STUFFED CHICKEN MARSALA (OLIVE GARDEN COPYCAT)



Stuffed Chicken Marsala (Olive Garden Copycat) image

Seasoned and stuffed chicken marsala is a delicious Olive Garden copycat dish featuring mozzarella, parmesan, and sun dried tomatoes, smothered in savory marsala mushroom sauce.

4 medium boneless, skinless chicken breasts
8 slices mozzarella cheese
1 12-ounce jar julienned sun dried tomatoes (see note)
⅔ cup shredded parmesan cheese
3 tablespoons oil
salt and pepper to taste
2 teaspoons Italian seasoning
1 ½ cups marsala cooking wine ((may sub chicken broth))
3 teaspoons minced garlic
1 cup sliced mushrooms
½ cup heavy cream
½ teaspoon salt (or to taste)
¼ teaspoon black pepper (or to taste)
grated parmesan cheese and parsley or thyme for topping (optional)

Steps:

  • Preheat oven to 400 degrees. Use a sharp knife to cut a slit horizontally along one side of the chicken breast, being sure not to cut all the way through the chicken - the goal is to make a "pocket".
  • Fill each pocket with 2 slices of mozzarella cheese, 1/4 of the sun dried tomatoes, and 1/4 of the shredded parmesan cheese.
  • Pinch together the open side of the chicken breasts and secure with toothpicks. Drizzle chicken with oil, then sprinkle with salt and pepper to taste, and Italian seasoning, rubbing in with your fingers.
  • Transfer chicken to a large oven-safe skillet and brown chicken over medium-high heat for 3-4 minutes on each side. Place chicken on a plate while you prepare the marsala sauce.
  • In the same pan (don't clean it) add marsala cooking wine, garlic, mushrooms, salt and pepper, and heavy cream. Stir and bring to a boil and cook for 3-4 minutes. Return chicken pan and spoon some of the sauce over the chicken.
  • Transfer skillet to preheated oven and bake for 20-25 minutes until chicken is cooked all the way through and cheeses are melted. Spoon sauce over the chicken, top with grated parmesan cheese and parsley or thyme if desired, and serve.

¼ cup all-purpose flour
½ teaspoon garlic salt
¼ teaspoon ground black pepper
½ teaspoon dried oregano
4 boneless, skinless chicken breast halves
1 tablespoon olive oil
1 tablespoon butter
1 cup sliced fresh mushrooms
½ cup Marsala wine

Steps:

  • In a medium bowl, stir together the flour, garlic salt, pepper, and oregano. Dredge chicken in the mixture to lightly coat.
  • Heat olive oil and butter in a large skillet over medium heat. Fry the chicken in the skillet for 2 minutes, or until lightly browned on one side. Turn chicken over, and add mushrooms. Cook about 2 minutes, until other side of chicken is lightly browned. Stir mushrooms so that they cook evenly.
  • Pour Marsala wine over the chicken. Cover skillet, and reduce heat to low; simmer for 10 minutes, or until chicken is no longer pink and juices run clear.

1 can (15 ounces) tomato sauce
2 teaspoons Italian seasoning
1/2 teaspoon garlic powder
1 large egg
1/4 cup seasoned bread crumbs

2 tablespoons olive oil
2 slices part-skim mozzarella cheese

Steps:

  • In a small saucepan, combine the tomato sauce, Italian seasoning and garlic powder. Bring to a boil. Reduce heat; cover and simmer for 20 minutes., Meanwhile, in a shallow bowl, lightly beat the egg. In another shallow bowl, combine bread crumbs and Parmesan cheese. Dip chicken in egg, then coat with crumb mixture., In a large skillet, cook chicken in oil over medium heat until a thermometer reads 165°, about 5 minutes on each side. Top with mozzarella cheese. Cover and cook until cheese is melted, 3-4 minutes longer. Serve with tomato sauce. If desired, sprinkle with basil and additional Parmesan.

1 cup all-purpose flour
1 tablespoon Creole-style seasoning
6 skinless, boneless chicken breast halves
oil for frying
1 cup sliced fresh mushrooms
3 large onions, thinly sliced
1 (14 ounce) can chicken broth
1 cup Marsala wine
1 (16 ounce) package shredded mozzarella cheese
½ cup freshly grated Parmesan cheese

Steps:

  • Place flour into a resealable plastic bag and sprinkle with seasoning. Place 1 chicken breast at a time into bag, seal and shake to coat. Remove each breast, let sit for about 5 minutes, then place in bag, seal and shake again to coat well.
  • Heat oil in a large skillet over medium high heat. Add chicken and fry until golden brown and juices run clear. Transfer chicken to a 9x13 inch baking dish.
  • Preheat oven to 350 degrees F (175 degrees C).
  • In same skillet saute mushrooms and onions in pan drippings; cook, stirring, until slightly tender. Stir in broth and wine, reduce heat to medium low and simmer for 10 minutes, stirring occasionally. Pour over chicken, cover baking dish and bake in preheated oven for 30 minutes.
  • Mix together mozzarella and Parmesan cheeses and sprinkle mixture over chicken. Increase oven temperature to 450 degrees F (230 degrees C) and bake until cheese is melted and golden brown, 5 to 7 minutes.

I love experimenting in the kitchen, and this is one that I came up with one night when I felt like having a creamy chicken dish... It was WONDERFUL, so I thought I would share it with you!

4 boneless skinless chicken breast halves
1 small onion, cut in half, then sliced thin
2 (10 3/4 ounce) cans cream of mushroom soup, I used low sodium
0.5 (10 3/4 ounce) soup can water
2 cups fresh broccoli, cut up
1 cup fresh mushrooms, sliced thick
8 ounces cheese, shredded, I use Mexican blend
salt & fresh ground pepper, I use Sea salt
1/2 cup sweet marsala wine

Steps:

  • Preheat oven to 350.
  • Put the chicken breast in a 9x13" baking pan.
  • Slice the onions, and put over chicken breasts.
  • In the side of the pan mix the soup and water together. It will be lumpy.
  • Cut up the fresh broccoli, and put in soup mixture. Mix together.
  • Add the mushrooms, and mix.
  • Sprinkle with salt and pepper, to your liking.
  • Pour the wine into the mixture, and mix well.
  • Pour over the chicken.
  • Every 15 minutes spoon the mixture over the chicken while baking. Bake for 45 minutes.
  • Remove pan from oven, and add the shredded cheese on top.
  • Put back in the oven, and bake for another 10-15 minutes until cheese is melted.
  • Serve.
  • Note: I pour the extra sauce over my baked potatoes when I make this dish. Delish!

1/2 tsp crushed dried rosemary
1/4 tsp pepper, divided
3/4 cup lo-sodium chicken broth
1/4 cup Marsala wine
3 Tbsp flour, divided
6 slices Kraft Mozzarella Cheese
2 Tbsp chopped fresh parsley
6 boneless skinless chicken breast halves Toothpicks
3 Tbsp olive oil, divided
8 oz mushrooms, sliced
2 minced garlic cloves
2 Tbsp butter

Steps:

  • Preheat oven to 425°F. In small bowl, combine 1/2 tsp. salt, rosemary, 1/8 tsp. pepper; reserve. In another bowl, whisk together broth, wine and 1 Tbsp. flour. Sprinkle mozzarella slices with parsley. Cut horizontal pocket in each chicken breast, stuff with 1 slice mozzarella. Fold to fit, secure with toothpicks. Sprinkle chicken with reserved rosemary mix. Coat with remaining flour.
  • In large skillet, heat 2 Tbsp. oil over med-high heat. Cook chicken until browned, turning once, 4-5 min each side. Transfer to jellyroll pan, roast 15 min or until no longer pink.
  • In same skillet, heat remaining oil over medium heat. Add mushrooms, garlic, remaining salt and pepper. Cook, stirring until browned, 5 min. Add broth mix, bring to boil. Cook, stirring until slightly thickened. Stir in butter. Remove toothpicks from chicken, arrange on platter. Top with mushroom sauce. Sprinkle with remaining parsley.

1/4 cup shredded Asiago cheese, 1oz
3 Tbs chopped drained, oil-packed sun-dried tomatoes
2 Tbs chopped fresh parsley
1/2 tsp. dried oregano
1 Tbs. oil, preferably olive
*1 pkg. (10 oz) baby portobello(crimini) mushrooms, sliced
*3/4 cup low-sodium chicken broth
1/3 cup dry marsala wine
*1 tsp. all-purpose flour
2 Tbs. butter or margarine
*Additional chopped fresh parsley, optional
POTATOES:
*2 Tbs. butter or margarine
2 cloves garlic, minced
2 1/4 cups milk
1/4 tsp. salt
5 cups frozen mashed potatoes from 1 (22oz) pkg.
2 Tbs. grated Parmesan cheese.

Steps:

  • CHICKEN: - pREHEAT OVEN TO 375F. Placeeach chicken piece between 2 sheets wax paper. With flat side of meat mallet or heavy can covered with foil, pound each piece to 3/4" thickness. Sprinkle chicken with salt & pepper. Place on jellyroll pan. Bake 15 min. Turn chicken bake until almost done, 10 min. Meanwhile, combine cheeses, tomatoes, parsley and oregano. Remove chicken from oven. Sprinkle each piece with 1/4 of cheese mixture. return to oven until cheese is melted & chicken is no longer pink in center, about 5 minutes. Transfer to platter. While chicken is cooking make sauce: In large nonstick skiller heat oil over medium heat. Add mushrooms; cook, stirring occasionally, until softened, 4 minutes.Whick together broth, wine & flour; pour into skillet. Bring to boil; cook, stirring occasionally, until almost melted. Pour sauce over chicken; sprinkle with additional parsley, if desired. POTAOES: - In pot over low heat melt butter. Add garlic; cook until softened, 1 minute. add milk & salt; bring to boil. Stir in potatoes. Cook, stirring frequently, until cooked, 5 minutes. Stir in Parmesan. Remove from heat. Cover; let stand until thickened to desired consistency 1-2 minutes. Serve with chicken.

1 whole chicken, Split into quarters
3 tablespoons olive oil
3 slices bacon or 3 slices pancetta, finely chopped
8 ounces button mushrooms, halved (or left whole if they are small)
2 garlic cloves, Minced
1 small yellow onion, chopped
1 teaspoon tomato paste
2 tablespoons fresh rosemary, minced
2 tablespoons fresh thyme, minced
1 1/2 cups sweet marsala wine
1 1/2 cups low sodium chicken broth
1 1/2 tablespoons fresh lemon juice
3 tablespoons unsalted butter, cut into 3 pieces and chilled
2 tablespoons fresh parsley, Minced
sea salt
cracked black pepper
3 cups chicken, sauce
3 cups half-and-half
1/2 teaspoon sea salt
2 cups coarsely ground polenta
3 tablespoons unsalted butter, Cut into Large Chunks
4 garlic cloves, minced
2 teaspoons fresh rosemary, minced
2 teaspoons fresh thyme, minced
2 teaspoons fresh sage, minced

Steps:

  • Adjust oven rack to the middle position and heat the oven to 375°F.
  • Spread flour in a shallow dish. rinse chicken breasts, pat dry and season with salt and pepper. Dredge in flour to coat shaking off any excess flour.
  • Heat 2 tablespoons of the oil in a large dutch oven over medium-high heat until just smoking. Add the chicken skin side down and cook until light golden brown. Flip pieces and cook on all sides to the same consistency, about 10 minutes total. Remove from pan and keep warm.
  • Add a little more of the oil to the pan on high heat and add the bacon, mushrooms, garlic and onions. Season with salt/peper and cook just long enough to crisp up the bacon and get some color on the mushrooms, about 2 to 3 minute Stir in the tomato paste and rosemary/thyme and cook about 1 minute longer. Place the chicken pieces back into the pan skin-side up and spread them out evenly, pushing them down into the mushrooms and onions. Add the Marsala, scraping up the brown bits from the bottom of the pan, and add the chicken broth. Cover and place the whole pot in the oven and cook until the tops of the chicken are golden brown, 30 to 35 minutes.
  • In the mean time, cook your polenta.
  • CHEESY HERB POLENTA: Bring the chicken stock, half and half and salt to a boil in a large, heavy-bottomed pot.
  • Pour the polenta into the boiling mixture in a slow stream while whisking constantly in a circular motion. Bring to a simmer, still stirring constantly.
  • Reduce heat to low and cook, stirring vigorously and scraping the sides and bottom of the pot; until the polenta becomes soft and smooth, about 30 minutes.
  • Stir in the herbs, butter and the cheese, ¼ cup at a time, until thick and creamy.
  • Season to taste with salt and pepper.
  • Use tongs to remove the chicken from the pan and transfer onto a serving platter and keep warm.
  • Set the dutch oven back over the burner on high heat. Bring up to a boil and cook until thickened and flavors have become concentrated, about 3 to 4 minute.
  • Shut off the heat, add the butter cubes and stir gently to melt the butter evenly. This will make the sauce silky smooth and give it a richer taste. Taste and season with salt and pepper. Add the lemon juice and fold in the parsley.
  • To Serve:Ladle Polenta onto serving plates. Arrange one chicken quarter atop each mound of polenta.Spoon the sauce and mushrooms over the chicken. Garnish with fresh parsley or a spring of rosemary.
