CHEESE & GARLIC CRACK BREAD RECIPE - (4.3/5)

Cheese & Garlic Crack Bread Recipe - (4.3/5) image

Provided by á-1590

Number Of Ingredients 7

GARLIC BUTTER:
1 crusty loaf, preferably sourdough or Vienna
3/4 cup shredded Mozzarella cheese or other melt-able cheese
1 stick unsalted butter, softened
2 garlic cloves, minced
3/8 teaspoon salt
1 tablespoon fresh parsley, finely chopped

Steps:

  • Preheat the oven to 350°F. Melt butter and then mix in other Garlic Butter ingredients. Cut the bread on a diagonal into 1-inch diamonds, but do not cut all the way through the bread (just like you would cut a french stick for garlic bread). Use your fingers or a knife to pry open each crack and drizzle in a teaspoon of butter and stuff in a pinch of cheese. This might sound like a bit of an effort, but I promise you it is worth it. You don't need to be super neat, it's nice to have some of the butter drizzled over the crust. Wrap with foil and bake for 15 minutes until the cheese has mostly melted, then unwrap and bake for 5 minutes more to make the bread nice and crusty. Serve immediately. MAKE-AHEAD: To make-ahead, after wrapping with foil, wrap with cling wrap as well. Store in fridge overnight or freeze to store for longer. To cook, thaw, then follow recipe instructions to bake. NOTES: The denser the bread, the better the pieces will hold together when pulled off.

Provided by Tessa Arias

Categories     Side Dish

Time 40m

Number Of Ingredients 8

1 crusty sourdough or artisan loaf
4 ounces (1 stick) unsalted butter, melted
2 garlic cloves, minced
1/2 teaspoon kosher salt
1 tablespoon fresh parsley, chopped
2 teaspoons fresh rosemary, minced
2 teaspoons fresh thyme, minced
3/4 cup shredded Mozzarella cheese

Steps:

  • Preheat the oven to 350°F.
  • Combine the melted butter, garlic, salt, parsley, rosemary, and thyme in a small bowl.
  • With a serrated bread knife, cut the bread on a diagonal into 1-inch diamonds, being careful not to slice all the way through. Use your fingers to pry open each crack and drizzle with 1 teaspoon of butter and a pinch of the shredded cheese. Don't worry if you make a bit of a mess.
  • Wrap the entire loaf in foil. To make ahead, place the foil wrapped bread in the fridge overnight or in the freezer for a month, thawing before baking. Place on a rimmed baking sheet, and bake for 15 minutes, or until the cheese has mostly melted. Carefully remove the foil and continue to bake for another 5 minutes, or until crusty. Serve immediately.

CHEESY BREAD ON CRACK

Cheesy Bread on Crack image

We serve this bread with just about everything, from a salad lunch to pasta dinner. It even made an appearance at Thanksgiving! Hope you enjoy!

Provided by Janet Brinley

Categories     Other Appetizers

Time 15m

Number Of Ingredients 7

1 loaf crusty bread, like italian
1/2 brick, cream cheese, softened
1/2 stick, butter, softened
1 - 2 tsp minced garlic (to taste)
1/2 tsp garlic powder (or more, to taste)
2 Tbsp parmesan cheese
generous sprinkle parsley (optional, makes it pretty)

Steps:

  • 1. Cut the loaf of bread lengthwise and lay out on a baking sheet, cut side up. The baking sheet can be foil-lined for easier clean up.
  • 2. Mix all the other ingredients together. Depending on how soft your cream cheese is, your mixture may end up lumpy. This doesn't matter - will be just fine either way.
  • 3. Spread the cream cheese mixture on the bread.
  • 4. Place under the broiler for 2-3 minutes, or until the cheese and bubbling and the bread is just beginning to brown around the edges. Cut in slices and serve! (Best to make 2 batches, as the first will disappear quickly!)

STACI'S CHEESY ROASTED-GARLIC CRACK BREAD

Staci's Cheesy Roasted-Garlic Crack Bread image

I originally got making up a hopped-up bread idea from Pinterest. My household however loves cheese, and garlic, and I have really cranked it up with extra cheese and red pepper flakes, and roasted garlic spread! I made this for Thanksgiving as an appetizer, and it got DEMOLISHED ( which is why I don't have a pic to post of it...

Time 1h50m

Number Of Ingredients 1

cheese, garlic, bread, butter, olive oil.. see step one !

Steps:

  • 1. Ingredients: 1 loaf hearty-crusty bread, I used Italian 2 ½ sticks salted butter Large head of Elephant Garlic Olive oil to drizzle over garlic for roasting Cavender's Greek Seasoning Sea Salt or Pink Himalayan Salt Red Pepper Flakes Mozzarella Cheese - full fat 1 ½ - 2 cups Parmesan Cheese - the good stuff. Shreds work great. About ¾ - 1 cup.
  • 2. Preheat your oven to 400. Cut and peel the entire head of garlic, and place in a cover-able dish. Sprinkle with some salt. Drizzle olive oil over garlic and toss lightly. Cover and roast for about 30 - 40 minutes. The garlic will caramelize, you WANT this !
  • 3. While your garlic is roasting, cross hatch your bread all the way to the bottom, but not all the way through. Place on a sheet of tin foil that is large enough you will be able to seal the whole loaf to bake. Melt your butter and set aside. You can actually just let it sit out and get really soft instead of melting, as you will be mixing it with the spices and garlic and a spread can be easier to deal with than painting with something melted.
  • 4. When the garlic is done, ( and you do not have to use it all for the recipe!! You can save some and use for bruschetta another day, it keeps in the fridge for at least a week ), you are going to mix the Greek seasoning, butter, ½ the Parmesan cheese, salt and red pepper flakes to taste, until well combined. Then start spreading or painting both sides of all your cross-hatched bread. Once you've done that, start stuffing all the cross-hatches with Mozzarella, and top with Parmesan. Drizzle/paint a little mixture over the top, seal up the bread as tightly as you can without compromising the cheese getting stuck to the tinfoil.
  • 5. Bake at 350 degrees for 20 minutes. Open the tinfoil, sprinkle on a little more Parmesan cheese, and bake exposed for about 5-10 minutes, or until the bread is browned to your liking and the cheese is melty ooey-gooey !!!!!!!!!! Pull from the oven, and Mangia !!!!

  • Combine the garlic cloves, parsley, and olive oil in a small food processor until the garlic breaks down into small pieces. If you're using sliced mozzarella, stack the cheese slices and cut into 1 inch squares.
  • Heat the butter over medium heat in a small saucepan. When the butter melts, add the chopped garlic to the butter along with a pinch of salt and allow the mixture to cook for 2 minutes, stirring as necessary so the garlic does not brown. Remove from heat.
  • Position a rack in the center of the oven and preheat the oven to 375ºF. Using a sharp serrated knife, make 1 inch diagonal cuts across the loaf of bread making sure you don't cut the bread all the way through. Use a spoon to drizzle the garlic butter into the the cuts of the bread. Stack 3-4 cheese squares and place them in the cuts. Place the garlic bread on a sheet of foil and fold up the sides. Use a second piece to cover the top (we'll be removing this later). Allow the bread to bake for 10 minutes. Remove the top piece of foil and allow the bread to bake for another 10 minutes or until the cheese melts completely. Serve warm.
