HASH BROWNS WITH CHEESY EGGS AND AVOCADO
Steps:
- For the hash browns: Preheat the oven to 250 degrees F.
- Grate the onion on the largest holes of a box grater into a large bowl. Grate the potatoes and put in a strainer lined with cheesecloth or a kitchen towel. Squeeze the liquid from the potatoes, then add the dry potatoes to the bowl with the onions. Season with salt and pepper. Add the herbs and mix until well combined.
- Heat 2 tablespoons oil in a medium cast-iron skillet over medium heat. Drop 1/4 cup of the potato mixture into the skillet, pressing down lightly with a spatula. Repeat until there are 4 hash browns in the skillet. Cook until golden brown on the bottom, 5 to 7 minutes, reducing the heat to medium low if they start to brown too quickly. Flip and cook until golden brown, 5 to 7 minutes more. Transfer to a baking sheet and keep warm in the oven. Repeat the process with the remaining 2 tablespoons olive oil and remaining potato mixture.
- For the cheesy eggs: In a medium bowl, whisk together the milk and eggs and season with salt and pepper.
- Melt the butter in a medium nonstick skillet over medium heat. Lower the heat and add the egg mixture. Using a heatproof rubber spatula, push the eggs toward the center of the skillet and let the liquid run out. Cook, continually moving, until just set, about 2 minutes. Drop 2 tablespoons of the garlic-herb cheese into the middle. Gently fold the cheese into the warm eggs.
- Divide the hash browns among 4 plates. Top each with some cheesy eggs and sliced avocado. Dollop each portion of eggs with 1 tablespoon of the remaining garlic-herb cheese. Serve immediately.
CHEESY BAKED POTATOES WITH AVOCADO AND GROUND BEEF
Steps:
- Heat oven to 375ºF
- Prick potatoes with fork or sharp knife; place on baking sheet sprayed with cooking spray.
- Bake 1 hour or until tender. About 10 min. before potatoes are done, brown meat with onions in large skillet on medium heat. Stir in taco seasoning mix; cook 5 min., stirring frequently. Add cheese; cook 2 to 3 min. or until melted, stirring frequently. Remove from heat.
- Cool potatoes 10 min.; cut lengthwise in half. Scoop out centers, leaving 1/4-inch-thick shells. Add 1 cup potato flesh to meat mixture; mix well. Spoon into potato shells. Return to baking sheet. Discard remaining potato flesh or reserve for another use. (See tip.)
- Bake stuffed potatoes 5 min. or until filling is heated through. Meanwhile, mash avocados; stir in dressing.
- Spoon avocado mixture over potatoes; sprinkle with onions.

- In a large skillet over medium heat, cook beef until no longer pink; drain. Place in a greased 13x9-in. baking pan. Top with mushrooms. , In a small bowl, combine the potatoes and contents of sauce mix packets, water, milk, butter, salt, seasoned salt and pepper. Pour over beef and mushrooms. CHEESY BEEF AND POTATO HASH
Steps:
- Peel the potatoes and cut into small cubes (a little less than 1/2 inch). Put in a bowl and cover with cold water, mixing to rinse off the starch. Drain and rinse in a colander, then transfer to paper towels and pat dry.
- Heat the oil in a 10-inch cast-iron skillet over medium-high heat. Add the potatoes and cook, stirring occasionally, until tender and golden brown on most sides, about 15 minutes. Season with 1/4 teaspoon salt and pepper to taste, then transfer to a plate with a slotted spoon.
- Preheat the broiler on high.
- Add the onion, bell pepper and garlic to the skillet and cook, stirring occasionally, until golden brown, about 7 minutes. Add the beef, chili powder and 1/2 teaspoon salt and cook, breaking up any clumps with a wooden spoon, until brown, about 5 minutes. Return the potatoes to the skillet and mix to combine. Sprinkle the cheese over the hash.
- Broil until melted and bubbling, about 1 minute.

- Lightly grease an 11 x 7-inch baking pan. Preheat oven to 350 degrees F
- Brown ground beef and onion; drain
- Mix the soup, garlic powder, pepper, stock and cream in a bowl
- Layer half of the potatoes in the bottom of the prepared baking dish.
- Pour half the soup mixture over the potatoes.
- Top with half the ground beef mixture
- Sprinkle half of the cheese on top
- Repeat with second layer.
- Cover with aluminum foil and place in pre-heated oven.
- Check for potato doneness in center of casserole after 1 hour. May be cooked an additional 30 minutes if potatoes are not soft after 1 hour.
- Remove from the oven and let casserole stand for about 10 minutes.
- Slice it lasagna style and serve.
- SLOW COOKER DIRECTIONS
- Brown ground beef & onions as in main recipe; drain.
- Layer as in main recipe, but in a large slow cooker.
- Omit covering with foil as it will be covered with the cooker's cover
