CHEESE BUNS RECIPE
Homemade cheese buns with cheddar cheese inside and outside, these are some of the best cheese bread buns I've ever had.

- Place the flour, instant dry yeast, salt, and sugar in a large bowl or in the bowl of the stand mixer. Mix well.
- Add the lukewarm water (about 40 degrees Celsius/ 105 degrees Fahrenheit) and the grated cheese needed for the dough. Mix well and knead the dough for about 5 minutes with the hands or about 3 minutes with the stand mixer until smooth and elastic.
- If you make the dough with fresh or active dry yeast, crumble/sprinkle the yeast in the lukewarm water, add the sugar and stir gently. Let stand for about 5 minutes, then combine with the rest of the ingredients and knead the dough.
- Place the yeast dough in a bowl, cover with a kitchen towel and let rise in a warm place for about 2 hours or until nicely risen (Note 3).
- Preheat the oven to 250 degrees Celsius/ 480 degrees Fahrenheit. Line a baking tray with parchment paper.
- Grate the remaining cheese and place it on a large plate. Mix the egg and the milk in a small bowl.
- Form a thick sausage and cut the pieces of dough with a scraper or tear the pieces directly from the dough. You will have 12 buns (Note 4).
- Knead the dough pieces shortly on the lightly floured surface and shape them into balls.
- Brush each cheese bun with the egg mixture and roll it into the grated cheese.
- Place on the prepared baking tray. Cover the tray with a clean kitchen towel and let rise lightly for 15 minutes.
- Place in the oven and bake for 18-20 minutes or until deeply golden and cooked through. Check after about 10-15 minutes. If they are already very golden, cover them loosely with a piece of aluminum foil to prevent the cheese from getting too dark.
- Remove from the oven and let cool on a wire rack.

CHEESY BACON BREAKFAST BUNS
These savory buns-think cinnamon rolls, but with cheese and bacon instead of a sweet sugary filling, are the perfect solution to those few pieces of leftover cooked bacon hanging out in the fridge. You can prep the dry mix up to one month ahead of time, and store it in a container at room temperature. Just give it a shake before using to re-mix the ingredients.

- Preheat the oven to 425 degrees F.
- To make the dough, whisk together the flour, sugar, baking powder, baking soda and salt in a deep bowl.
- In a separate bowl or measuring cup, whisk together the buttermilk and 6 tablespoons of the melted butter. Pour over the dry ingredients, and stir together with a wooden spoon until it forms a shaggy dough.
- Dump the dough onto a lightly floured surface. Using your fingertips, gently press the dough out into a 12-by-8-inch rectangle. Sprinkle the cheese on top, leaving a 1/4-inch border. Evenly sprinkle the bacon over the cheese. Roll the dough into a log, starting from the longest (12-inch) side nearest you. Pinch the ends closed. Cut into 8 equal pieces.
- Using a pastry brush, use 1 tablespoon of the butter to coat the bottom and sides of an 8-inch round cake pan. Arrange the rolls, cut-side down, in the pan. Gently press them down with your fingertips to flatten slightly. Brush the tops of the buns with the remaining melted butter.
- Bake until golden brown and the cheese is bubbly, 23 to 25 minutes. Cool in the pan for 5 minutes before serving.

- In a small nonstick skillet, cook sausage over medium heat until no longer pink, 4-6 minutes, breaking into crumbles; drain. Stir in cheeses and green onions; set aside. Wipe skillet clean., In a small bowl, whisk eggs, milk, salt and pepper until blended. In the same skillet, heat butter over medium heat. Pour in egg mixture; cook and stir until eggs are thickened and no liquid egg remains. Stir in sausage mixture., Preheat air fryer to 400°. With 1 corner of an egg roll wrapper facing you, place 1/4 cup filling just below center of wrapper. (Cover remaining wrappers with a damp paper towel until ready to use.) Fold bottom corner over filling; moisten remaining wrapper edges with water. Fold side corners toward center over filling. Roll egg roll up tightly, pressing at tip to seal. Repeat., In batches, arrange egg rolls in a single layer on greased tray in air-fryer basket; spritz with cooking spray. Cook until lightly browned, 3-4 minutes. Turn; spritz with cooking spray. Cook until golden brown and crisp, 3-4 minutes longer. If desired, serve with maple syrup or salsa.

- mix yeast, water, and sugar and set aside for 5 min
- mix flour, onion, and spices.
- add yeast mix and oil to flour mix all at once and stir until dough forms.
- knead until smooth and elastic and not too sticky, adding more flour if needed. cover with a dish cloth and leave in a warm place (like your oven that was left on the lowest setting for 5 min but be sure to put an oven mitt under the bowl) for about 30 min or until doubled in size.
- punch down dough and place on a lightly floured surface. roll out into about a 1/4 inch thick rectangle and sprinkle about 1 1/2 cups of the cheese over top.
- roll up lengthwise like a jelly roll and cut into 1 1/2 inch slices (these tend to spread sideways rather than up). place into a greased pan, about an inch apart so when they spread they'll be just touching. i used the bottom of a roasting pan since my lasagna pan was a bit too small. return to the warm place until doubled again (probably more like 20 min this time).
- top with the remaining cheese now that there's enough surface area to put it.
- bake at 325 for about 30 min or until exposed bread bits are starting to turn a bit golden, cool and pull apart carefully.

- Make the dough: Whisk together the eggs, yolk, granulated sugar, oil and milk in the bottom of a stand mixer bowl. Add the flour, yeast and salt and mix with the dough hook on low until it comes together, then let the machine knead it for about 5 minutes. Scrape the dough onto a lightly floured counter just long enough to coat a mixing bowl with oil, then return the dough to the oiled bowl to rise until doubled, about 2 hours.
- For the filling and assembly: Butter a 13-by-9-inch (or equivalent size) baking dish, or coat it with nonstick spray.
- Combine the cream cheese, granulated sugar and vanilla in a medium bowl (I just use a fork to mix this).
- On a very well-floured counter, roll out the dough into a rectangle about 16 inches wide (on the side facing you) and as far away from you as it comfortably goes, usually 13 to 15 inches. Spread the cream cheese mixture all over the rolled dough. Dollop the jam over it and spread it smooth. Roll the dough into a snug spiral; it will stretch to about 18 inches wide.
- Cut the log very gently--it's going to be a soft mess, so use a sharp serrated knife or dental floss--into 1 1/2-inch segments. Arrange each in the prepared baking dish. Brush the tops of the buns with the egg wash and cover with plastic wrap. Refrigerate overnight, along with the leftover egg wash (also covered).
- The next morning, remove the buns from the fridge and let warm up for 30 minutes. Preheat the oven to 350 degrees F.
- Brush the tops of the buns with the egg wash again and sprinkle with poppy seeds. Bake until the buns are bronzed all over and have an internal temperature of 190 degrees F, about 30 minutes. Let cool slightly before serving.
- For the glaze (if using): Whisk the powdered sugar together with 3 tablespoons lemon juice until smooth, drizzling in an additional tablespoon of lemon juice as needed to loosen. Drizzle this over the buns, or serve it alongside with a spoon.
