CHEESY CRAB TARTS
I love to entertain and always looking for yummy appetizers. These wonderful little tarts are compliments of Paula Deen. I prepared them ahead of time and warmed them in the oven before my guests arrived. Besides their scrumptious taste and slight kick they make a beautiful presentation. I also substituted the lump crab with imitation crab.

- Preheat oven to 350 degrees. Lightly spray 32 cups of a mini muffin pan with cooking spray. Place center of wonton wrappers in bottom of mini muffin cups, pressing edges of wrappers against sides of pan to form a cup. Spray edges of wonton wrappers with cooking spray.
- In a medium bowl, combine cream cheese, and next 6 ingredients; beat with an electric mixer at low speed until smoooth. Fold in crabmeat, green onion, and red bell pepper. Spoon crab mixture evenly into prepared wonton cups. Bake 20-25 minutes, or until center are set and wonton is lightly browned.

- Preheat oven to 375°. In a large bowl, beat cream cheese, mayonnaise and mustard until blended. Stir in cheese, carrot, celery, green onions and garlic. Gently fold in crab., Unroll crescent dough and roll into a 12-1/2x10-in. rectangle. Cut each sheet into twenty 2-1/2-in. squares., Spoon a heaping teaspoonful of cream cheese mixture diagonally over half of each square to within 1/2 in. of edges. Fold 1 corner of dough over filling to the opposite corner, forming a triangle. Pinch seams to seal; press edges with a fork. Place on ungreased baking sheets. Bake until golden brown, 8-10 minutes.

- Heat oven 400°F. Lightly grease square baking dish, 8x8x2 inches. Stir crabmeat, 1/2 cup of the mozzarella cheese, the celery, onions and bell pepper in baking dish.
- Beat remaining ingredients except the remaining 1/2 cup mozzarella cheese in blender on high speed 15 seconds, or with hand beater or wire whisk 1 minute, until blended. Pour over crabmeat mixture.
- Bake about 40 minutes or until golden brown and knife inserted halfway between center and edge comes out clean. Sprinkle with remaining cheese. Bake about 2 minutes longer or until cheese is melted. Cool 15 minutes before cutting.

ARTICHOKE AND CRABMEAT TRIANGLES
This is a easy recipe. It is an old favorite of mine that I used to use as a dip. I like the use of the English muffins as the base. It gives them a nice crispy texture.

- Preheat oven to 375 degrees F (190 degrees C).
- In a medium size mixing bowl, combine artichoke hearts, crabmeat, mayonnaise, onions, and cheese. Mix thoroughly.
- Split each English muffin in half ,and spread the mixture on the cut side of the split muffins. Cut each of the sliced muffins into quarters. Arrange the muffin-bites on a baking sheet.

- Instructions PREPARATION: Slice the english muffins in half through the center so you create 2 round halves. In a medium bowl, combine the Kraft Old English Cheese, butter, mayonnaise and garlic powder. You need to have the butter extremely soft for it to blend easily. Make sure everything is combined well and smooth. Stir in the crabmeat. Spread the crabmeat mixture over the tops of the english muffins. You want the top to be completely covered, but spread fairly thin with the mixture. You should have enough spread for all 12 muffin halves. Place the muffins onto a baking sheet and place it into the freezer. Let them freeze for 1 hour. Remove the muffins and place on a cutting board. Cut each muffin in half. Cut each half into 3 equal size triangles. You will get 6 pieces from each muffin. Place the triangles into a freezer container and return them to the freezer until you are ready to bake them. . BAKING: Preheat the oven to 400 degrees Place triangles onto an un greased baking sheet. Bake for 10 minutes, until the tops of the Crabbies are lightly browned. Serve at once. Preheat over to 350 degrees Melt cream cheese Melt butter Clean and drain crab Chop onions and water chestnuts Mix crab, cream cheese, Swiss cheese, water chestnuts and onion, lemon juice and red pepper flakes Unwrap fillo dough ( it's very important to have all ingredients ready before dough is unwrapped as it dries out quickly) Place1 sheet on the counter or chopping board, brush with melted butter, do this with 5 sheets Cut sheets into four squares ( you will need to make another batch ( 5 sheets) for 8 triangles) Add mixture Press down on sides to make sure mixture does not leak out and brush with butter Place on cookie sheet (ungreased) and bake for 30-35 minutes until brown
SIMPLE AND SINFUL CRAB AU GRATIN
This decadent, easy-to-make appetizer is made with Parmesan cheese and a tiny bit of cayenne for a little kick. Serve in single-serving ramekins with toasted ciabatta and a green herb salad for an elegant dinner party starter.

- Preheat the oven to 200C/400°F.
- Flake the white crabmeat and combine with the brown crabmeat in a bowl and set aside.
- Melt the butter in a medium saucepan over medium heat. Add the flour and cook, whisking for one minute. In a separate pan, gently heat the double cream.
- Remove the butter and flour mixture from the heat and whisk in the heated cream. Return to the heat, gently bring to a boil, then simmer, whisking for a minute or two until thickened.
- Add three quarters of the cheese, the cayenne and paprika and two-thirds of the crab. Season with a little bit of salt and freshly ground pepper.
- Divide the remaining crabmeat between six ramekins. Top with the creamy crab and cheese mixture, and sprinkle the remaining cheese over the top.
- Place the ramekins onto a baking tray and bake in the preheated oven for 15 minutes or until bubbling hot and golden.
- Serve the crab au gratin with triangles of toasted fresh bread or rounds of ciabatta and a simple green herb salad.
