1 yellow onion, thinly sliced
2 cloves garlic, chopped
1 teaspoon dried oregano
1 teaspoon kosher salt
0.25 teaspoon freshly ground black pepper
0.25 teaspoon crushed red pepper (optional)
2 15.5-oz. cans cannellini beans, drained and rinsed
1 28-oz. can whole peeled tomatoes
8 ounces fresh mozzarella cheese, torn into bite-size pieces
Crusty bread or toast, for serving

Steps:

  • Preheat oven to broil with oven rack 6 to 8 inches from heat. Heat oil in a large ovenproof skillet over medium-high. Add onion and garlic; cook, stirring often, until softened, about 5 minutes. Add oregano, salt, black pepper, and crushed red pepper, if using. Cook, stirring, for 1 minute. Stir in beans.
  • Add tomatoes, crushing them lightly with your hands, and their juices. Stir to combine. Bring to a simmer and cook, stirring occasionally, until liquid is slightly reduced, about 5 minutes.
  • Top mixture with cheese and transfer skillet to oven. Broil until cheese is melted, bubbly, and browned in spots, 3 to 4 minutes. Serve with crusty bread or toast.

  • Melt butter in a saucepan over medium heat; cook and stir onion and garlic until onion becomes translucent, 2 to 3 minutes.

1 tsp cooking oil
1 small onion - peeled and finely chopped
1/2 tin baked beans (Branston)
30 g Cheddar cheese - finely grated
30 g mozzarella - shredded
1 sheet ready rolled puff pastry - cut into 4 squares
1 egg - beaten (optional)

Steps:

  • Heat the oven to 200C / 180 fan / GM6.
  • Pour the oil into a frying pan and fry the onions until they are golden and translucent.
  • Remove the pan from the heat, add the beans, and the cheeses and mix well.
  • Place a spoon of the baked bean mixture in the middle of each square of pastry, brush the edges with water then fold diagonally to make a triangular parcel. Use a fork to press the layers of pastry together to seal.
  • Transfer the pasties to a baking tray covered with a sheet of baking paper, poke a couple of holes in each one with a sharp knife to let the steam out.
  • Brush with the beaten egg if desired, then bake for 20 - 25 minutes until puffed and golden.
  • Allow to cool slightly before serving - the filling will be very hot.

Steps:

  • Preheat oven to 425°F (220°C). Lightly grease a baking sheet with nonstick cooking oil spray.
  • Arrange green beans on baking sheet in a single layer. Set aside.
  • In a small bowl mix together olive oil, parmesan, garlic, salt and pepper. Drizzle the oil mixture over the green beans and toss to evenly coat.
  • Bake for 20 minutes until vibrant and tender-crisp.

This is my favourite version of a British classic. You can't beat beans on toast for a quick, cheap meal! It is important to use Heinz baked beans or some other brand that uses tomato sauce as the base, not barbecue sauce as is the American standard. Most US grocery stores have Heinz or Batchelors in the International aisle.

1 (8 ounce) can heinz baked beans in tomato sauce (the small single-person size)
2 slices white bread
butter (to your taste)
grated cheddar cheese (1/4 to 1/2 cup)
Worcestershire sauce (optional- I prefer without)

Steps:

  • Put the beans in a saucepan and warm over medium heat until beginning to bubble.
  • Meanwhile toast the bread.
  • Once toasted, butter the bread and place slices side by side on a plate.
  • Pour the heated beans over the bread.
  • Scatter the grated cheese over the top and serve!
  • Some people add worcestershire sauce or hot sauce over the top at this stage. Personally I like it just as it is!

  • Preheat oven to 425°F.
  • Lightly grease a baking sheet with nonstick oil spray.
  • Prepare the green beans by washing, trimming the ends and removing any moisture from them using paper towels.
  • Arrange them on the prepared baking sheet in a single layer. Set aside.
  • In a small bowl stir together olive oil, parmesan, garlic, salt, pepper, paprika, onion powder and Italian seasoning.
  • Pour the mixture on top of the green beans and toss to evenly coat.
  • Bake for 20-25 minutes until tender-crisp.
  • Remove from the oven and top with the mozzarella cheese and cheddar cheese. Distribute the cheese evenly on top.
  • Return to the oven and broil until the cheese melts and becomes bubbly and golden, about 4-5 minutes.
