Steps:

  • Heat oven to 400ºF.
  • Mix butter, parsley and dressing until blended; brush onto cut sides of baguette.
  • Fill baguette halves with cheese; wrap in foil. Place on baking sheet.
  • Bake 20 min. or until cheese is melted.

3 1/4 cups all-purpose flour
1 package Red Star Platinum Superior Baking Yeast ((2 1/4 teaspoons))
1 1/2 teaspoons salt
1 teaspoon granulated sugar
1/4 teaspoon black pepper
1 1/4 cups milk
2 tablespoons butter
1 1/2 cups shredded Asiago cheese ((divided))
1 large egg (beaten)

Steps:

  • In the bowl of a stand mixer, combine 1 1/2 cups flour, yeast, sugar, salt and pepper. Put the milk in a microwave safe bowl. Add the butter. Heat the milk to 120-130 degrees so that the butter starts melting. Make sure the temperature is just right so that it is warm enough to activate the yeast, but not kill it. Stir the milk mixture into the flour mixture and mix on low speed using the paddle attachment until smooth. Add in 1 1/4 cups shredded cheese and mix just until combined.
  • Gradually add in 1 3/4 cups flour to make a soft dough. Knead in the stand mixer with the dough hook for 5 minutes.
  • Spray a bowl with cooking spray. Add the dough to the bowl, then turn the dough over so the cooking spray coats both sides of the dough. Cover the bowl and allow the dough to rise in a warm place until it is double (anywhere from 1-2 hours).
  • After the dough is doubled, punch it down and form it into two loaves. Place the loaves on a baking sheet that has been sprayed with cooking spray. Cover the loaves and allow them to rise again until doubled, which will take 30-45 minutes.
  • Preheat the oven to 375 degrees.
  • Make 3-4 cuts in the top of the loaves with a serrated knife. Brush the tops of the loaves with the beaten egg and then sprinkle the remaining cheese on top. Bake for 30-35 minutes until lightly browned.

6 1/2 cups unbleached bread flour ((can use all purpose, flour *see Note 1 below))
2 tsp fine salt (or a bit more, if using coarse kosher salt)
5 Tbsp white sugar (or 5 Tbsp brown sugar or 3 1/2 Tbsp. honey or agave nectar)
1 cup lukewarm water (about 95F (for even softer bread, you can use 1 cup water leftover from boiling potatoes, cooled))
1 cup plus 2 Tbsp milk or buttermilk (lukewarm, about 95F)
1 1/2 Tbsp regular instant yeast
1/4 cup unsalted butter (melted, or the same amount of vegetable/canola oil)
2 cups shredded sharp cheddar cheese
1/4 cup minced fresh herbs (parsley and chives are good choices or a heaping tablespoon of dried herbs)
1 1/2 cups Parmesan cheese (freshly grated)
1/2 tsp garlic powder (or about 2 tsp. minced fresh garlic)
1/4 cup minced fresh herbs (parsley works well, or a heaping tablespoon of dried herbs)
1/4 cup butter (at room temperature)

Steps:

  • In a mixing bowl or the bowl of a stand mixer, combine the flour, salt and sugar* together. (Tip: If measuring your flour in cups, without a scale, hold back 1 cup to add as needed later). *If you're using honey or agave, add with the liquid ingredients instead.
  • In a large measuring cup or bowl, combine the water and buttermilk and whisk in the yeast until dissolved. Add this mixture, along with the melted butter, to the dry ingredients. Mix by hand or with a dough hook, until the mixture is combined, about 2 minutes. Let the dough rest for 5 minutes.
  • Continue mixing the dough, adding more flour in very small increments, as needed, until the dough becomes soft, smooth and tacky, but not sticky.
  • Transfer the dough to a lightly floured surface and knead for a couple of minutes, adding more flour only if the dough is sticking to your hands or the work surface, then form dough into a ball. Place the dough in a lightly oiled bowl, cover with plastic wrap and either refrigerate for up to 4 days, or allow to sit at room temperature until doubled in size (about 60-90 minutes). (*Tip: I like to use an 8-cup glass measuring cup, so it's easy to see when it's doubled by the markings).
  • Note: If you have refrigerated your dough, remove from the refrigerator 2 hours before you plan to bake, to allow it to come to room temperature.
  • Grease two 8-inch by 4-inch loaf pans and set aside.
  • Divide the dough into 2 equal pieces. Dust each with a bit of flour and then, using a rolling pin, roll into a rectangle approximately 10 inches wide and 16 inches long.

  • For the Cheddar and Herb Bread: spread the shredded cheddar and herbs evenly over the surface of the dough. Starting with the shortest side, roll the dough up jelly-roll style and pinch the seam together.
  • For the Parmesan, Garlic and Herb: spread the softened butter over the surface of the dough. Sprinkle evenly with Parmesan, garlic and herbs. Press lightly with the palm of your hand to press the toppings into the butter. Starting with the shortest side, roll the dough up jelly-roll style and pinch the seam together.
  • Shaping: Using a sharp knife, cut the roll of dough down the centre, lengthwise. Rotate each piece so that the cut sides are facing upward and place them side-by-side. Pinch together the farthest end. Keeping the cuts sides facing upwards as much as possible, place the right-side piece over the left-side piece. Straighen it up all up and then repeat, pinching together the end closest to you. If any cheese escapes, just place it back on top. Using a bench scraper or spatula, carefully lift the dough into the greased loaf pan. Repeat with the other dough log, then cover both with a greased piece of plastic wrap and allow to rise until the dough rises to about 1-inch above the side of the pans in the middle.
  • Preheat oven to 350° F. (not fan assisted). Bake for 45-50 minutes total, but after 25 minutes of baking, rotate pans front-to-back in the oven and loosely cover with a piece of aluminum foil if necessary (if bread is already well-browned), to prevent the top from over-browning. Bread should reach about 185° internal temperature in the centre.
  • Remove the bread from the oven and allow to cool in the pans for a couple of minutes. Run a sharp knife around the edge of the bread and carefully remove the loaves to a cooling rack. Allow the loaves to cool for 1 hour before slicing. *Slicing hot or very warm bread will make for a gummy crumb, so resist the urge and let it cool :)

2 tbsp olive oil
1 tsp salt
1 tbsp white sugar
1 tsp garlic (minced)
3 cups bread flour
1 ¼ tsp yeast (active, instant or bread machine)
1 cup shredded cheese (cheddar, asiago, parmesan, mozzarella or your favorite cheese)

Steps:

  • Add all ingredients in the order listed to the bread maker pan, reserving 1/4 cup of cheese for the top. *Check your brand's manual for the correct order to add ingredients if you are not using a Cuisinart bread machine. If it differs, add them in the order that your manual states.
  • Select the basic/white bread setting. Choose the 1.5 lb loaf size and your preferred crust color. If baking in the oven, choose the dough setting. Press start and allow machine to run through the cycle, then follow steps below for your preferred method for baking.
  • Baking in Machine: At the end of the last kneading cycle, remove the kneading paddle. This is optional and can also be done once the bread cools. When the bread completes it's last rise, gently brush the sides with an egg wash and top with the remaining cheese. Once the bake cycle is complete, remove the pan from the bread maker immediately. Let cool for at least 10 minutes, then carefully remove the bread from the pan. Cool completely before slicing.

One 8-inch round loaf country or sourdough bread
1 stick (8 tablespoons) unsalted butter
3 tablespoons extra-virgin olive oil
4 cloves garlic, finely grated
Kosher salt
3 tablespoons finely chopped fresh parsley
1/2 cup grated Asiago cheese

Steps:

  • Preheat the oven to 400 degrees F.
  • Use a bread knife to cut a cross-hatch pattern into the top of the bread, stopping short of cutting through to the bottom of the loaf (so the loaf holds together).
  • Melt the butter in a small skillet over low heat. Add the olive oil and garlic and cook, stirring often, until very pale golden, about 4 minutes. Stir in 3/4 teaspoon salt and the parsley. Remove from the heat.
  • Gently separate the cubes of bread from the top of the loaf. Spoon some of the garlic butter in the cuts and spread it over the cut surfaces; use all but 2 tablespoons of the garlic butter for this. Slather the remaining garlic butter on top of the loaf. Distribute the Asiago between the cuts and on top. Wrap the loaf in foil and place it on a baking sheet.
  • Bake the bread until heated through, about 10 minutes. Unwrap the foil and continue baking until slightly crisp on the outside, 5 to 7 minutes more. Serve immediately.

  • Start with good yeast. Always test your yeast by adding it to a bowl of warm water. In a bowl, stir in warm water, yeast, and sugar. The water should be warm to the touch but not scalding hot, as that will kill the yeast. I aim for about 110 degrees but usually just test with my finger. Watch for the yeast start to foam, which means it is working. If it doesn't proof, start over and buy some fresh yeast. Let it proof for 5-10 minutes.
  • Add yeast mixture to flour, salt, and 1 Tablespoon of olive oil and knead in a mixer, until the dough has pulled together.
  • Cover and let the dough rise. This is an integral step as this what gives it a light and airy texture. Let it rise for 2-3 hours, or until at least double in size. If it is extra warm in the kitchen, it may only take 2 hours. If it is a cold winter's day, it may take 3 hours. I like to let it rise for about 3 hours so it is airy.
  • After the dough completed its first rise, put in on a large rimmed baking sheet or stone. Drizzle olive oil all over it, turning to coat. Flatten and press the dough out into a rectangle. Cover with plastic wrap and let it rise for 1 to 1 1/2 hours in warm place.
