CHEESY SCALLOPED POTATOES AND HAM

- Preheat the oven to 375 degrees F (190 degrees C). Butter a baking dish.
- Melt butter in a large skillet over medium heat. Add onion; cook and stir until starting to soften, 3 to 4 minutes. Sprinkle flour over onion and whisk together. Cook until golden brown, about 2 minutes. Stir in half-and-half and milk; whisk until thickened, 3 to 4 minutes more. Remove from heat; season sauce with salt and pepper. Add garlic powder, Worcestershire sauce, onion powder, and paprika.
- Place half the sliced potatoes into the baking dish; top with half the chopped ham. Sprinkle half the Cheddar cheese and half the Monterey Jack cheese on top. Pour in half the sauce from the skillet. Repeat layering the remaining potatoes, ham, cheeses, and sauce, ending with a layer of cheese and sauce. Cover dish with aluminum foil.
- Bake in the preheated oven for 40 minutes. Remove the foil and bake until the cheese on top is golden and sauce is bubbling, 20 to 30 minutes more.

Picked this up some years back at the state fair from the California Sweet Potato Council. This dish is very rich and filling and was the only way DS would eat sweet potatoes when he was young.

- Wash sweet potatoes. Cook unpeeled sweet potatoes, covered, in small amount of boiling salt water untill tender, about 20 to 30 minutes. Cool. Peel and slice 1/4 inch thick; set aside.
- Melt butter in medium saucepan. Add onion, cook until tender. Remove from heat; stir in flour, salt, basil, mustard and pepper. Cook over low heat until bubbly, 2 to 3 minutes. Remove from heat; stir in milk all at once. Cook over medium heat, stirring constantly, until mixture comes to a boil. Boil and stir one minute. Remove from heat. Stir in 3/4 cup of cheese and the ham.
- Pour half of mixture into greased 2 quart casserole. Arrange half of sweet potaotoes on top. Repeat layers. Bake at 350*F, 25 minutes. Sprinkle with remaining cheese and bake 3 to 4 minutes longer, or until cheese has melted.

- Peel sweet potato and cut into chunks. Place in a microwave-safe dish; add water. Cover and microwave on high for 7-9 minutes or until tender; drain and set aside., Cut ham into two pieces. In a skillet, brown ham in butter on both sides. In a bowl, combine pineapple juice and brown sugar; stir until sugar is dissolved. Pour over ham. Bring to a boil. - Press potatoes on the bottom and up the sides of a greased 9-inch pie plate.
- Bake for 10 minutes.
- Mix milk, eggs, and pepper in medium bowl.

- Preheat oven to 400 degrees.
- Spray the bottom of a 13×9″ baking dish with Cooking Spray. Set aside.
- Using a mandoline, slice sweet potatoes to 1/3″ thick. (if you do not have a mandoline, use a very sharp knife to slice)
- Add half the sweet potatoes to the greased baking dish.
- In the meantime, heat a small sauce pan to medium high heat. Add butter and shallots to pan. Saute until translucent, about 3-4 minutes. Next add in the garlic and saute for 30 seconds. Then add in the heavy cream, milk, fresh thyme, fresh tarragon, and sea salt and stir. Bring a boil and then remove from heat.
- Pour half the milk mixture over the sweet potatoes. Top with half the gruyere cheese.
- Add another layer of the remaining sweet potatoes, top with remaining milk mixture and cheese.
- Cover with tin foil.
- Bake for 30 minutes.
- Remove the tin foil and bake an additional 25-30 minutes, or until sweet potatoes are tender.
- Optional: top with a garnish of fresh thyme

- Preheat the oven to 400 degrees F (200 degrees C). Place an oven rack in the middle of the oven. Butter a 2-quart casserole dish.
- Mix together smoked Cheddar cheese and Parmigiano-Reggiano cheese in a large bowl. Set aside 1/3 of the cheese mixture in a small bowl for topping.
- Stir heavy cream, garlic, thyme, kosher salt, and pepper into the large bowl with the cheese mixture. Add sweet potatoes and combine using your hands until every potato slice is fully coated with mixture and not stuck together.
- Pick up potato slices a small handful at a time and organize into stacks. Arrange neatly in the prepared casserole dish with potato edges aligned vertically. Begin by placing potato stacks around the perimeter of the dish, working towards the center to create a tightly packed spiral.
- Pour leftover cheese and cream mixture over potatoes until mixture comes halfway up the sides of the casserole dish, making sure not to add too much, as it will bubble over. Cover tightly with aluminum foil.
- Bake in the preheated oven for 30 minutes.
- Remove foil and continue baking until top is golden brown and starting to crisp, about 30 minutes more.
- Remove from the oven and sprinkle with remaining smoked Cheddar cheese and Parmigiano-Reggiano cheese. Return to the oven and bake until dark brown and crispy on top, about 30 minutes more.
- Remove from the oven. Let cool 5 to 10 minutes, and serve hot.
