I won't forget the cheese straws that my mother made for my father. The only difference was that she did not add cayenne pepper. These make wonderful hors d'oevres.

2 cups all-purpose flour
2 cups shredded sharp Cheddar cheese
¾ cup margarine
1 teaspoon baking powder
¼ teaspoon cayenne pepper
½ teaspoon salt
½ cup water

Steps:

  • Preheat oven to 400 degrees F (205 degrees C). Grease or line a baking sheet with parchment paper.
  • Combine the flour, baking powder, cayenne pepper, salt, grated cheese and butter or margarine in a bowl and mix until well combined. Add water a little bit at a time to make a very stiff dough.
  • On a lightly floured surface, roll pieces of the dough into just slightly thicker than pencil shaped sticks. Cut sticks into 4 to 5 inch lengths. Arrange the pieces on the baking sheet.
  • Bake at 400 degrees F (205 degrees C) for 5 minutes or until browned.

¾ teaspoon ground black pepper
½ teaspoon garlic powder
1 (17.5 ounce) package frozen puff pastry, thawed
1 egg white

Steps:

  • Combine parmesan cheese, pepper and garlic powder. Unfold pastry sheets onto cutting board. Brush lightly with egg white; sprinkle each sheet with 1/4 of the cheese mixture. Lightly press into pastry, turn over; repeat. Cut each sheet into 12 (1-inch) strips; twist.
  • Place on ungreased cookie sheet and bake in 350 degrees F (175 degrees C) oven for 15 minutes or until golden brown.

All Purpose Flour / Maida - 1 cup (120 grams)
Salt to taste
Butter - 90 grams
Egg Yolk - from one egg
Cheddar Cheese - 1/2 cup (60 grams grated)

Steps:

  • Preheat oven to 190 degree C. Line a baking tray with parchment and set aside.
  • Take flour, salt in a bowl and mix well.
  • Add in butter and rub it into the flour.
  • Add in cheddar cheese and mix well.
  • Add a egg yolk and mix well. Shape it into a dough.
  • If the dough is too crumbly add some cold water.
  • Now wrap the dough in plastic wrap and chill for 30 mins in fridge.
  • Now roll the dough into a rectangle sheet.
  • Cut into sticks.
  • Roll each one gently into a smooth log like.
  • Place on a parchment lined tray.
  • Brush the top with some water .
  • Sprinkle more cheese.
  • Bake for 15 mins.
  • Remove and cool completely before serving.
  • Store in a air tight container.

four handfuls grated parmesan (or vegetarian alternative)
handful flour, to roll pastry on

  • heat oven to 220c/fan 200c/gas 7. Unroll a puff pastry, scatter over a couple of handfuls of grated Parmesan, then fold in half. On a lightly floured surface, roll out to the thickness of a £1 coin. Cut into 1cm strips, then twist the strips 3-4 times. 1 large egg
1/4 cup whole milk
Store-bought puff pastry, rolled into 1 (12 by 20-inch) rectangle, about 1/8-inch thick
1/3 cup grated Parmesan cheese
Pinch salt
Pinch finely ground pepper

Steps:

  • Prepare the egg wash: Combine the yolks, whole egg, and milk in a small mixing bowl and whip with a hand whisk until well combined. Preheat the oven to 400 degrees. Flour the dough and table as needed to keep the dough from sticking to the table or the rolling pin. Place the dough on your work surface with a long side facing you. Use a pastry brush to coat the surface of the rectangle with some egg wash. Liberally sprinkle the Parmesan cheese over the rectangle, followed by the salt and pepper. Use a sharp paring knife to cut the rectangle into 1-inch-wide strips from top to bottom. Flip each strip so that the cheese is on the bottom. Twist each strip by rolling each end in opposite directions. Always remember to twist so that the topping faces out --that way you can see how they are flavored. Place the strips on a parchment paper-covered baking sheet and bake until well risen and golden brown, about 20 minutes. Cool completely on a wire rack before serving. These puff pastry items are best eaten the day they are made.

2 tsp garlic, crushed
1 tsp oregano
1 large egg, beaten

  • Preheat an oven to 220°C (430°F)
  • In a bowl, mix the shredded cheese, grated parmesan, garlic, salt, and oregano.
  • Using a pastry brush, brush the beaten egg across the puff pastry.
  • Place the cheese mix over half of the puff pastry sheet.
  • Fold the pastry in half and brush with some beaten egg.
  • Place the rest of the cheese mix over the half.
  • Cut the pastry into 1 cm (1/2 inch) wide strips.
  • Twist the strips slightly and place onto an oven tray lined with baking paper.
  • Repeat until you have done all the strips.
  • Using a pastry brush, lightly brush the twists with the egg.
  • Place into the preheated oven and cook for about 15 minutes or until golden brown.
  • Once golden browned, remove and allow to cool.
