CHEESY BRUSCHETTA SPREAD

Steps:
- In a small bowl, mix cream cheese, pesto, salt and pepper until combined. Transfer to a greased 3-qt. slow cooker. Top with tomatoes and mozzarella cheese. Cook, covered, on low until heated though and cheese begins to melt, 1-1/2-2 hours. If desired, sprinkle with basil. Serve with toasted bread.

EASY BRUSCHETTA DIP
I created this on a whim and served it at my annual 2007 Christmas hors d'oeuvres party for my friends. I was planning to make traditional bruschetta but was worried it would get cold or soggy before all my guests arrived. It's simple and a convenient way to serve bruschetta in a party setting.

Steps:
- Preheat oven to 350°F.
- Combine tomatoes, garlic, basil, oregano, onion, olives, oil and 1 tbs. parmesan cheese in a small casserole dish. With back of spoon, smooth down top of mixture until flat.
- Sprinkle 1/2 cup parmesan cheese evenly over top.
- Bake at 350 F for 10-12 minutes or until heated through.
- While this is baking, slice bread and arrange as desired. If desired, lightly toast the bread before arranging.
- Turn off oven heat and preheat broiler to medium heat. Place tomato mixture 2-3 inches under broiler for 1-2 minutes or until cheese is lightly browned.
- Serve immediately, allow guests to spoon the mixture onto pre-sliced bread.

BRUSCHETTA (WITH OR WITHOUT CHEESE)
I basically used the recipes that I had to my disposal and a little bit of common sense as to what tastes right. I usually make this for just two people and I eyeball the amounts, so they may need to be adjusted... just use what you think looks right, and use as much cheese as you want. Fresh ingredients are best as always, but dried will do.

Steps:
- Combine tomatoes, onion, 5 teaspoons of olive oil, salt, pepper, basil, and oregano and mix. (Use your best judgment when adding in seasonings if there's something you know you really like or don't like; don't add too much of anything, especially salt/pepper) - cool in fridge while preparing the rest.
- Combine butter or olive oil with garlic and spread evenly over the baguette. Make sure the baguette is covered right up to the edges, or else they will burn much quicker than the middle.
- Broil baguette open-faced until lightly toasted or until desired doneness.
- Add tomato and onion mixture on top.
- Slice baguette diagonally (for aesthetics) into desired size and sprinkle the basil on top, serve.
- If desired, before slicing add grated cheese on top and warm in the oven at 375 degrees until cheese melts; slice, serve, and enjoy. You may sprinkle more basil on top at this point if so desired or wait until this point to add the basil at all.

HOT BRUSCHETTA DIP
A small round of brie is softened in the microwave and topped with a flavorful bruschetta mixture. This is excellent for cocktail parties, or any day.

- In a small bowl, mix roma (plum) tomatoes, onion, garlic, basil, parsley and olive oil. Cover and chill in the refrigerator at least 1 hour.
- Remove top layer of rind from brie. Place brie in a small microwave safe serving dish. Microwave on high 1 minute, or until the cheese begins to soften. Spoon roma tomato mixture over the cheese. Microwave on high 1 minute, or until slightly melted. Serve immediately with Paris toasts or other dried breads.
