CHEESY BACON BBQ CHICKEN
This easy dinner recipe is a family favorite! With only one pan and minutes of prep, it layers the flavors of tender chicken, tangy BBQ sauce, crispy bacon, all over sweet baked onions.

Steps:
- Preheat the oven to 400˚F.
- Thinly slice the onion and place it in the bottom of a casserole dish.
- Combine the salt, pepper, garlic powder, and onion powder and season both sides of the chicken. Lay the chicken on top of the onions.
- Spread the BBQ sauce equally over each chicken breast. Sprinkle cheese over the top of the dish.
- Cover and bake covered for 25 minutes, then uncovered for an additional 15-20 minutes or until chicken is cooked through (165˚F internal temperature.)
- Top with crispy crumbled bacon and green onions. Enjoy!

CHEESY BAKED BBQ CHICKEN BREASTS
You can make these Cheesy Baked BBQ Chicken Breasts in 30 minutes! If you love BBQ chicken pizza, but don't want all the carbs, this is for you!

- Preheat the oven to 375 degrees F. Spray a 9x13 baking pan lightly with oil (or use an ungreased cast iron pan). Place the chicken in the pan.
- Combine the salt, pepper and garlic powder in a tiny bowl. Season the chicken by pinching the spice mixture between your fingers and sprinkling it evenly on each piece of chicken.
- Place 2 tablespoons of BBQ sauce on each breast and spread the sauce over the chicken with the back of your spoon.
- Shred the mozzarella if needed. Sprinkle about 2 1/2 tablespoons of shredded mozzarella over the entire surface of each breast, using all of the cheese.
- If starting with a whole red onion, peel it and cut it in half. Start making thin slices and place 5 or six slices of onion on each chicken breast. (You'll use about 1/3 of a whole onion.)
- Bake the chicken for 25 minutes, uncovered. Check to see if it's done by using an intstant meat thermometer to see if it has reached 165 degrees F. If you don't have a thermometer, cut open a thick piece to make sure it's no longer pink inside. If needed, bake for another five minutes before checking it again. Don't overbake, or the chicken will be dry.
- Let the chicken rest on the stove, covered loosely with foil, for a few minutes before cutting into it. This will keep it juicy. Store leftovers in the refrigerator for up to four days. This also freezes well.

CHEESY BAKED BBQ CHICKEN
The easiest, cheesiest baked BBQ chicken. This is basically tender cooked chicken breast doused in bbq sauce and topped with melty cheese, sliced red onions and pickled jalapeños. My baked bbq chicken takes roughly 30 minutes to throw together, making it ideal for weeknight dinners!

- PREP: Position a rack in the center of the oven and preheat the oven to 375ºF. Spray a 9x11 baking dish (or larger) with baking spray. In a bowl, add the bbq sauce and garlic powder and stir to combine, add the chicken breasts and stir so the chicken is evenly covered in the sauce. If you have time, you can allow it to marinate for an hour, if not, you can proceed immediately. Place the chicken breasts slide by side and pour any remaining bbq sauce over the chicken.
- BAKE: the chicken for 20 minutes, uncovered. Remove the chicken from the oven. Add the shredded cheese over the chicken breasts, sprinkle with red onions and jalapeños. Place the baking dish back in the oven and continue baking for another 5-10 minutes or until the cheese melts and the chicken cooks all the way through. Using an instant read thermometer, make sure the chicken temperature reads 165ºF. If it doesn't, continue cooking for an additional 1-5 minutes.
- SERVE: Top with the chopped cilantro and serve immediately.
OVEN BBQ CHICKEN

- Preheat the oven to 400 degrees F.
- Heat the oil in a medium saucepan over medium heat. Add the garlic, onion, paprika, chili powder and smoked paprika and cook, stirring occasionally, until the onions soften, about 8 minutes. Add the ketchup, vinegar, butter, Worcestershire and 1 cup water. Bring to a simmer and cook, stirring occasionally, until slightly thickened and the flavors have blended, about 10 minutes.
- Pat the chicken dry and season all over with salt and pepper. Arrange the chicken skin-side down on a rimmed baking sheet. Pour the barbecue sauce over the chicken and cover with foil. Bake about 25 minutes. Remove the foil and continue to bake until the chicken is beginning to brown in spots, about 15 minutes. Turn the chicken skin-side up and bake until golden and browned in spots, about 15 minutes more. Toss to coat with the sauce on the baking sheet and serve.

- Preheat the oven to 425 degrees F (220 degrees C). Line a baking pan with heavy-duty foil to make cleanup easier.

CRISPY BAKED BARBECUED CHICKEN
I love this seasoning mix and sometimes double it to get more crunch. It came from Better Homes & Gardens Cookbook with only two slight adaptations. I usually have to dry slices of bread in my oven & send them through the food processor to crumb, but I usually have all of these ingredients on hand.

Steps:
- Oven temp 375F degrees.
- Combine bread crumbs, brown sugar, chili powder, garlic powder, dry mustard, and celery seed.
- Season chicken with salt and pepper.
- Brush each chicken piece with melted butter.
- Roll in crumb mixture to coat.
- Arrange chicken, skin side up and so pieces don't touch, in a shallow baking pan.
- Sprinkle with any remaining crumb mixture.
- Bake, uncovered, in a 375 oven about 50 minutes or till tender.
- Do Not Turn!
- Makes 6 servings.
