- Preheat an oven to 350 degrees F (175 degrees C). Prepare a 9x13 inch baking dish with cooking spray.

- Preheat oven to 425°F. Cook sausage in large skillet on medium-high heat until cooked through. Drain fat. Sprinkle sausage in bottom of greased 13x9-inch baking pan. Top with spinach and roasted red peppers.
- Mix flour, Parmesan cheese, onion, Italian seasoning and seasoned salt in small bowl. Beat eggs and milk in large bowl. Add flour mixture; beat until well blended. Pour over mixture in baking pan.

- Preheat oven to 375°F. Brush a 2-quart baking dish with butter. Melt butter in a large skillet over medium-high heat. Add onion and 1/2 teaspoon salt; cook, stirring occasionally, until golden in places, 5 to 7 minutes. Add spinach and thyme; cook until spinach wilts and darkens slightly, about 5 minutes. Add potatoes and milk; season with pepper.
- Simmer until milk thickens and reduces slightly and potatoes are easily pierced with the tip of a knife but still retain their shape, about 5 minutes. Remove from heat; let cool completely. Meanwhile, in a large bowl, whisk eggs with 1 1/2 teaspoons salt and nutmeg. Stir cooled potato mixture and half of cheese into eggs.
- Transfer to prepared baking dish and cover with parchment-lined foil. (If assembling the day before, wrap the dish with plastic wrap and refrigerate until ready to bake). Bake casserole, covered, 30 minutes. Uncover, sprinkle evenly with remaining half of cheese, and continue baking until set and golden brown in places, 15 to 25 minutes more (if the top is browning too quickly, tent with foil). Let cool slightly before serving.
MAKE-AHEAD CHEESY SPINACH AND EGG STRATA
If you are a spinach lover, then you will have to try this recipe! I have made this many times to serve at a brunch get together (I always make two of these to serve at a brunch!) Plan ahead this dish needs to chill for a minimum of 8 hours or up to 24 hours or until the custard is absorbed in the bread. You can really use any cheese that you wish I find that either asiago or Gruyere are the best! If you don't want a strong spinach taste then use only one box of frozen spinach. To save time make the spinach/mushroom filling up to 1 day in advance and refrigerate, just warm slightly in the microwave before layering in the strata. You will LOVE this!

- Squeeze out as much of the moisture as possible from the spinach, then chop finely.
- Heat butter in a large skillet over medium heat.
- Add in the fresh mushrooms and saute for about 10-12 minutes, or until they loose their moisture completely; remove to a bowl.
- Add in onion with nutmeg, salt and cayenne and saute for 5 minutes (adding in the garlic the last few minutes) then stir in the chopped spinach; saute for 2 minutes.
- Transfer the mixture to the bowl with the mushrooms; mix to combine slightly.
- Butter a 4-quart casserole dish.
- Spread 1/3 of the cubed bread into the prepared baking dish.
- Top with 1/3 of the spinach/mushroom mixture.
- Sprinkle with 1/3 of BOTH cheeses.
- Repeat layering twice (ending with the cheeses).
- In a bowl whisk together half and half, milk, eggs, mustard.
- Pour the milk mixture evenly over the strata in the baking dish.
- Cover with plastic and chill for about 8 hours or up to 24 hours or until the bread is absorbed in the milk.
- When ready to bake, let the dish stay out at room temperature for about 40 minutes before baking.
- Set oven to 350°F (second-lowest oven rack).
- Bake uncovered for about 45 minutes, or until puffed and golden brown.

- Drain spinach well. Saute onion and garlic in 2 Tbsp of the melted butter.

- Heat oven to 350°F. Spray 13x9-inch (3-quart) baking dish with cooking spray.
- Cook spaghetti to al dente as directed on package. Drain spaghetti, and add it back to the hot pan.
- Meanwhile, in 2-quart saucepan, melt butter over medium-low heat. Stir in garlic; cook 1 minute. Stir in flour, pepper flakes, salt and pepper. Cook over medium heat, stirring constantly, until mixture is smooth and bubbly. Gradually beat in milk with whisk. Heat to boiling, stirring constantly; boil and stir 1 minute. Remove from heat; beat in Parmesan cheese and spinach with whisk, then beat in eggs.
- Toss cheese sauce with hot spaghetti, and add half of the mixture to the baking dish. Spread 1 1/2 cups of the tomato basil pasta sauce over mixture; sprinkle with 1 1/2 cups of the mozzarella cheese. Add remaining half of spaghetti mixture, remaining tomato basil pasta sauce and remaining 1 1/2 cups mozzarella cheese.
- Bake 30 to 35 minutes or until heated through and cheese is melted and lightly browned on top. Let stand 10 minutes before serving.
