Steps:

  • Cut broccoli into spears with 1/2-inch-wide stalks. In 2-quart round microwavable dish, place broccoli and water. Cover with plastic wrap, folding back one edge 1/4 inch to vent steam. Microwave on High 6 to 8 minutes or until hot and crisp-tender; drain.
  • In 2-quart saucepan, heat remaining ingredients over medium heat 6 to 8 minutes, stirring frequently, until cheese is melted and mixture is smooth. Pour over broccoli.

12 cups broccoli florets (about 1 1/2 pounds)
1 tablespoon butter
2 cloves garlic, grated
2 tablespoons all-purpose flour
1 ½ cups low-fat milk
1 teaspoon Dijon mustard
½ teaspoon salt
½ teaspoon ground pepper
1 ½ cups shredded sharp Cheddar cheese

Steps:

  • Bring 1 inch of water to a boil in a large pot fitted with a steamer basket. Add broccoli, cover and steam until tender, 6 to 10 minutes. Drain.
  • Meanwhile, heat butter in a medium saucepan over medium heat. Add garlic and cook, stirring, until fragrant, about 30 seconds. Add flour and whisk until combined with the butter, about 30 seconds. Slowly whisk in milk, mustard, salt and pepper. Cook, whisking frequently, until thickened, 3 to 5 minutes.
  • Remove from heat and stir in cheese until smooth. Stir in the broccoli.

6 tablespoons butter
1/2 lb Velveeta cheese
1 (1 lb) package Ritz crackers or 35 Ritz crackers
2 drops Worcestershire sauce

Steps:

  • cook broccoli until it comes apart and color is nice and green, drain.
  • Arrange in a 9x9 or 8x8 greased pan.
  • Top with cubed cheese.
  • Melt the butter, add a couple drops of worcestershire sauce, crush the ritz crackers and add.
  • Sprinkle over the casserole.

300ml milk
1 tbsp wholegrain mustard
140g mature cheddar, grated

Steps:

  • Cook the pasta, adding the broccoli for the final 4-5 mins and cooking until tender. Drain well, then heat the grill.
  • Heat the butter in a saucepan and stir in the flour. Cook for 1 min, then gradually add the milk, stirring well between each addition. Bring to the boil, stirring, then simmer for 2 mins, before stirring in the mustard, half the cheese and seasoning.
