FOCCACIA BREAD RECIPE FOR BREAD MACHINE
1 c hot water (80°f)
2 Tbsp olive oil
3 c all purpose flour, sifted
2 Tbsp each of powdered milk and sugar
11/2 tsp salt
2 tsp active dry yeast
TOPPING
1/2 stick butter, melted
1/2 tsp granulated garlic
1/2 c parmesan cheese, grated
1/2 tsp dried parsley

Steps:

  • 1. Melt butter on stove with garlic and salt.
  • 2. For dough: Place wet ingredients into bread machine, add dry ingredients with yeast being the last thing you add, place it on top of flour. Run bread machine on "dough" cycle. When dough has finished rising, remove and pat into large cookie sheet. Let rise again. Then punch down with fingertips and make indentions in dough. Generously brush on garlic butter, and sprinkle on cheese and parsley. Bake 20 min. at 400°. Cut into strips.

BREAD DOUGH
3 c all purpose flour
1 c hot water (80°)
2 Tbsp garlic infused olive oil
2 Tbsp powdered milk (dry)
2 Tbsp sugar
1 1/2 tsp sea salt
1/2 c fresh grated parmesan
2 tsp heaping spoons of active dry yeast
TOPPING
**garlic infused olive oil
**grated mozzarella
**grated parmesan cheese
**coarse sea salt
**cracked black pepper
**mrs. dash tomato, basil, garlic seasoning

Steps:

  • 1. BREAD MACHINE METHOD: Add water and oil to bread pan. Mix together flour, sugar, salt, powdered milk and Parmesan cheese and add to water. Add yeast on top of flour mixture and mix on DOUGH ONLY cycle. Check dough after a couple of minutes, if it seems to be too dry add a little more water or olive oil.
  • 2. Once dough has kneaded and risen, remove to a heavily oiled 11x13 baking dish. Use garlic infused oil or just plain olive oil.
  • 3. Press dough down and out to cover bottom of baking dish, make indentions in dough with finger tips. Generously brush garlic infused olive oil over top. Sprinkle on Mrs. Dash tomato, basil and garlic seasoning, don't go over board, it can be a bit strong. Add grated mozzarella and parmesan (any amount you wish) then sprinkle with a little coarse sea salt and some cracked black pepper.
  • 4. Cover with towel and allow to sit in a warm place until doubled in size. Cook for 22 min in a 400° oven. Allow to cool slightly, then turn out onto a cutting board and cut to your liking.
  • 5. STAND MIXER METHOD: by Helene M. Dissolve yeast in warm water. Add all ingredients but flour first. Mixing between each addition. then add flour 1 cup at a time then mix until its a ball and remove to oiled bowl for 1 hour. Then into pan same as above directions.

2 tablespoons olive oil
1 teaspoon salt
2 cups bread flour
1 tablespoon sugar
1-1/2 teaspoons active dry yeast
2 medium onions, quartered and sliced
1/4 cup butter
3 garlic cloves, minced
2 teaspoons Italian seasoning
1 cup shredded cheddar cheese
2 tablespoons grated Parmesan cheese

Steps:

  • Place the first six ingredients in a bread machine pan in the order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1-2 tablespoons of water or flour if needed). , When the cycle is completed, turn dough onto a lightly greased 12-in. pizza pan; pat into a 10-in. circle. Cover and let rise in a warm place until doubled, about 30 minutes. , Meanwhile, saute onions in butter in a large skillet until softened. 2 packages (5 teaspoons) of active dry yeast
1 3/4 cups warm water
1 teaspoon sugar
1/2 cup + 1/4 cup extra-virgin olive oil, divided
5 cups of all-purpose flour
2 teaspoons fine sea salt
2 Tablespoons of Garlic Paste (found in the produce section of grocery store) or 2 Tablespoons of finely diced garlic.
1 stick butter, room temperature
Colby Jack Cheese, shredded
Marinara, spaghetti or favorite dipping sauce

Steps:

  • In a stand mixer, with a dough hook, add warm water and yeast and mix slightly. Cover with a towel and let sit for 5 minutes. Once yeast has poofed, add sugar, 1/2 cup of olive oil, flour and the fine sea salt. Mix for 5 - 7 minutes on low until dough is smooth and elastic. Spray a large bowl with cooking spray (bottom and up the sides) and place dough in bowl. Cover with a towel or saran wrap and place in a draft free spot for 1 - 1 1/2 hours until doubled in size. When dough is ready, pour remaining 1/4 cup of olive oil into a large cookie sheet and smooth around the entire sheet. Preheat oven to 450* Plop dough onto cookie sheet and push around until dough covers entire sheet. Mix up garlic and butter. Spread over dough. If dough is thick and puffy then dimple dough with fingers and bake for 20 - 30 minutes (depending on oven). 5 minutes before you remove bread from oven, top with cheese and continue baking until cheese is melted and gooey! If dough is thin and not puffy, cover and allow to rest for 1 additional hour. Then dimple dough with your fingers, bake for 20 - 30 minutes. 5 minutes before you remove bread from oven, top with cheese and continue baking until cheese is melted and gooey! Serve with your favorite dipping sauce! Use within 24 hours, warm or cold and wrap leftovers in tinfoil. ---------------------------------------------- If you already have leftover focaccia bread, then mix butter and garlic together to create a paste. Spread over pre-made focaccia bread, top with cheese and bake for 10 minutes at 350*F or until cheese is melted and gooey!

Steps:

  • Heat oven to 220C/200C fan/gas 7. Make up a bread mix following packet instructions, stirring in olive oil and parmesan.

Super simple breadsticks that are made with refrigerated pizza dough but taken to the next level with flavored butter and melted cheeses.

1 13.8 tube pizza dough
2-3 tbsp butter {melted}
1/4 tsp garlic powder
1/2 tbsp Italian seasoning
1 cup shredded mozzarella cheese
3 tbsp Parmesan cheese

Steps:

  • Preheat oven to 400 degrees. Unroll pizza dough onto a greased cookie sheet. Combine melted butter, garlic powder and Italian seasoning in a small bowl. Cover top of dough with butter mixture. A brush works well but if you don't have one then the back of a spoon works too. Top butter with shredded mozzarella cheese, followed by Parmesan cheese. Before baking, cut into 12 sticks. Bake for 15-17 minutes or until the edges are golden brown and the cheese is completely melted. You may have to go over the cut lines one more time to break the melted cheese. Serve warm. Store at room temperature in an air tight container.
