Can't choose between cauliflower cheese or macaroni cheese? This veg-charged hybrid is a real winner. It works particularly well with leafy greens and broccoli, but feel free to mix it up with whatever veg you have available.

1 kg cauliflower, broccoli or a mixture of both
800 g dried pasta (penne, farfalle, macaroni)
750 g leafy greens (kale, spinach or peas)
5 ml olive oil
2 litres white base sauce
2 teaspoons yellow or Dijon mustard, optional
230 g hard cheese
500 g stale white or brown bread, optional

Steps:

  • Recipe kindly shared by the Tesco Community Cookery School with Jamie Oliver. The recipe has been written to be flexible and scalable up to 50 portions. Note: all veg weights are for trimmed, prepped vegetables.
  • Preheat the oven 180°C/350°F/gas 4.
  • Break the cauliflower and broccoli into florets.
  • Cook the pasta in a large pan of boiling salted water according to the packet instructions, adding the cauliflower and broccoli for the last 4 minutes, then drain, reserving a mugful of cooking water.
  • Remove and discard any tough stalky bits from the leafy greens, then chop into bite-sized pieces.
  • Place a pan large enough to hold all the ingredients on a medium heat with the olive oil. Add the greens and cook for 3 minutes or until wilted.
  • Add the white sauce, mustard (if using) and pasta and veg. Grate over the cheese and give everything a good mix, adding a splash of cooking water to loosen. Season to taste.
  • Transfer to a large, deep baking tray (60x40cm).
  • Tear the bread (if using) into small chunks and whiz in a food processor to chunky crumbs. Scatter the breadcrumbs over the pasta and season with a little black pepper.
  • Bake for 10 minutes or until golden and bubbling.

1 (8 ounce) package fusilli pasta
1 tablespoon olive oil
2 teaspoons salt
⅓ cup butter
⅓ cup all-purpose flour
3 cups milk
¾ cup grated Parmesan cheese
1 teaspoon salt
½ teaspoon garlic salt
⅛ teaspoon ground nutmeg
⅛ teaspoon dried thyme
1 ½ cups shredded sharp Cheddar cheese
1 ½ pounds fresh broccoli, cooked
¾ cup shredded Swiss cheese

Steps:

  • In a large pot of boiling salted water cook rigatoni or fusilli pasta with one tablespoon of oil until al dente. Drain.
  • Meanwhile, in a large saucepan melt butter or margarine. Stir in flour and milk and whisk until mixture boils and thickens. Add grated Parmesan cheese, salt, garlic salt, nutmeg, thyme and grated Cheddar cheese and stir until blended.
  • Add cooked broccoli and drained pasta to cheese sauce. Mix well. Pour into a greased 9x13 inch baking dish. Sprinkle with grated Swiss cheese.
  • Bake uncovered at 350 degrees C(175 degrees C) for 20 minutes. Let stand 10 minutes before serving.

  • Pour heavy cream over broccoli then top with mozzarella, Gruyere, Parmesan and red pepper flakes. Bake until cheese is bubbly and broccoli is tender, about 10 minutes. (If your cheese won't brown, heat under the broiler, 1 minute).
  • Serve immediately.

7 slices bacon
1 onion, diced
3 cloves garlic, minced
1 cup heavy cream
3 tablespoons butter, divided
1 cup shredded Gouda cheese

½ cup panko bread crumbs
½ cup riced broccoli

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a casserole dish.
  • Bring a large pot of lightly salted water to a boil. Cook bow-tie pasta at a boil, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
  • Meanwhile, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels, reserving bacon grease in the skillet. Let bacon cool enough to handle, about 5 minutes; crumble and set aside. Drain cooked pasta and set aside.
  • Heat 2 tablespoons bacon grease in a medium saucepan over medium heat. Saute onion and garlic in the hot grease for 2 to 3 minutes. Add crumbled bacon, heavy cream, and 1 tablespoon butter; continue cooking until sauce becomes thick and creamy, 5 to 7 minutes. Mix in gouda cheese and stir until melted. Season with salt and pepper. Remove from heat and mix pasta into the cream sauce. Pour mixture into the prepared casserole dish.
  • Melt remaining 2 tablespoons butter in a medium, microwave-safe bowl in a microwave for 20 seconds. Mix in panko bread crumbs and riced broccoli; stir very well to coat in butter. Spread mixture on top of pasta.
  • Bake in the preheated oven for 15 minutes. Remove from the oven.
  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Continue to bake in the preheated oven until crumble is browned, about 5 minutes more.

20 jumbo pasta shells (about half a 12-ounce box)
1 24-ounce jar marinara sauce
2 15-ounce containers ricotta
2 cups baby spinach, chopped
0.5 cup grated Parmesan (2 ounces)
kosher salt and black pepper
0.5 cup grated mozzarella (4 ounces)
green salad (optional)

Steps:

  • Set an oven rack to the highest position and heat oven to 400° F. Cook the pasta according to the package directions. Drain and run under cold water to cool.
  • Spread the marinara sauce in the bottom of a large broilerproof baking dish.
  • In a bowl, combine the ricotta, spinach, Parmesan, ½ teaspoon salt, and ¼ teaspoon pepper. Spoon the mixture into the shells and place them on top of the sauce.
  • Sprinkle the shells with the mozzarella and bake until heated through, 10 to 12 minutes.
  • Increase heat to broil. Broil the shells until cheese begins to brown, 2 to 5 minutes. Serve with the salad, if desired.

1 tbsp wholegrain mustard
140g mature cheddar, grated

Steps:

  • Cook the pasta, adding the broccoli for the final 4-5 mins and cooking until tender. Drain well, then heat the grill.
  • Heat the butter in a saucepan and stir in the flour. Cook for 1 min, then gradually add the milk, stirring well between each addition. Bring to the boil, stirring, then simmer for 2 mins, before stirring in the mustard, half the cheese and seasoning.
  • Mix the pasta and broccoli into the sauce and spoon into an ovenproof dish. Scatter over the remaining cheese and place under a hot grill for 3-4 mins until golden and bubbling.

1/2 cup panko (Japanese bread crumbs)
2 tablespoons chopped fresh flat-leaf parsley (optional)
1 tablespoon chopped fresh thyme or 1/4 teaspoon dried thyme
1/2 teaspoon red pepper flakes
3/4 cup (2 1/2 ounces) freshly grated Parmigiano-Reggiano cheese
1/2 teaspoon grated lemon zest (preferably organic)
4 tablespoons (2 oz) unsalted butter
8 ounces fusilli or other short pasta
1 large (1 1/2 lbs) bunch broccoli* (trimmed, florets and stems chopped)
2 tablespoons all-purpose flour
2 1/2 cups whole milk
8 ounces (about 2 cups) mozzarella cheese (preferably fresh, torn into bite-size pieces)
3 tablespoons fresh lemon juice (optional)

Steps:

  • Preheat oven to 400°F (205°C).
  • Bring a large pot of well-salted water to boil over high heat.
  • Meanwhile, in a small bowl, combine the panko, parsley, if using, thyme, red pepper flakes, 1/4 cup (25 g) of the Parmesan, the lemon zest, and 1/4 teaspoon salt.
  • In a small skillet over medium-low heat, or in a microwave-safe dish in the microwave, melt 2 tablespoons of butter. Pour over the panko mixture, and toss to coat.
  • Cook pasta in the boiling water for 2 minutes less than the al dente time indicated on the package. Add the broccoli and cook until it is crisp-tender and the pasta is al dente, about 2 minutes more. Drain the pasta and broccoli in a colander.
  • Add remaining 2 tablespoons of butter to the pot and melt over medium heat. Whisk in the flour and cook, whisking, until the mixture begins to bubble, about 1 minute.
  • Gradually whisk in the milk, about 1/3 cup (80 ml) at a time, whisking until smooth between additions. Bring to a simmer, whisking, and cook, stirring occasionally, until the sauce is slightly thickened, about 5 minutes.
  • Remove from the heat, add the mozzarella, remaining 1/2 cup (50 g) Parmesan, and 1 teaspoon salt, and whisk together until the cheese is mostly melted (the mozzarella may not fully incorporate into the sauce; this is okay).
  • Add the pasta, broccoli, and lemon juice, if using, to the sauce and toss to combine. Dump into a large cast-iron skillet or 2-quart (2 L) baking dish and top with the bread crumb mixture.
  • Bake until the pasta is bubbling and the bread crumbs are golden brown, 15 to 20 minutes. Remove from the oven and let stand for 5 to 10 minutes to allow the sauce to thicken before serving.

Return them to the pot and stir in the flour.
  • Bake the Casserole • Add the garlic, peas, milk, and half of the cheese to the pot and stir. • Flake the tuna into the pot using a fork and season with salt and pepper to taste. • Pour the mixture into a medium baking dish. • In a medium bowl, combine the green onion, panko/breadcrumbs, and the remaining cheese. • Mix well and sprinkle on top of the casserole. • Bake in the oven until the top is golden-brown and the cheese is fully melted, 10-12 minutes.
  • Bring It All Together • Remove the casserole from the oven and let cool slightly before evenly dividing between two bowls or plates to serve!
