Steps:
- Preheat oven to broil with oven rack 6 to 8 inches from heat. Heat oil in a large ovenproof skillet over medium-high. Add onion and garlic; cook, stirring often, until softened, about 5 minutes. Add oregano, salt, black pepper, and crushed red pepper, if using. Cook, stirring, for 1 minute. Stir in beans.
- Add tomatoes, crushing them lightly with your hands, and their juices. Stir to combine. Bring to a simmer and cook, stirring occasionally, until liquid is slightly reduced, about 5 minutes.
- Top mixture with cheese and transfer skillet to oven. Broil until cheese is melted, bubbly, and browned in spots, 3 to 4 minutes. Serve with crusty bread or toast.

CHEESY BEANS ON TOAST
This is my favourite version of a British classic. You can't beat beans on toast for a quick, cheap meal! It is important to use Heinz baked beans or some other brand that uses tomato sauce as the base, not barbecue sauce as is the American standard. Most US grocery stores have Heinz or Batchelors in the International aisle.

Steps:
- Put the beans in a saucepan and warm over medium heat until beginning to bubble.
- Meanwhile toast the bread.
- Once toasted, butter the bread and place slices side by side on a plate.
- Pour the heated beans over the bread.
- Scatter the grated cheese over the top and serve!
- Some people add worcestershire sauce or hot sauce over the top at this stage. Personally I like it just as it is!

- Heat a dash of oil in a large wok, and add the onion and garlic. Cook over a medium heat for a few minutes, until soft and translucent. Add the arborio rice, and cook for another minute or two. Next, add the vegetable stock a little at a time, stirring regularly and allowing most of the excess liquid to be absorbed by the rice before adding more - it should take around 20 minutes in total. The rice should be almost cooked.
- When you've added all of the stock, add the drained beans, chopped tomatoes, and tomato puree. Mix well, and allow to simmer for another 10-15 minutes, until not too much excess liquid remains. Add about 3/4 of the grated cheese, and plenty of black pepper, and mix again to melt the cheese.
- Transfer the mixture to a large baking dish, and top with the remaining grated cheese. Bake at 190°C (Gas Mark 5 / 375°F) for around 30-40 minutes, until cooked to your liking. For a slightly firmer bean bake, allow to stand for 10 minutes before serving.

- Heat the oven to 400°F and line a large sheet pan with foil. Place the pan in the oven on the middle rack while the oven preheats.
- To blanch the green beans so they will keep their vibrant color, soften their tough exterior and help with moisture retention, fill a large saucepan with 3 quarts water and 1 teaspoon kosher salt. Bring the salted water to a rolling boil. While the water boils, prepare a medium bowl with ice water and set the bowl on the counter near the saucepan. Place the green beans in the salted water and cook 1½ minutes. Immediately, use a slotted spoon to transfer the beans to the ice water and leave them submerged 5 minutes. Drain the beans, and pour them onto a paper towel-lined platter. Use paper towels or a clean dishcloth to gently dry the beans.
- Remove the heated pan from the oven and turn the beans out onto the hot pan. Cook the bean 5 minutes.
