CHEESY EGG CASSEROLE
This Cheesy Egg Casserole is an easy recipe to put together the night before and adding your favorite breakfast meat and vegetables can make it even better.

Steps:
- Butter bread slices and cut into cubes.
- In a 1 ½ quart buttered baking dish, alternate layers of bread cubes and grated cheese.
- Mix beaten eggs, milk, mustard, salt and pepper.
- Pour over bread and cheese mixture.
- Store in refrigerator overnight.
- Starting in a cold oven, bake at 350 degrees F for 1 hour. If not golden after an hour, bake a few minutes longer.

BAKED BAGEL EGG-IN-THE-HOLE

- For the baked bagel egg-in-the-hole: Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper. Brush the parchment with 2 tablespoons of the melted butter.
- Using a 2-inch round cutter, make the center of each bagel half larger. Save the cutout pieces. Brush the cut side of the bagels and bagel cutouts with 2 tablespoons of the melted butter.
- Place the bagels cut-side down on the prepared baking sheet. Line up the cutout pieces down the center of the baking sheet cut-side down as well. Using the palm of your hand, press the bagels into the baking sheet. This will help make sure they are touching the baking sheet so the eggs won't seep out before they're cooked.
- Brush the tops of the bagels and cutouts with the remaining 2 tablespoons butter. Crack an egg into each bagel hole. Season the eggs with salt and pepper. Bake for 11 to 14 minutes, depending on how you like your eggs; 11 minutes will give you a runny yolk, while 14 minutes will give you a fully cooked yolk.
- For the hollandaise: In a small saucepan, melt the butter until sizzling.
- Put the egg yolks in a blender and turn on a low speed to allow them to combine. While the machine is running, slowly begin pouring the hot butter into the blender in a thin, steady stream. Once all the butter is in, immediately begin adding the lemon juice.
- Check the blender to make sure the sauce is still liquidy and moving easily through the blades. If not, add a little more juice and give it a stir and then blend again. Add the cayenne pepper and a pinch of salt. Taste and adjust the seasoning if necessary. Transfer to a serving pitcher and cover with foil until serving.
- For the garnish: Transfer the bagels and cutouts to a serving platter. Arrange the salmon around the bagels and garnish with the red onions, chives and capers. Serve with the warm hollandaise on the side.
EGG-IN-A-HOLE WITH BACON

- Cook the bacon in a large nonstick skillet over medium-high heat, flipping, until browned and crisp, 6 to 8 minutes. Remove to a paper towel-lined plate (reserve the skillet).
- Meanwhile, use a 2 1/2- to 3-inch star cookie cutter to cut out the center of each slice of bread. Reserve the stars.
- Wipe out the skillet; add 1 tablespoon butter and melt over medium heat. Add 2 bread slices and 2 stars to the skillet and cook until golden brown on the bottom, 1 to 2 minutes. Flip the bread and stars and crack 1 egg directly into each of the cutout centers. Season the eggs with salt, then sprinkle each star with 1 tablespoon cheese. Cover the skillet and cook until the egg whites are set but the yolks are still runny, 2 to 3 minutes. Remove to plates. Wipe out the skillet; add the remaining 1 tablespoon butter and repeat to make 2 more eggs-in-a-hole.
- Serve the eggs-in-a-hole, cheesy stars and bacon with the strawberries.
KIDS CAN MAKE: CHEESY EGGS-IN-THE-HOLE WITH BACON
Kids can use their favorite cookie cutter shapes to make this hearty breakfast with a grilled cheese-like twist. For little kids: Let them cut out the bread with cookie cutters. For big kids: Let them crack the eggs into the toast cut-outs, sprinkle with Parmesan and (if they're up to it) flip the slices.

- Heat a large nonstick skillet over medium-high heat. Fry the bacon until crisp, about 5 minutes. Remove the pan from the heat and transfer the bacon to paper towels to drain; when cool enough to handle, crumble.
- Add the butter to the hot pan to melt with the rendered bacon fat; set aside.
- Cut a piece from the center of each slice of bread using a 2 1/2-inch round or other decorative 2 1/2-inch cookie cutter (star, flower, heart). Brush the slices and cutouts with the butter-bacon fat mixture and transfer them to a plate.
- Toast 2 slices of bread and 2 cutouts in the skillet over medium heat until browned on one side, about 1 minute. - Preheat oven to 375ºF/190ºC.
- The Toad:.
- Wrap the sausages in the bacon and place in a large roasting tin.
- Scatter the onion over it.
- Drizzle the oil over it and bake for 20 minutes.
- The Hole:.
- Sieve the flour and the salt into a bowl. Make a well in the center add the egg and gradually beat in half of the milk for two minutes.
- Stir in the rest of the milk and mustard.
- Remove the roasting tin from the oven when the sausages are just turning brown and pour the batter over them.
- Cook for a further 40 minutes or until done. The batter should have risen and it will be a lovely golden brown.
- Note: This can burn easily so keep an eye on it. :D You.
- The Gravy:.
- Heat the oil in a saucepan and sauté the onion for five minutes.
- Stir in the flour and cook for a minute then add the mustard, Worcestershire sauce and chicken stock.
- Bring to the boil, stirring all the time.
- Simmer for 15 minutes, checking the seasoning.
- Serve the Toad in the Hole with the gravy poured over it with mashed potatoes and veggies on the side.

- In a skillet over medium heat melt the butter. When the skillet is evenly coated with butter place the slice of bread in the skillet. Crack egg into the center of the hole in the pieces of bread. You can also place the center of the bread in the pan to toast too.
- Cook the egg sets a bit on the bottom of the pan; about 30-45 seconds. Season egg with salt and pepper. Flip bread over after about a minute and season the other side.
- Let egg cook until desired doneness. Your goal is golden brown toast, white, not browned/burned egg whites and a soft unbroken yolk.
