CHEESY SHRIMP CASSEROLE
This cheesy shrimp and rice casserole makes a delicious family dinner or a small dish to serve at a holiday party.

Steps:
- Preheat oven to 350° F.
- Cook wild rice according to instructions on the package.
- In a separate pot boil water and add shrimp cooking, cooking for 3 - 4 minutes or until shrimp are cooked through. Drain shrimp.
- Combine cooked rice, cooked shrimp and remaining ingredients in one bowl stirring to mix it together thoroughly.
- Spoon the mixture into a greased 13 x 9 inch casserole dish.
- Place the dish in the oven and bake for 30 minutes or until cheesy is melted and bubbling.
- Remove and serve.

- Turn broiler on to high Rinse shrimp, peel and remove tails Add shrimp to a bowl and add extra virgin olive oil, melted butter, lemon juice, crushed garlic, spring/green onions, sea salt and ground black pepper, fold until incorporated Line a baking pan with Reynolds Wrap® Non-Stick Foil and add shrimp to pan (including all butter, seasoning and onions), make sure shrimp are spread out and not on top of each other Broil for 6 minutes Remove from broiler and sprinkle cheese all over shrimp, place back in broiler for 1-2 minutes or until cheese is melted ENJOY, INDULDGE AND BE HAPPY!

Steps:
- Bring water to a boil in a pot. Add salt and pepper. Stir in grits; reduce heat and let simmer until water is absorbed, 20 to 25 minutes. Remove from heat and stir in Cheddar cheese and butter.
- Rinse shrimp and pat dry.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels.
- Heat remaining bacon grease in the skillet over medium heat. Cook shrimp until they are bright pink on the outside and the meat is opaque, 3 to 4 minutes. Add bacon, scallions, parsley, garlic, and lemon juice. Saute for 3 minutes.
- Spoon grits into a serving bowl. Add shrimp mixture and mix well. Serve immediately.

- 1. Bring 4 cups chicken broth and 1/2 teaspoon salt to a boil; stir in grits and cover; simmer for 20 minutes.
- 2. Stir together grits, 3/4 ci[ cheddar cheese and the Monterey Jack cheese.
- 3. Melt butter in large skillet over medium heat, add green onions, pepper, ang garlic and saute for 5 minutes or until tender.
- 4. Stir together green onion mixture, shrimp and next 3 ingredients. Pour into lightly greased 2 quart baking dish. Sprinkle top with remaining 1/4 cup cheddar cheese. Bake at 350 for 30 to 45 Minutes.

- In a shallow bowl, combine flour, 1 tablespoon garlic powder, 1 teaspoon paprika, and salt and whisk together.
- In another shallow bowl combine buttermilk and egg and whisk together.
- Lightly season shrimp with salt and pepper and dredge in flour mixture, shaking off any excess flour mixture.
- Dip flour coated shrimp into the buttermilk-egg mixture, and then back into the flour mixture, shaking off any excess flour. Transfer coated shrimp onto a baking sheet lined with a wire rack. Refrigerate for 30 minutes.
- While shrimp chills, make creamy grits. Bring 4 cups water to a boil. Generously salt water and stir in grits. Lower heat to medium and simmer mixture for about 30 minutes, stirring frequently, until mixture is thick and creamy. Stir in the cheese, corn and butter until fully incorporated. Adjust taste with salt and pepper, cover and set aside.
- Fill a tall sided pot with 2 to 3 inches oil and preheat to 350˚F.
- In a small mixing bowl combine cayenne pepper, remaining paprika, remaining garlic powder, and brown sugar and whisk together. Pour melted butter into spice mixture and whisk together until fully combined.
- Remove shrimp from refrigerator and carefully drop shrimp into the hot oil, a few at a time. Fry shrimp for 2 to 3 minutes or until golden brown and shrimp has just cooked through. Remove from oil and drain on paper towels. Repeat until all shrimp have been fried.
- Carefully, but generously brush each shrimp with the buttered spice mixture until completely coated.
- To assemble: Divide grits into bowls and top each serving with 3 to 4 shrimp. Top each bowl with sliced green onions or chives and serve.

- Whisk eggs in medium bowl until well beaten Toss flour and cornmeal together on cookie sheet Whisk mayo, Thai sauce, and sriracha sauce together in a bowl large enough to hold all of the shrimp. Put handful of shrimp in egg, shake off extra, and put in flour/cornmeal mixture. Shake off extra and repeat until all shrimp is breaded. Oil should be at medium heat. Place shrimp in oil (cover bottom of pan-one layer) and cook for 2 minutes. Turn and cook for two more minutes. Remove from oil and drain. Repeat until all shrimp is cooked.
