FARMERS BREAKFAST SKILLET

1/2 lb bacon
1 20 oz package refrigerated shredded hash browns
4 medium green onion (sliced)
1/2 medium red bell pepper (diced)
1/2 medium green bell pepper diced
8 oz cubed ham or cooked sausage
12 large eggs OR the equivalent of egg whites OR 6 whole eggs and 6 egg whites
1/2 cup half & half or heavy cream
1 1/2 cup shredded cheese (your preference)
seasoned salt and black pepper to taste

Steps:

  • Preheat the oven to 350°F. On the stove top in a 12-inch cast iron or oven safe skillet, cook the bacon until crisp. Remove from the skillet to paper towels to drain, reserving the drippings in the pan.
  • Add the green onion and sliced bell peppers to the drippings. Reserve some of the green onion for garnishing.
  • Saute over medium-high for 3 minutes or until softened. Season with seasoned salt and black pepper to your taste.
  • Add the shredded hash brown potatoes to the pan. Cook for 6-8 minutes, stirring periodically until lightly browned and heated through. Season with a sprinkle of seasoned salt and black pepper.
  • Spread the hash browns evenly on the bottom of the skillet, then sprinkle the crumbled bacon and cubed ham over the hash browns.
  • Top with 1/2 of the shredded cheese. Reserve some bacon for garnishing.
  • Whip the eggs or egg whites with the half & half or cream. Season lightly with seasoned salt and black pepper. Pour on top.
  • Sprinkle with the remaining shredded cheese.
  • Place into the oven and bake for 15-20 minutes or until the eggs are set.
  • Garnish with reserved green onion and bacon crumbles.

1 tablespoon butter
1 cup diced onion
1 cup diced red bell pepper
1 1/2 cups water
2 tablespoons vegetable oil
1 box (7 oz) Betty Crocker™ Ham and Cheddar Potato Scrambles Kit
8 oz diced cooked ham
3 eggs, beaten
2 teaspoons chopped fresh chives, if desired

Steps:

  • In 10-inch nonstick skillet, melt butter over medium-high heat. Add onion and bell pepper; cook 3 to 5 minutes, stirring frequently, until softened.
  • Add water, oil, potatoes and seasoning (from kit) to vegetables in skillet; stir well. Heat to boiling, stirring occasionally. Cover; reduce heat to medium-low. Simmer, without stirring, about 12 minutes or until liquid is mostly absorbed.
  • Increase heat to medium-high. Stir diced ham into potato mixture; cook uncovered 3 to 5 minutes, stirring occasionally, until liquid is absorbed, and ham is heated through.
  • Push potato mixture to one side of pan. Add beaten eggs to bare side of pan; cook 1 to 2 minutes, stirring occasionally, until firm. Gently stir eggs into potato mixture; remove from heat.
  • Squeeze topping pouch (from kit) to soften; cut open. Squeeze topping over potato mixture. Top with chives.

This is an easy dish to make that is great served at any time of day. I sometimes crumble some crispy bacon in there for even more flavour variety! It has a nice zing to it due to the spices but is not overpowering.

6 potatoes, peeled and cubed
1 onion, diced
1/2 cup ham, shredded
1 -2 tablespoon olive oil
1 tablespoon butter
1/2 cup cheddar cheese, shredded
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon onion salt
1/4 teaspoon cayenne pepper
1/2 teaspoon garlic powder
1/2 teaspoon cajun seasoning

Steps:

  • Heat oil in large skillet over medium-high heat until sizzling.
  • Add cubed potatoes and the last six ingredients to pan.
  • Fry potatoes until golden brown and fork tender, stirring occasionally.
  • Then add the butter and diced onion. Mix.
  • When the onion has softened slightly, add the ham to the pan and mix again to combine.
  • Once heated through sprinkle the cheese over hash.
  • Serve when cheese has melted.

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.

1 pound sliced bacon, diced
1 sweet onion, chopped
4 cups frozen shredded hash brown potatoes, thawed
9 eggs, lightly beaten
2 cups shredded Cheddar cheese
1 ½ cups small curd cottage cheese
1 ¼ cups shredded Swiss cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Heat a large skillet over medium-high heat; cook and stir bacon and onion until bacon is evenly browned, about 10 minutes. Drain. Transfer bacon and onion to a large bowl. Stir in potatoes, eggs, Cheddar cheese, cottage cheese, and Swiss cheese. Pour mixture into prepared baking dish.
