This hearty dish has all the great taste of traditional enchiladas -- cumin, chiles, and sour cream -- without all of the fuss. It's a fast and easy favorite.

- In a large skillet cook the ground beef, onion, chili powder, and cumin until onion is tender and meat is no longer pink; drain. Stir pinto beans and undrained chili peppers into meat mixture; set aside.
- In a small mixing bowl stir together sour cream, flour, and garlic powder until combined; set aside.
- Place half of the tortillas in the bottom of a lightly greased 2-quart rectangular baking dish, cutting to fit if necessary. Top with half of the meat mixture, half of the sour cream mixture, and half of the enchilada sauce. Repeat layers. Cover dish with plastic wrap; chill in refrigerator for up to 24 hours. To serve:
- Preheat oven to 350F. Remove plastic wrap; cover dish with foil. Bake in preheated oven for 35 to 40 minutes or until bubbly. Uncover; sprinkle with cheese and bake 5 minutes more. Makes 6 to 8 servings.

- Preheat oven to 375° and spray a 13x9 casserole dish with cooking spray.
- In a large skillet, brown ground beef and add seasonings. Drain grease and return to pan.
- Add refried beans and stir until meat and beans are combined.
- Pour 1/4 cup of enchilada sauce on the bottom of the prepared baking dish.
- Pour 1/2 can of enchilada sauce onto a large tray or plate. One at a time, coat both sides of tortillas in sauce.
- Place meat and bean mixture into the center of tortilla and top with cheese. Roll up and place seam side down in the casserole dish.
- Continue dipping tortilla in sauce, filling with meat mixture, and cheese until meat is gone.
- Pour the remaining enchilada sauce on top of the enchiladas and top with the remaining cheese.
- Cover with foil and bake for 25-30 minutes. Uncover and bake for an additional 10 minutes until cheese is melted and bubbly.

- Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch casserole dish with cooking spray.

- Heat oven to 350. Saute onion and garlic in oil until onions are softened.
- Add 1/2 of each type of beans and mash with a potato masher, then add the remaining half of beans.
- Add 1/2 of enchilada sauce, 1/2 cup salsa, cumin, and salt and pepper; simmer and mix on low heat for about 3 minutes or until heated through.
- Fill each tortilla with about 3 tablespoons of bean mixture and a sprinkle of cheese and roll up leaving ends open, arranging seam side down in a greased 9 x 13 inch baking dish.
- Mix the 2 tablespoons of water with the remaining enchilada sauce and pour evenly over tortillas.

- Stir the soup, sour cream, picante/salsa and chili powder in a medium bowl, set aside.

- Preheat oven to 300°F. In a medium sauce pan over medium heat melt butter. Add flour and whisk for 2 minutes, to cook out the 'floury' taste. Meanwhile, in a medium skillet over medium-high heat; combine beef, salt, pepper and onion powder. Cook beef until browned breaking it apart with spatula as it cooks. Once sauce and filling are started; wrap tortillas in aluminum foil and warm in the oven. While the beef is cooking and the tortillas are warming; add chicken broth, enchilada sauce, coriander and pepper to your sauce pan. Whisk to combine bring to a boil, reduce to simmer. Meanwhile add green chile sauce, green chiles, and beans. Stir to combine and cook until hot. About 5 minutes. Remove tortillas from oven. Turn oven to 400°F. Open foil.
