CHEESY ROAST BEEF SLIDERS
Cheesy Roast Beef Sliders are the perfect recipe for a crowd. You can easily make a large batch of these sliders for a party or holiday potluck and bet that everyone will be thoroughly satisfied. Made with melted Brie, these sliders are as elegant as they are delicious. They are also super easy to make! All you need are a few ingredients and about a half hour from start to finish. If you're familiar with funeral sandwiches, this recipe is very similar. We've substituted roast beef in place of ham, and Brie in place of Swiss, but other than that, the basic recipe is the same. These sliders are the perfect thing to make for a potluck and are sure to delight!

Steps:
- In a small frypan, melt butter and olive oil over medium heat. Add onions to the pan. Season with salt and pepper. Sauté until soft and caramelized. Remove from the heat and set aside.
- Preheat oven to 350 degrees F.
- Slice rolls and remove tops.
- In a small bowl, combine the mayonnaise and the horseradish.
- Spread bottom of rolls with half the mayonnaise mixture.
- Top with caramelized onion, roast beef, brie cheese.
- Spread tops of rolls with remaining mayonnaise mixture.
- Place tops on the sandwiches. Drizzle tops with melted butter and sprinkle with poppy seeds (if desired).
- Bake in the oven for 5-8 minutes, or until the cheese is melted and the tops just begin to turn golden brown.
CHEESY MEATBALL SLIDERS

- Preheat oven to 350°. Combine ground beef, bread crumbs, pesto and egg; mix lightly. Shape into 12 meatballs; place on a greased rack in a 15x10x1-in. baking pan. Bake until browned and a thermometer reads 160°, about 35 minutes. Toss meatballs with sauce; set aside., Meanwhile, without separating rolls, cut horizontally in half; arrange bottom halves in a greased 13x9-in. baking dish. Place half of cheese slices over roll bottoms; sprinkle with oregano. Add meatballs and sauce. Top with remaining cheese slices and bun tops., Combine butter, olive oil, garlic, Italian seasoning and red pepper flakes; brush over buns. Bake, covered, for 20 minutes. Uncover; sprinkle with Parmesan and shredded mozzarella., Bake, uncovered, until cheese is melted, 10-15 minutes longer. Sprinkle with basil before serving.

CHEESY BEEF SLIDERS
Steps:
- 1. Mix the ground beef, onion, and garlic together in a skillet. Cook until meat is no longer pink. Drain. Add the meat back to the pan. Add the seasonings and tomato sauce. Cook 1 minute. Add 1 1/2 cups of cheese and cook until melted.
- 2. Preheat oven 350 degrees. Cut the Hawaiian rolls in half. Grease a baking sheet. Place the bottom of the rolls on the sheet. Top with the meat. Sprinkle on the remaining cheese. Add the top of the Hawaiian rolls. Melt the butter and brush on the top of the rolls.
- 3. Bake for 15 minutes.
CHEESY POBLANO SLIDERS

Steps:
- Roast the poblanos over an open flame or under the broiler, turning as necessary, until charred all over, about 8 minutes. Place in a medium bowl and cover with a plate to steam and loosen the skin, about 5 minutes. When cooled, peel off the blackened outer skin, remove the seeds and stems and discard. Slice the poblanos into thin strips. Set aside.
- Set an oven rack as close as possible to the broiler. Heat the broiler to high.
- Heat the vegetable oil in a medium skillet over medium heat until shimmering. Add the onion and cook, stirring often, until softened and translucent, about 5 minutes. Add the garlic and cook until slightly softened and fragrant, about 30 seconds. Stir in the poblanos and cook until everything is very soft, about 5 minutes. Stir in the crema and Oaxaca cheese and cook until the cheese is just melted. Reduce the heat to low, season with 1 teaspoon salt and keep warm.
- Combine the melted butter, chipotle powder and 1 teaspoon salt in a small bowl. Split the slider buns, put on a baking sheet cut-side up and brush evenly with the butter mixture. Broil until golden around the edges, about 2 minutes. Transfer to a serving platter.
- Place the beef patties on the baking sheet and season generously with salt and pepper. Broil to desired doneness, about 4 minutes for medium.
- Put a patty on each bottom bun. Spoon some of the poblano sauce over each and top with a tomato slice and cilantro leaves. Close the sliders with the top buns.
