FARMERS BREAKFAST SKILLET

Steps:
- Preheat the oven to 350°F. On the stove top in a 12-inch cast iron or oven safe skillet, cook the bacon until crisp. Remove from the skillet to paper towels to drain, reserving the drippings in the pan.
- Add the green onion and sliced bell peppers to the drippings. Reserve some of the green onion for garnishing.
- Saute over medium-high for 3 minutes or until softened. Season with seasoned salt and black pepper to your taste.
- Add the shredded hash brown potatoes to the pan. Cook for 6-8 minutes, stirring periodically until lightly browned and heated through. Season with a sprinkle of seasoned salt and black pepper.
- Spread the hash browns evenly on the bottom of the skillet, then sprinkle the crumbled bacon and cubed ham over the hash browns.
- Top with 1/2 of the shredded cheese. Reserve some bacon for garnishing.
- Whip the eggs or egg whites with the half & half or cream. Season lightly with seasoned salt and black pepper. Pour on top.
- Sprinkle with the remaining shredded cheese.
- Place into the oven and bake for 15-20 minutes or until the eggs are set.
- Garnish with reserved green onion and bacon crumbles.

Steps:
- In 10-inch nonstick skillet, melt butter over medium-high heat. Add onion and bell pepper; cook 3 to 5 minutes, stirring frequently, until softened.
- Add water, oil, potatoes and seasoning (from kit) to vegetables in skillet; stir well. Heat to boiling, stirring occasionally. Cover; reduce heat to medium-low. Simmer, without stirring, about 12 minutes or until liquid is mostly absorbed.
- Increase heat to medium-high. Stir diced ham into potato mixture; cook uncovered 3 to 5 minutes, stirring occasionally, until liquid is absorbed, and ham is heated through.
- Push potato mixture to one side of pan. Add beaten eggs to bare side of pan; cook 1 to 2 minutes, stirring occasionally, until firm. Gently stir eggs into potato mixture; remove from heat.
- Squeeze topping pouch (from kit) to soften; cut open. Squeeze topping over potato mixture. Top with chives.

EASY HAM AND POTATO HASH
This is an easy dish to make that is great served at any time of day. I sometimes crumble some crispy bacon in there for even more flavour variety! It has a nice zing to it due to the spices but is not overpowering.

Steps:
- Heat oil in large skillet over medium-high heat until sizzling.
- Add cubed potatoes and the last six ingredients to pan.
- Fry potatoes until golden brown and fork tender, stirring occasionally.
- Then add the butter and diced onion. Mix.
- When the onion has softened slightly, add the ham to the pan and mix again to combine.
- Once heated through sprinkle the cheese over hash.
- Serve when cheese has melted.
