper. Pour the mixture into the prepared pan.
- Bake in the preheated oven until the top is golden brown and crisp, 1 1/2 to 2 hours.

- Preheat oven to 375°. In a large bowl, whisk eggs, matzo meal, salt and pepper., In a food processor fitted with the grating attachment, alternately grate potatoes and onion. Add to egg mixture; toss to coat. In a small saucepan, heat oil over medium heat until warmed. Stir into potato mixture. Transfer to a greased 13x9-in. baking dish. Bake 40-50 minutes or until golden brown.

- NOTE: food.com did not recognize "frozen latkes" as an ingredient, so I used "frozen hash brown potatoes" instead. These are an acceptable substitute, but frozen latkes are preferred.
- Heat frozen latkes in oven per package directions to the point where they are reheated, but not yet fully crispy, usually about 1/2 to 2/3 of the package direction cooking time, or about 10 minutes in a 425 degree Fahrenheit oven. Set aside to cool. When cooled to room temperature, shred the latkes by hand.
- Preheat oven to 350 degrees Fahrenheit. Oil or spray a 13x9-inch (3-quart) baking dish with cooking spray.
- Heat 1 tablespoon butter in a skillet, add chopped onion, and sauté over medium-low heat for about 7 minutes until soft but not brown. Add garlic and cook another minute.
- In a separate bowl, combine cooked onion, garlic, chives, sour cream, cottage cheese, Cheddar cheese, Swiss cheese, eggs, pepper, mustard powder, and 1 teaspoon of the salt.
- Reserve approximately 3/4 cup of the shredded latkes for crust. Fold the rest of the shredded latkes into the onion-cheese mixture and combine by hand.
- Pour mixture into baking dish and spread evenly.
- Melt the remaining 3 tablespoons of butter and add the remaining 1 teaspoon salt, paprika, and Parmesan cheese. Add the remaining shredded latkes and combine by hand.
- Spread the latke-Parmesan mixture evenly over the top of the mixture in the baking dish.
- Bake about 1 hour or until set with a golden brown crust.

- Place the grated sweet potatoes in a kitchen towel. Squeeze out as much liquid as you can. Sweet potatoes are tough, so use your muscles! The more you squeeze, the crispier the latkes.
- Add oil to a large frying pan, so the oil covers the surface of the pan. Bring to low-medium heat. Sweet potatoes need to be cooked at a lower temperature and for more time than regular potatoes. Once the oil starts to shimmer, place a spoonful of the mixture in the pan. Press it down with the back of the spoon, trying to keep the latke in a circular shape. Place a pinch of shredded cheese on top of the latke. Place another spoonful of the mixture on top and press it down again with the back of the spoon. Cook on each side for 5-7 minutes. *Remember, the oil shouldn’t be too hot. If the latkes are burning after 5 minutes, turn the heat down a little.

- So there’s a bit of a trick here to getting a super crispy and delicious crust. We start by preheating the pan with the oven. The coconut (or oil) mixture gets added to the hot pan, spread around with a silicone pastry brush and then the potatoes get added and pressed down with a wooden spoon. If you are nervous about adding things to a REALLY hot pan, don’t preheat with the baking dish in it--just make sure you grease your baking dish well beforehand. The crust will not be AS crispy but it will still be good.
- Preheat your oven to 400° F (205° C) WITH a deep 9 inch square or a 16x9 inch baking dish in it (ceramic or metal work great, glass not recommended) -- or without it if you’re choosing that option. Mix the ground flaxseed and water in a small bowl and let sit.
- Wash, peel (if you like), and grate your potatoes, either with a food processor with a grating attachment or a grater on the large size holes.
- Squeeze excess water out of potatoes in a colander. These do not have to be quite as dry as the potatoes for the latkes, but you don’t want it to be too wet either. Drain the grated onion too.
