4 cups cauliflower florets (* from one small head)
1 tablespoon extra virgin olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
1/3 cup Buffalo sauce
1/2 cup sharp cheddar cheese (* shredded)

Steps:

  • Toss the cauliflower with the olive oil and season with the salt and pepper.
  • Place the cauliflower into the basket of an air fryer in a single layer. See notes section below if you don't have an air fryer.
  • Cook for 9 minutes, shaking the basket halfway through.
  • Remove the cauliflower and toss in a bowl with the Buffalo sauce.
  • Return the cauliflower to the air fryer basket and top with the cheddar cheese.
  • Return the basket to the air fryer for 1-2 more minutes or until the cheese is melted.
  • Transfer the cauliflower to a plate and serve with Ranch dressing, if desired.

These cheesy cauliflower bites are naturally sweet, flavorful yet low carb. It's a low-calorie snack you can have for lunch, meal prep, and enjoy throughout the day. They're vegetarian and gluten-free.

2 cups cauliflower florets
1 cup mature cheddar cheese (shredded)
1 egg
1/4 tsp oregano
1/4 tsp onion powder
1/4 tsp garlic powder
pinch salt and pepper

Steps:

  • Preheat the oven to 375F (190C). Grease mini muffin tins with oil.
  • Steam cauliflower florets on a saucepan using a steaming basket. This should take around 8-10 minutes.
  • Pulse the cauliflower in a food processor until it becomes like rice. When removing, squeeze to drain it. Squeeze out as much water as you can.
  • Now, add cauliflower to a bowl, add in cheddar cheese, egg, oregano, onion, garlic, and salt with pepper.
  • Mix until combined.
  • Scoop out some into each muffin tin and flatten the mixture out. We want to create nice flat bites.
  • Bake for 12-15 minutes until golden brown. Make sure the middle of the bites has hardened up too.
  • Let them cool down before serving. Have them with your favorite sauce!

2 heaping cups cauliflower florets
2 egg whites
1/2 cup breadcrumbs
1/3 cup shredded part skim mozzarella cheese
1/4 cup shredded parmesan cheese
3/4 teaspoon kosher salt
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
1 cup marinara sauce

Steps:

  • Preheat oven to 400° F., line a baking sheet with foil and spray it generously with cooking spray.
  • Steam the cauliflower florets in a covered pot with a little bit of water for 4-5 minutes. They should be tender, but not mushy. Remove the cauliflower from the pot, drain, and blot dry with paper towel.
  • Add the steamed cauliflower to a food processor and pulse until it's about the size of rice or couscous. If you don't have a food processor chop it finely with a knife.
  • Add the chopped cauliflower to a large bowl along with all the other ingredients except the marinara sauce. Stir everything together until combined then scoop out about a tablespoon of the mixture and form into small ovals.
  • Place the cauliflower bites onto the prepared baking sheet and lightly spray the tops of them with a little cooking spray. Bake on the middle rack of the oven for 18-20 minutes or until they are golden. Serve with marinara sauce for dipping.

1 head large cauliflower, or 2 small cauliflowers
1 ½ cups flour
2 eggs
2 cups seasoned bread crumbs
½ cup parmesan cheese
½ cup cheddar cheese
olive oil, for baking

Steps:

  • Wrap cauliflower in a clean dish towel, then turn it upside down and bang it against the surface of your counter until you feel the cauliflower crack (be sure to rotate to break it up on all sides).
  • Pull florets off of stem and break apart the bigger florets into smaller pieces.
  • Microwave florets for 4 minutes.
  • Preheat oven to 425°F (220˚C).
  • In one small bowl, pour flour; in another, whisk two eggs; and in a medium bowl, combine your bread crumbs, Parmesan cheese, and cheddar cheese.
  • Coat each piece in flour, followed by the eggs and finally the bread crumb mixture.
  • Spray a baking sheet and place all cauliflower bites in it, then drizzle olive oil over them or spray with cooking spray.
  • Bake in the oven for 30 minutes or until golden brown.
  • Serve with marinara, ranch, or sour cream.

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower; cover, and steam until tender, 8 to 10 minutes. Drain and let cool 10 minutes.

1 head cauliflower, stemmed and cut into small florets
½ cup grated Parmesan cheese
1 egg
1 teaspoon Italian herb seasoning
½ cup shredded Parmesan cheese
4 slices white Cheddar cheese

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Line a baking sheet with parchment paper or a silicone mat.
  • Place cauliflower florets in a food processor and pulse into crumbs about half the size of rice grains.
  • Place cauliflower into a large microwave-safe bowl. Microwave until soft and tender, about 2 minutes. Remove and stir. Microwave for 3 minutes. Remove and stir again so that all the grains cook evenly. Microwave until almost dry, about 5 minutes. Stir and microwave until cauliflower looks dry and clumped up, about 5 minutes.
  • Stir Parmesan cheese, egg, and seasoning into the cauliflower until a smooth paste forms. Divide mixture into 8 equal portions; transfer to the baking sheet. Pat into square 'bread' slices, about 1/2-inch thick, using your knuckles and fingers.
  • Bake in the preheated oven until slices are golden brown, 15 to 18 minutes. Let cool for a few minutes. Slide off the baking sheet carefully with a good spatula.
  • Place 1 slice of Cheddar cheese over 4 cauliflower bread slices. Top carefully with the other 4.
  • Place sandwiches into a toaster oven and broil until cheese is completely melted and bread is toasted, 5 to 10 minutes.

  • Preheat the oven to 200°C / 400°Fahrenheit Roughly chop the cauliflower and add into a food processor to chop it into a finer crumb. If you don't have a food processor, don't worry - you can chop it by hand, it just takes a little longer. Grate the cheese and add it to a large mixing bowl with the cauliflower, egg and black pepper. Mix everything well until it starts to feel a little more like a mixture. Lightly grease a muffin tray with some vegetable oil and spoon in around 1 and a half tablespoons of the mixture into each hole. Add the tray into the oven and cook for 15 minutes.
