This hearty dish has all the great taste of traditional enchiladas -- cumin, chiles, and sour cream -- without all of the fuss. It's a fast and easy favorite.

0.5 pound lean ground beef
0.5 cup chopped onion
1 teaspoon chili powder
0.5 teaspoon ground cumin
1 15 ounce can pinto beans, drained and rinsed
1 4 ounce can diced green chili peppers
1 8 ounce carton dairy sour cream or light dairy sour cream
2 tablespoon all-purpose flour
0.25 teaspoon garlic powder
8 6 inch corn tortillas
1 10 ounce can enchilada sauce or one 101/2-ounce can tomato puree
1 cup shredded cheddar cheese (4 ounces)

Steps:

  • In a large skillet cook the ground beef, onion, chili powder, and cumin until onion is tender and meat is no longer pink; drain. Stir pinto beans and undrained chili peppers into meat mixture; set aside.
  • In a small mixing bowl stir together sour cream, flour, and garlic powder until combined; set aside.
  • Place half of the tortillas in the bottom of a lightly greased 2-quart rectangular baking dish, cutting to fit if necessary. Top with half of the meat mixture, half of the sour cream mixture, and half of the enchilada sauce. Repeat layers. Cover dish with plastic wrap; chill in refrigerator for up to 24 hours. To serve:
  • Preheat oven to 350F. Remove plastic wrap; cover dish with foil. Bake in preheated oven for 35 to 40 minutes or until bubbly. Uncover; sprinkle with cheese and bake 5 minutes more. Makes 6 to 8 servings.

2 cups shredded Monterey Jack cheese (8 oz)

Steps:

  • Heat oven to 350°F. Lightly spray 11x7-inch (2-quart) glass baking dish with cooking spray. Heat oil in 10-inch skillet over medium heat. Add onion and cumin; cook and stir until onion is tender. Stir in beans.
  • Place about 3 tablespoons bean mixture in center of each warm tortilla. Top each with 1/4 cup Monterey Jack cheese. Roll up tightly; place, seam side down, in baking dish. 16 oz can refried beans
2 15 ounce cans red enchilada sauce
8 flour tortillas
2 cups cheddar cheese, (shredded and divided)

Steps:

  • Preheat oven to 375° and spray a 13x9 casserole dish with cooking spray.
  • In a large skillet, brown ground beef and add seasonings. Drain grease and return to pan.
  • Add refried beans and stir until meat and beans are combined.
  • Pour 1/4 cup of enchilada sauce on the bottom of the prepared baking dish.
  • Pour 1/2 can of enchilada sauce onto a large tray or plate. One at a time, coat both sides of tortillas in sauce.
  • Place meat and bean mixture into the center of tortilla and top with cheese. Roll up and place seam side down in the casserole dish.
  • Continue dipping tortilla in sauce, filling with meat mixture, and cheese until meat is gone.

1 onion, chopped fine
4 garlic cloves, minced
3 tablespoons vegetable oil
1 (16 ounce) can black beans, drained and rinsed
1 (16 ounce) can pinto beans, drained and rinsed
1 (15 ounce) can enchilada sauce
1/2 cup salsa, plus more served with meal, if desired
3 teaspoons cumin
1/4 teaspoon salt
1 -2 dash black pepper
10 flour tortillas
2 tablespoons water
2 cups shredded monterey jack cheese

Steps:

  • Heat oven to 350. Saute onion and garlic in oil until onions are softened.
  • Add 1/2 of each type of beans and mash with a potato masher, then add the remaining half of beans.
  • Add 1/2 of enchilada sauce, 1/2 cup salsa, cumin, and salt and pepper; simmer and mix on low heat for about 3 minutes or until heated through.

1 (15-oz) can enchilada sauce
1 tsp ground coriander
½ tsp black pepper

Steps:

Ladle green chile sauce (about 1 cup) from filling mixture to cover the bottom of a 9x13 baking dish (or 2 smaller dishes). Ladle red sauce (about 1 cup) on top of the green chile sauce. Lay a tortilla on a clean work surface. Spoon about ¼ cup of the beef filling into the center of the tortilla. Roll tortilla up, enclosing the filling and lay in the baking dish seam side down. Repeat until all tortillas are in the baking dish. Ladle remaining red sauce over the top of the enchiladas, covering them completely. Sprinkle cheese over top. Scatter black olives on top. Bake for 7-10 minutes until cheese is completely melted. Garnish with sour cream and chopped cilantro. Serve and enjoy!

  • In a 10 to 12-inch non-stick skillet, cook the ground beef until browned. Drain and discard the fat before seasoning with cumin and chipotle powder. Transfer the seasoned beef to a medium sized bowl and set off to the side.
  • To the same skillet, add in the olive oil, onion, jalapeño and garlic. Stir until the vegetables are tender. Add in the butter and stir until melted. Stir in the flour and cook for 2 minutes before pouring in the chicken broth. Stir until thickened, taste and season with kosher salt to your preference. Add in the sour cream, tomatillo salsa and cilantro and stir to combine.
  • Measure out 1 cup of sauce and stir it into the beef. Measure out 1/2 cup of the sauce and spread it onto the bottom of the prepared pan.
