- Place the ground beef in a large skillet. Cook, chopping it finely while doing so, over medium-high heat, until fully cooked and no longer pink in the center. Drain off any grease.
- Add taco seasoning and three cups of water. Bring to a simmer over medium heat, stirring fairly often, until thickened. Remove from heat and allow to cool slightly.
- Assemble each burrito by spreading about two spoonfuls of refried beans in the center of each burrito and topping that with about two spoonfuls of seasoned beef and a generous handful of shredded cheddar cheese.
- Fold the burrito up by folding each side into the center, according to the directions and photos in this post. Place the burritos into zipper-seal freezer bags, not touching or separated by waxed paper, and freeze.
- To reheat, place a burrito, uncovered, on a microwave-safe plate and microwave for two minutes or until heated through.

- Combine the ground chuck, chopped pepper and onions in a large skillet. Cook until the beef is browned. As the meat cooks add the salt, oregano, cumin and garlic powder. Add the cream cheese and stir until combined. Drain off the pan drippings.
- Fill each tortilla with 1/4 cup of beef mixture. Sprinkle each burrito with a bit of grated cheddar cheese. Roll up and place seam side down in a 12"x7"x2" baking dish coated with cooking spray. Cover and bake at 350°F for 20 minutes.
- While the recipe is baking, combine the tomatoes, diced chilies, cornstarch, sugar and coriander in the container of a blender. Process until smooth. Pour the tomato mixture into a saucepan and bring to a boil. Reduce the heat. Simmer for 2 minutes, stirring occasionally.

- 1. Grab a flour tortilla. (the 8 inch size works great).
- 2. Spoon about 1/4 cup seasoned ground beef (I used this Taco Meat recipe), 1/4 C rice (I used Lemon Butter Rice) and 1/4 C grated cheddar or mexican blend cheese. If you sprinkle the cheese down both sides of the filling it will help the burrito stick together a bit better.
- 3. Pop it into the microwave for 10-15 seconds so the tortilla has a chance to get warm and pliable. Tuck the corners in and roll the old girl up. Beautiful!
- Make a few, as many as your crew will eat.
- 4. Heat a large skillet up over medium high heat. When the pan is hot add about 1 Tb olive oil and allow the oil to become hot. Place the burritos in the oil and allow them to brown on each side.
- Serve immediately with salsa, guacamole and sour cream.

- Preheat oven to 350 degrees Fahrenheit.
- Heat vegetable oil in large frying pan over medium heat. Add chopped onion and bell pepper, toss to coat in oil.
- Crumble and add ground beef, breaking apart as it cooks. Cook for approximately 8-10 minutes.
- Drain in a colander or use a slotted spoon to transfer mixture to a paper towel lined plate.
- Spray a casserole or baking dish with cooking spray.

- To Make the Filling: Brown the ground beef together with onion. Once the meat is brown, drain off the fat and add all of the spices and the refried beans. Mix to incorporate. Once it is heated through, add the enchilada sauce. Stir to combine. Once that is heated through, cover with shredded cheese and mix to combine. Once the mixture is fully heated and the cheese is melted, decided if you need to thin out the filling. If so, add the 1/2 cup of water. If you are happy with the consistency, omit the water.
- Bring the mixture to a low simmer. Continue to cook for about 10 minutes to allow the flavors to meld and develop. Then remove from the heat and set aside.
- To Fill the Burritos: Spoon 1/4-cup of the meat mixture onto the center of a tortilla shell. Wrap the burrito by folding in the sides and rolling up tightly. I do this by folding in the sides on the ends of the filling first. I then fold the bottom half of the shell over the filling, pressing it firmly towards me and then rolling toward the top.
- To freeze: I wrap each burrito in a piece of foil. I allow the burritos to cool completely and then I place them in two airtight zip-top freezer bags. These store in the freezer for up to 3 months.To serve: Remove foil and heat in the microwave for about 1 minute to 1 minute 30 seconds. Rotate the burrito and check to see if it's heated through. If not, heat for another 15-30 seconds. Microwave times vary due to size and type of microwave being used.

- In a bowl, blend eggs, creme fraiche, parmesan cheese and garlic powder.
- Pre-heat cooking pan to medium heat. Add ground beef, Goya Adobo, Red Cayenne Pepper, Chili Powder, Ground Cumin, Himalayan Pink Rock Salt and Black Pepper. Cook until browned and drain any excess liquids.
- In a separate cooking pan, pre-heat to medium heat, add 1 tbsp of butter, and cook scrambled egg mixture. Set to the side.

- Heat rice according to package directions. Meanwhile, crumble beef into a 4-qt. microwave-safe dish. Add corn and beans; mix well. - Preheat the oven to 350 degrees F.
- In a skillet over medium high heat, brown the ground beef with the cumin and onion powder; cook until the beef is fully cooked throughout and no pink remains; drain any fats that accumulate. Season beef to taste with salt and pepper.
- Reduce the heat to medium, then add the cream cheese, stirring until the cream cheese is softened and incorporated. Add 1 can enchilada sauce, the drained diced tomatoes and green chilies, black beans, and corn to the ground beef mixture, gently stirring until all ingredients are combined; reserve and keep warm.
- In a mixing bowl, combine the sour cream, enchilada sauce, cream of chicken soup, and dry Ranch dressing mix until smooth; spread one-third of this mixture evenly across the bottom of a greased 9 x 13 pan.
- Meanwhile, warm the flour tortillas a bit, a few at a time in the microwave. Fill each tortilla with the prepared ground beef mixture, dividing it evenly between each burrito; place each one side-by-side into the sour cream mixture in the 9x13 pan.

- Preheat oven to 350 degrees F.
- In a large skillet add ground beef, garlic and brown about 3 minutes. Add bell pepper onion mix and poblano peppers. Cook 5 more minutes, until meat is almost browned. Drain meat and return to the skillet. Stir in taco seasoning, Rotel tomatoes and black beans. Heat over medium heat for a few minutes. Set aside.
- While the meat is browning add the soup and sour cream to a medium bowl. Mix well. Set aside.
- In a 9x13 baking dish spray lightly with non-stick cooking spray. Using 3-4 tortillas cover the bottom of the baking dish. You might need to cut them into pieces to fix perfectly. Spread half of the sour cream mixture over tortillas. Top with half of the meat mixture. Spread half of the cheese over meat mixture. Repeat layer one more time.
- Bake 15-18 minutes or until cheese is bubbly. Let sit 5 minutes.
- Garnish and serve. Enjoy!

- Bring beef stock to a boil.
- Add rice, cover and lower heat, cook for 20 minutes.
- Heat olive oil over medium heat.
- Add onions to oil and cook until translucent.
- Add ground beef to the onions and break it up using a spatula or wooden spoon, stir occasionally until browned.
- Drain off excess fat.
- Add water and taco seasoning.
- When rice is finished stir and add to meat.
- Heat a grill pan over medium high heat.
- Microwave tortillas in on a plate covered with a damp paper towel on high for 30 seconds.
- Place a mound of the meat and rice mixture in the center of the tortilla.
- Cover with a layer of shredded cheese.
- Add a spoonful of sour cream on top of the cheese.
- Fold the tortilla into a burrito.
- Place the burrito on the heated grill pan and cover with a bacon press or other heavy object, let cook for a couple of minutes, just long enough to get grill marks.
- Turn the burrito over and place the bacon press on top and cook for another 2 - 3 minutes.
- Serve (my son likes a spoonful of sour cream on the side as well).
