Steps:
- Toss the cauliflower with the olive oil and season with the salt and pepper.
- Place the cauliflower into the basket of an air fryer in a single layer. See notes section below if you don't have an air fryer.
- Cook for 9 minutes, shaking the basket halfway through.
- Remove the cauliflower and toss in a bowl with the Buffalo sauce.
- Return the cauliflower to the air fryer basket and top with the cheddar cheese.
- Return the basket to the air fryer for 1-2 more minutes or until the cheese is melted.
- Transfer the cauliflower to a plate and serve with Ranch dressing, if desired.

- Preheat the oven to 375F (190C). Grease mini muffin tins with oil.
- Steam cauliflower florets on a saucepan using a steaming basket. This should take around 8-10 minutes.
- Pulse the cauliflower in a food processor until it becomes like rice. When removing, squeeze to drain it. Squeeze out as much water as you can.
- Now, add cauliflower to a bowl, add in cheddar cheese, egg, oregano, onion, garlic, and salt with pepper.
- Mix until combined.
- Scoop out some into each muffin tin and flatten the mixture out. We want to create nice flat bites.
- Bake for 12-15 minutes until golden brown. Make sure the middle of the bites has hardened up too.
- Let them cool down before serving. Have them with your favorite sauce!

- Preheat oven to 400° F., line a baking sheet with foil and spray it generously with cooking spray.
- Steam the cauliflower florets in a covered pot with a little bit of water for 4-5 minutes. They should be tender, but not mushy. Remove the cauliflower from the pot, drain, and blot dry with paper towel.
- Add the steamed cauliflower to a food processor and pulse until it's about the size of rice or couscous. If you don't have a food processor chop it finely with a knife.
- Add the chopped cauliflower to a large bowl along with all the other ingredients except the marinara sauce. Stir everything together until combined then scoop out about a tablespoon of the mixture and form into small ovals.
- Place the cauliflower bites onto the prepared baking sheet and lightly spray the tops of them with a little cooking spray. Bake on the middle rack of the oven for 18-20 minutes or until they are golden. Serve with marinara sauce for dipping.

- Wrap cauliflower in a clean dish towel, then turn it upside down and bang it against the surface of your counter until you feel the cauliflower crack (be sure to rotate to break it up on all sides).
- Pull florets off of stem and break apart the bigger florets into smaller pieces.
- Microwave florets for 4 minutes.
- Preheat oven to 425°F (220˚C).
- In one small bowl, pour flour; in another, whisk two eggs; and in a medium bowl, combine your bread crumbs, Parmesan cheese, and cheddar cheese.
- Coat each piece in flour, followed by the eggs and finally the bread crumb mixture.
- Spray a baking sheet and place all cauliflower bites in it, then drizzle olive oil over them or spray with cooking spray.

- Preheat oven to 450 degrees F (230 degrees C). Line a baking sheet with parchment paper or a silicone mat.
- Place cauliflower florets in a food processor and pulse into crumbs about half the size of rice grains.
- Place cauliflower into a large microwave-safe bowl. Microwave until soft and tender, about 2 minutes. Remove and stir. Microwave for 3 minutes. Remove and stir again so that all the grains cook evenly. Microwave until almost dry, about 5 minutes. Stir and microwave until cauliflower looks dry and clumped up, about 5 minutes.
