Steps:
- In a large bowl, combine sour cream and soup. Stir in the potatoes, 1/2 cup cheese, onion, butter, salt and pepper. Pour into a 1-qt. baking dish coated with cooking spray. Sprinkle with remaining cheese. Cover and bake at 350° for 30 minutes. Uncover; bake 5-10 minutes longer or until bubbly and heated through.

CHEESY HASHBROWNS - DELICIOUS!
Yum! Love these potatoes...whats not to love? I've added bacon and at times added ham too, to make it more of a meal, than a side! Always add some onion...My mom gave me this recipe many years ago and as always, I had to mess with the recipe a bit...lol!...hope you enjoy it as much as we do... Delicious! Enjoy!

Steps:
- 1. Preheat oven to 400 degree F. Place hash browns in a greased 9 x 13 baking dish.
- 2. I then salt, pepper and add the thyme and nutmeg to the whipping cream. Pour over the potatoes.
- 3. Pour melted butter over potatoes.
- 4. I then mix the cheeses and sprinkle them over top of the potatoes, evenly. Usually I sprinkle the top with chives or parsley.
- 5. Bake for 45 - 60 minutes or until potatoes are cooked and top is golden.

- Mix hash brown potatoes, sour cream, onion, cream of chicken soup, Colby cheese, and melted butter in a bowl; season to taste with salt and black pepper. Transfer mixture into a 9x13-inch baking dish and sprinkle top with corn flake crumbs.
- Bake in the preheated oven until the casserole is bubbling, about 1 hour.

- Start by finely dicing the onion and cutting the butter into small pieces. Mix the onion and butter with the cream of mushroom soup, sour cream, garlic powder, paprika, salt, and pepper in a medium bowl, along with 1 cup of cheese.
