CAJUN SPICED CHEESY GRITS
This recipe gives a Cajun twist to a Southern favorite! Cheesy grits makes an easy 15-minute side dish to round out any meal.

Steps:
- In 2-quart saucepan, heat milk, water, Cajun seasoning, salt, pepper and garlic powder to boiling. Gradually add grits, stirring constantly. Reduce heat. Simmer uncovered about 5 minutes, stirring frequently, until thickened.
- Add cheeses to grits mixture; stir until cheese is melted. Serve warm. Garnish with onions.

Steps:
- Bring water to a boil in a pot. Add salt and pepper. Stir in grits; reduce heat and let simmer until water is absorbed, 20 to 25 minutes. Remove from heat and stir in Cheddar cheese and butter.
- Rinse shrimp and pat dry.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels.
- Heat remaining bacon grease in the skillet over medium heat. Cook shrimp until they are bright pink on the outside and the meat is opaque, 3 to 4 minutes. Add bacon, scallions, parsley, garlic, and lemon juice. Saute for 3 minutes.
- Spoon grits into a serving bowl. Add shrimp mixture and mix well. Serve immediately.

- Whisking, add grits in a slow steady stream. Reduce heat to medium-low and cover, stirring occasionally until thickened, about 5 to 7 minutes.
- Remove from the heat and stir in butter and cheese. Top with Andouille Sausage Creole, if desired.

- Prepare first by thawing your shrimp if your shrimp are frozen. Once shrimp have been thawed, peel off clear shells and take off the tails. Chop up your green onions, and cook bacon in a large skillet until crumbly. Save some of the bacon grease from the skillet to cook the shrimp later. Then take a plate, and mix the paprika and Zatarain's creole shrimp seasoning together. Toss in shrimp. Let sit for about 10 minutes to soak up the creole seasoning.

Toss the seasoned shrimp into the skillet. Cook shrimp for about 5-8 minutes or until pink and no longer grey. Turning shrimp over regularly. Add green onions, crumbled bacon, and pour in the half and half. Stir until mixed well.
