- Preheat the oven to 350°F. Grease a 10-inch square baking dish with butter or cooking spray. Place the potatoes in a large pot and cover with water. Bring to a boil and cook until fork tender, about 10-15 minutes. Drain the potatoes and then transfer them back to the hot pot.
- While the potatoes are boiling, steam or roast the broccoli until hot and barely softened. It should still be a little bit crisp. Drain any liquid from the broccoli. Cook the bacon, chop or crumble and set aside.
- Place the pot with the potatoes back over the warm (but turned off) burner, if you have a gas stove turn the heat to the lowest possible setting. (This will help evaporate any water left in the pan and keep the mashed potatoes nice and fluffy.) Smash the potatoes with a potato masher. Add the butter, sour cream, salt, pepper, garlic, and paprika. Stir to combine.
- Add the cooked broccoli, the chicken, the bacon, and 1 cup of cheese to the pot. Stir to mix throughout and then transfer to the prepared baking dish. Sprinkle with the remaining cheese. Bake for 20-25 minutes, until the cheese has melted and the casserole is heated through. Enjoy!

- Preheat oven to 450F, cut the mini potatoes in half, toss with oil, garlic powder, onion powder, salt & pepper, paprika and cayenne pepper.
- Spread potatoes on a baking sheet, I lined with some parchment paper and bake for 30 minutes.
- If you have not cooked the chicken yet you can do so at the same time, although not at that temperture in the oven, you can cook on the stove in a frying pan or in the air fryer *My chicken was pre-cooked in the oven before the potatoes
- Once the potatoes are done lower oven temp to 350F, you can now make the cheese sauce, in a large pan on the stove melt the butter over medium heat, add in the diced garlic, once the butter is melted add in the flour, it will form a paste.. slowly whisk in the milk until it has all blended with the paste.

- Preheat oven to 450° F. and line a baking sheet with foil. Wash the potatoes, pat them dry and then pierce holes in them with a fork. Rub the potatoes with a little olive oil and sprinkle with salt. Place them on the prepared baking sheet. Bake for about 45 minutes, flipping them halfway through, then remove the pan from the oven.
- Push the potatoes to one side and add the broccoli to the other side. Drizzle the broccoli with olive oil, salt and pepper. Toss until coated and then spread out into a single layer. Put the sheet pan back in the oven and roast for another 15 minutes or until the broccoli is tender and crisp on the edges. If the potatoes still are tender, remove the broccoli and continue to roast the potatoes.
- Once baked, cut the potatoes in half lengthwise and scoop out the inside leaving a 1/4 inch border all the way around. Put the flesh of the potatoes into a large bowl along with the milk, Greek yogurt, spices, salt and pepper. Use a potato masher to mash the filling adding more milk, yogurt, salt and pepper as needed.
- When the potato filling is at your desired consistency, fold in the shredded chicken, 1/4 cup of cheese, and the chopped roasted broccoli. Taste for seasoning.

- Preheat your oven to 425 degrees with the oven rack in the middle. Line a baking sheet with parchment paper.
- Rub the potato with 1 tablespoon olive oil until it is well coated and sprinkle the skin with 1 tablespoon salt. Place the potatoes on the parchment lined baking sheet. Roast the potatoes whole (don’t poke any holes in it) until it is soft when you squeeze it with your hand. The baking time will depend on the size of your potato, but usually 45 minutes – 1 hour.
- While the baked potatoes are baking, make the broccoli, cheddar and chicken filling. Preheat a large skillet over medium high heat. Add the olive oil, then the chopped chicken breast. Season with salt and pepper. Cook about 4 minutes, flipping half way thru, until starting to turn golden brown. Then add in the broccoli and onion. Season again with salt and pepper. Cook about 8-10 more minutes, until the chicken is cooked thru, and the broccoli and onion are softened. Add in the garlic and cook 30 seconds until fragrant. Remove the pan from heat and set aside.
- When you take the baked potatoes out of the oven, drop each one onto the counter or cutting board from 10″ up. By dropping it, you loosen the inside of the potato so it is light and fluffy inside when you cut into it.

- Meanwhile, steam the broccoli (for 5-6 minutes), and get your chicken chopped and cheese shredded.
- Once the potatoes are done, slit in half lengthwise and scoop out the middle. Be sure to leave a small rim of potato in the skin so the shell stays together for stuffing. Place the scooped out potato in a medium bowl.
