1 (14 ounce) package chicken tenders
1 (8 ounce) package cream cheese, softened
½ cup ranch dressing
⅓ cup Buffalo wing sauce
2 tablespoons water
2 cups shredded Colby Jack cheese
2 cups cooked rice
2 cups shredded sharp Cheddar cheese
2 cups crushed corn chips (such as Tostitos®)

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of water to a boil; add chicken tenders. Cook until no longer pink in the center and an instant-read thermometer inserted into the center reads at least 165 degrees F (74 degrees C), 10 to 15 minutes. Drain and cool until easily handled, about 5 minutes. Shred chicken with 2 forks.
  • Beat cream cheese in a blender until smooth. Add ranch dressing, Buffalo wing sauce, and water; blend until smooth. Mix in shredded chicken and Colby Jack cheese.
  • Spread rice in a 9x13-inch baking dish. Pour Buffalo chicken mixture on top. Sprinkle Cheddar cheese on top. Cover baking dish with aluminum foil.
  • Bake in the preheated oven until Cheddar cheese is melted and bubbly, about 45 minutes. Sprinkle corn chips on top.

2 tablespoons butter
1 medium yellow onion, diced
2 garlic cloves, minced
2 celery ribs, diced
1 large carrot, peeled and diced
2 rotisserie chicken breasts, shredded
3/4 cup buffalo wing sauce
3/4 cup shredded cheddar cheese
3/4 cup shredded monterey jack cheese
1 (13 7/8 ounce) can pizza dough
1/4 cup crumbled blue cheese
1 cup carrot sticks
1 cup celery rib
1/2 cup ranch dressing or 1/2 cup blue cheese dressing, for dipping

Steps:

  • Preheat oven to 400 degrees.
  • In a large skillet over medium heat, melt the butter. Add in the onion, garlic, celery and carrots and cook until softened, about 6 to 8 minutes. Add the shredded chicken and buffalo wing sauce and stir to coat.
  • In a medium bowl, combine the cheddar and monterey jack cheeses. Unroll the pizza dough placing the long edge closest to you. Cut into six equal strips.
  • Working one at a time, lay dough into skull cavities and press gently into the bottom and half way up the sides. Fill with the chicken mixture, shredded cheeses and a spoonful of blue cheese crumbles. Fold dough over filling and pinch edges together to seal.
  • Bake for 18 minutes, remove from molds and place on a platter. Serve with carrot sticks, celery sticks and blue cheese dressing for dipping.

1 Tbsp avocado oil
4 c sliced leftover rotisserie chicken
4 Tbsp creamy wing sauce,divided
1 c heavy cream
1 packet italian dressing mix
1 pkg (4 ounces) cream cheese,softened
3/4 c half and half
2 banana peppers,chopped
1 c crumbled blue cheese
1 c shredded colby jack cheese
3/4 c shredded swiss cheese
3/4 c shredded sharp cheddar cheese

Steps:

  • 1. Preheat oven to 350 degrees F.Lightly grease an 11x8x2-inch baking dish.
  • 2. Cook rotini pasta according to package directions.
  • 3. Heat avocado oil in large saucepan over medium heat.Add sliced rotisserie chicken,saute for 5 minutes or until are tender.Stir in 2 tablespoons wing sauce.Remove from heat.
  • 4. In a large bowl,combine heavy cream,italian dressing mix,cream cheese,half and half,chopped banana peppers,blue cheese and remaining wing sauce;whisk together until blended.
  • 5. Add cooked rotini pasta and blue cheese sauce into chicken mixture stir well until combined.
  • 6. Pour into the baking dish.Sprinkle with colby jack,swiss and sharp cheddar cheese.
  • 7. Bake for 25 minutes or until the chicken mixture is hot and bubbling and the cheese is melted.
