THE CHEESIEST QUESADILLAS

- Roast the chiles by using metal tongs to hold them one-by-one over the flame of your stovetop until the skin is totally charred. (If you don't have a gas stove, you can use an outdoor grill OR place them on a baking sheet directly under your oven's broiler.) When totally blackened, place the chiles in a large resealable plastic bag and seal the bag to allow them to sweat for a good 20 minutes. Then use a knife to scrape off most of the blackened skin. Stem, seed and finely mince the chiles.
- Butter a large cast-iron skillet generously and set over medium heat. Put 1 tortilla in the skillet and sprinkle on a third of the Monterey Jack and pepper jack cheese, evenly spreading it all the way to the edges so that the surface will be totally covered. Sprinkle on a third of the roasted chiles. Wait for the cheese to mostly melt, then fold half of the tortilla over itself. Cook for 20 more seconds, then flip the half-moon over and cook until the tortilla is buttery and golden, for 30 more seconds. Keep warm and repeat with the remaining tortillas, cheese and chiles. Cut into 4 or 5 wedges each and serve with bowls of chili.

Steps:
- Place 3 tortillas on a work surface.
- Divide cheese and hot dog slices evenly among tortillas.Sprinkle each portion with 1 tsp chives, a pinch of chili powder and a pinch of ground cumin. Top each with remaining tortillas.
- In a medium skillet, heat 1 tsp oil over medium heat.
- Put 1 quesadilla in pan, then rest a small plate on top of quesadilla to weigh it down. Cook for 2 minutes, until golden.
- Remove plate, flip quesadilla with a spatula, weigh down with a plate and cook until cheese is melted and tortilla is crisp (about 2 minutes).
- Remove from pan and keep warm.
- Repeat with remaining oil and tortillas.
- Cut each quesadilla with a pizza wheel into 4 equal wedges. Serve with salsa and sour cream if desired.

- Half the hotdogs so that the two halves remain attached to each other along the whole length of the hotdog.
- Cut the cheese into sticks or cubes and fill the hotdogs with it.

QUESADILLA HOT DOGS
This recipe came about when I had hot dogs but no hot dog buns. I had tortillas in the fridge, so I put two and two together and came up with a quesadilla-hot dog combo with guacamole, sour cream and pico de gallo for the ultimate Tex-Mex dog. Besides the awesomeness of pairing quesadillas and hot dogs, what I love about this recipe is that you can bake or grill the quesadillas and dogs at the same time instead of cooking the quesadillas one by one on the stovetop. I recommend you put the classic taco toppings out and let everyone build their own dog. Simple and delicious!

- Preheat the oven to 400 degrees F.
- Place the hot dogs on a baking sheet and bake until heated through and beginning to brown on the bottom, about 10 minutes, flipping them halfway through the cooking time.
- Meanwhile, place 4 tortillas on a work surface. Top each tortilla with 1/3 cup shredded cheese and top with another tortilla. When the hot dogs have cooked 5 minutes and are ready to be flipped, place the quesadillas on the other half of the baking sheet. Continue to bake until the hot dogs are done and the cheese is melted.
- Meanwhile, whisk the sour cream, lime zest and lime juice together in a small bowl. Whisk in salt to taste. Transfer to a serving bowl or spoon the mixture into a squeeze bottle for a fun presentation.
- Remove the quesadillas and hot dogs from the oven. Spread 2 tablespoons of guacamole on each quesadilla. Top with a hot dog, followed by a squeeze of lime sour cream and some pico de gallo. Serve immediately.
