I was born and raised in Philadelphia and this was my favorite lunch at the luncheonettes (sandwich shops). Places throughout the rest of the Country that claim to make Philly Cheese Steaks just do not get them to taste the same, and one of the reasons is that they do not use extra-virgin olive oil. Anyone who says that Pat's and Gino's in South Philly uses Cheez Wiz, is talking about the way they make it now. The old authentic way uses Provolone Cheese. Also, using deli roast beef is the same as using top round sliced wafer thin or frozen Rib-Eye roast shaved on an electric slicer. I was born in 1942 and this is the way they were made way back then. We are talking about authentic, not the way they are made now. If you make any changes with the ingredients or the directions, it will not be the same. Make it EXACTLY as written here.

2 large hoagie rolls or 2 large sub rolls
1/2 lb deli roast beef (very rare, sliced wafer thin, or you can use a frozen Rib-Eye roast shaved on an electric slicer, wh)
1 white onion (thinly sliced)
1 green bell pepper (thinly sliced) (optional)
2 teaspoons garlic (minced)
1/2 lb provolone cheese (thinly sliced)
extra virgin olive oil (for grilling)
salt and pepper
marinara sauce (optional topping) or ketchup (optional topping)

Steps:

  • Heat a griddle or a large saute pan over medium-high heat.
  • When hot, cover bottom with olive oil.
  • Add the onions and bell pepper and cook, stirring, until carmelized, which will take about 6 to 8 minutes.
  • Add the garlic, salt and pepper, and cook for about 30 seconds.
  • Then, push the mixture off to one side of the griddle.
  • Add the meat to the hot part of the griddle.
  • Cook, continuously flipping the meat over and slightly chopping the meat into slightly smaller pieces with 2 spatulas, until the meat is not pink, which should take about 2 minutes.
  • Mix the meat and the carmelized onions and bell pepper together.
  • Divide into 2 portions, and top both portions with the cheese to melt.
  • If using Italian or French bread, cut the bread in half, crosswise, and slice lengthwise to open for the 2 sandwiches.
  • Hollow out some of the soft white bread part from inside and place face down on top of the meat and cheese.
  • When the cheese is melted, and with 1 or 2 spatulas, flip the sandwiches over and add topping, such as marinara sauce or ketchup, if desired, and serve immediately.

1 cup shredded American cheese
1 tablespoon cornstarch
1 teaspoon garlic granules
1 teaspoon ground dry mustard
12 ounces evaporated milk
sea salt to taste
3 tablespoons clarified butter (ghee)
2 peeled and sliced yellow onions
2 pounds thinly sliced ribeye steak
4 8 " buns
sea salt and pepper to taste

Steps:

  • For the Sauce: Add all of the ingredients to a medium-size pot and cook over low heat stirring often until hot and thick. Keep warm.
  • Add 1 ½ tablespoons of clarified butter to a large frying pan or flattop over medium-high heat and cook the onions until lightly browned and soft, about 10 minutes. Set to the side.
  • Add the remaining 1 ½ tablespoons of clarified butter to the pan and add in the sliced steak.
  • Cook for 2-4 minutes or until lightly browned and cooked throughout.
  • Add ½ of the cooked onions to the top of the beef, season with salt and pepper and mix together until combined.
  • To Serve: Add the sliced buns cut side down onto the other side of the pan or flat top to heat up and lightly toast.
  • Evenly divide the sliced cooked steak between the lightly toasted buns and top off with the remaining caramelized onions and cheese sauce.
  • Serve hot.

2 green bell peppers
1 large yellow onion
1 lb mushrooms
1 lb provolone cheese slices
2 tbsp oil
1 tbsp salt
1 tsp ground pepper

Steps:

  • Slice ribeye into thin strips. Cut bell peppers into long strips, onion into half rings and mushrooms into bite-sized pieces.
  • Preheat an oiled skillet over high-heat. Add onions, bell peppers and mushrooms to the skillet. Sautee until all veggies are golden brown. Remove from the skillet and set aside.
  • Add sliced beef to the same skillet and season with salt and pepper. Sautee until the beef is fully cooked. Add vegetables back to the skillet and stir to combine. Top with cheese slices and let mixture sit for a minute to melt.

2 eight inch hoagie rolls (sliced)
2 tablespoons unsalted butter (divided)
1/2 green bell pepper (sliced)
1/2 onion (sliced)
4 button mushrooms (sliced)
16 ounces boneless ribeye steak (thin sliced)

Steps:

  • Optionally, butter insides of hoagie rolls with 1 tablespoon of butter and toast. Set aside.
  • In a saute pan over medium heat, add 1 tablespoon of butter. Once melted and bubbling, add bell pepper, onions, and mushrooms. Cook, stirring occasionally, until veggies are lightly browned and onions turn translucent. Remove from pan and set aside.
  • Season sliced ribeye with salt and pepper. Add 1 tablespoon of butter to pan. Once melted and bubbling, add ribeye to skillet and cook for 2-4 minutes, stirring occasionally. Add worchestershire sauce to skillet and stir to combine.
  • Reduce heat to low. Return veggies to pan and stir to combine. Split your steak mixture in half on either side of the pan. Lay two pieces of cheese onto each half and allow to melt, about 1 minute.

300g steaks
2tbsp sunflower oil
1 onion , sliced
1 red pepper , sliced
1 green pepper , sliced
2tbsp white wine vinegar
8 cheese slices
50g grated mozzarella
4 soft white sub rolls

  • Trim away and discard the long piece of fat running down the side of the steaks. Cut each steak in half and put on a baking tray, then transfer to the freezer and freeze for 40 mins.
  • Heat the oil in a heavy-based pan or casserole dish set over a medium heat. Add the onion and peppers along with a good pinch of salt and fry for 20 mins, or until the onions are golden and sticky. Add the vinegar and cook for a further 5 mins. Season to taste.
  • Using a sharp knife, slice the steak as thinly as possible and pile the slices into four portions. Heat a skillet over a high heat until almost smoking. Put one portion of the steak slices in the pan in a pile that's roughly the length of your rolls. Fry for 3 mins over a high heat until some of the steak is cooked through, with pink bits remaining. Pile a quarter of the onion mixture on top, as well as a quarter each of the cheese slices and the mozzarella. Continue to cook undisturbed over a medium heat for 5-10 mins until the meat is brown and crisp around the edge and the cheeses have melted. Split one of the rolls open and carefully scoop the meat and cheese mixture into it. Repeat with the remaining meat, onions, cheese and rolls.

An easy Italian spice blend and giardiniera toppings add a flavorful twist to Rach's version of a Philly Cheesesteak.

3 large roasting/field red peppers
About 5 tablespoons extra-virgin olive oil (EVOO)
Salt and pepper
Fresh thyme
chopped (about 2 tablespoons)
2 large onions
chopped or quartered and thinly sliced
4 cloves garlic
chopped or sliced
6 pieces boneless
skinless chicken breast
1 teaspoon each dried oregano
dried thyme
granulated garlic
granulated onion and red pepper flakes
Deli-sliced provolone and mozzarella
halved (about ½ pound each)
6 Philly or soft Italian sub rolls
split
Drained and chopped giardiniera (Italian hot pickled vegetable salad) or sliced hot pickled cherry peppers

Steps:

  • Roast peppers over an open flame or under a preheated broiler to blacken skins
  • Place in a bowl and cover to cool, then peel and seed
  • Thinly slice peppers lengthwise
  • Dress with some EVOO, salt, pepper and fresh thyme
  • To a skillet over medium-low to medium heat, add olive oil, 2 turns of the pan
  • Add onions, season with salt and pepper, and cook to soften, about 15 minutes
  • Add garlic, cook 10 minutes more, then add ½ cup water and cook until absorbed
  • Place chicken in freezer for 10 minutes
  • Using a chef's knife, thinly slice the chicken on an angle going against the grain
  • Pat the meat dry
  • Season with salt and pepper
  • Heat a large cast-iron griddle or skillet over high heat
  • Combine the dried oregano and thyme, the granulated garlic and onion, and chili flakes
  • Add a fat drizzle of olive oil to the hot griddle or skillet
  • Add the chicken in batches in a single layer, season with the spice blend, and cook, tossing, until crisp at the edges and cooked through
  • Line the rolls with cheese and fill with the chicken
  • Top with onions, peppers and giardiniera or hot peppers, and serve

  • Place the sliced beef in a large bowl.

  • Heat half the oil in a skillet over medium-high heat.

  • Add steak to veggies and keep warm.
  • Preheat oven to broil.
  • Butter hoagie buns and lay a slice of cheese, (torn in half) over the bottom of each bun.
  • Divide steak and veggies over buns, add another slice of divided cheese.
  • Lay on foil lined cookie sheet (keep top bun to the side so that it broils also) Broil just until cheese melts, remove from broiler, cover with top half of bun.

olive oil
1 large onion, thinly sliced
2 green bell peppers, thinly sliced
1 poblano pepper, thinly sliced
3/4 cup freshly grated sharp cheddar cheese ((or more to taste))
1/3 cup roughly chopped jarred cherry (pimento) peppers ((optional))
8 Sargento Provolone Cheese slices
4 soft hoagie rolls
2 tablespoons Dijon mustard
2 tablespoons balsamic vinegar
2 tablespoons Worcestershire sauce
1 teaspoon salt
1/2 tsp EACH garlic pwdr, onion pwdr, dried thyme, dried parsley
1/4 tsp EACH pepper, red pepper flakes
1 tablespoon Reserved Spiced Mayonnaise (in directions)
1/2 cup mayonnaise
Hot sauce to taste (optional)

Steps:

  • Whisk all the Marinade ingredients together in a Ziploc bag. Remove 1 tablespoon Marinade and add to a small bowl with 1/2 cup mayonnaise to make "Spiced Mayonnaise". Add hot sauce to mayonnaise if desired and store in the refrigerator.
  • Add steak to Ziploc bag with remaining Marinade. Marinate 6 hours up to overnight. Remove steak from fridge 20-30 minutes before cooking.
  • Preheat oven to 400 degrees F.
  • Prepare hoagie rolls by slicing each in half horizontally. Hollow out bottom and top halves of bread, leaving about 1/2-inch-thick shell.
  • Heat 1 teaspoon olive oil over in a large skillet over medium-high heat until smoking. Pat excess marinade off steak and add to skillet. Cook undisturbed for 1 minute then continue to cook while stirring just until no longer pink, 1-2 minutes, chopping up meat with spatula as you cook. Remove to a paper towel lined plate. (You can also chop on a cutting board.)
  • Wipe out skillet and heat one tablespoon olive oil over medium high heat. Add peppers and onion and cook 6-8 minutes or until softened. Add steak back to pan along with 3/4 cup cheddar, 1 tablespoon Spiced Mayonnaise, pimientos (optional). Stir just until steak is warmed through and cheese begins to melt, about 1 minute. Season with salt and pepper to taste.
  • Spread each top and bottom half of hoagie roll with Spiced mayonnaise. Evenly divide beef mixture between bottom buns then top each with 2 slices provolone cheese. Bake hoagies open faced for 5 minutes or until cheese is completely melted. Replace top buns and eat immediately.

1/2 tsp Black pepper (or to taste)
1 sweet onion ((large), diced)
8 slices provolone cheese (mild (not aged provolone))
4 Hoagie Rolls (sliced 3/4 through)
2 Tbsp unsalted butter (softened)
1 garlic clove (pressed)
2-4 Tbsp mayonnaise (or to taste)

Steps:

  • Slice hoagie rolls 3/4 of the way through with a serrated knife. Dice onions and thinly slice beef.*
  • In a small bowl, stir together 2 Tbsp softened butter with 1 pressed garlic clove. Spread garlic butter onto the cut sides of 4 hoagie roll. Toast the buns on a large skillet, flat cooktop or griddle on medium heat until golden brown then set aside.
  • Add 1 Tbsp oil to your pan/cooktop and sautee diced onions until caramelized then transfer to a bowl.
  • Increase to high heat and add 1 Tbsp oil. Spread the super thinly sliced steak in an even layer. Let brown for a couple of minutes undisturbed then flip and season with 1/2 tsp salt and 1/2 tsp black pepper. Sautee until steak is fully cooked through then stir in the caramelized onions.
  • Divide into 4 even portions and top each with 2 slices of cheese and turn off the heat so the cheese will melt without overcooking the meat.
  • Spread a thin layer of mayo on the toasted side of each roll. Working with one portion at a time, place a toasted bun over each portion and use a spatula to scrape the cheesy beef into your bun as you flip it over. Serve warm.

1 tablespoon vegetable oil

pepper (, to taste)
4 hoagie rolls ((Amoroso Rolls for authenticity))
1 medium yellow onion (, thinly sliced (optional))
4 slices Provolone cheese ((choose 1))
4 slices American cheese ((choose 1))
1/2 cup Cheese Whiz ((choose 1))

Steps:

  • Slice steak as thin as possible. Season both sides with salt and pepper.
  • Heat oil in a large skillet over medium high heat. Add in sliced onion and saute until soft, 5-7 minutes. Remove and set aside. If not using onion, proceed immediately to the next step.
  • Add slices of steak into the pan in one layer to sear, 1-2 minutes, then flip and sear the other side.
  • Use a spatula to chop up steak. Add in cooked onions (if using) and any other desired additions.
  • Reduce heat to low and top chopped steak with choice of cheese. Let melt then transfer to hoagie roll. Serve immediately.

4 T avocado oil ((or other mild high heat oil))
2 extra large yellow onions (diced)
2 pounds Sirloin (thinly sliced and cut into 2" pieces)
2 teaspoons salt
2 teaspoons black pepper
4 hoagie rolls
8 ounces provolone cheese slices

Steps:

  • Peel and dice onions.
  • Cut thinly sliced meat into 2" pieces using a kitchen scissors.
  • Gather rolls and slice 3/4 of the way through from the curved side. Gather cheese slices, salt, pepper and avocado oil.
  • Place 2 to 3 slices of provolone on each hoagie roll (about 2 ounces total of cheese) and set aside.NOTE: If you want the cheese super melty, place cheese slices directly on the mounds of cooked meat and onion before placing roll on top.
  • Heat flat-top griddle or frying pan over medium heat. Once hot, add 2 T avocado oil and diced onions (You may need to cook the onions / meat in 2 batches depending on the size of your griddle / frying pan.) Cook onions for 2 to 3 minutes until they are just beginning to brown.
  • Add sliced meat. Cook 4 to 5 minutes, using a spatula to continually move around and break up into smaller pieces. Cook until all of the pink is gone. Sprinkle meat and onion mixture generously with salt and pepper.
  • Separate meat into piles for each cheesesteak. Flip a hoagie roll with cheese on top of each pile.
  • Allow to cook for 1 to 2 minutes, until cheese is melted and roll has begun to soften.
  • Use a long spatula to scoop the cheesesteak off the griddle / frying pan. Flip over, add your favorite toppings and serve hot! Enjoy :)

This easy Philly Cheesesteak Recipe is the ultimate game day fare! Tender bites of sirloin, sauteéd peppers and onions, and melted provolone cheese are all cooked up in one skillet and loaded on toasted hoagie rolls.

4 tablespoons vegetable oil (divided (or as needed))
1 sweet yellow onion (halved and thinly sliced (2-inch slices))
1 red bell pepper (thinly sliced)
1 green bell pepper (thinly sliced)
2½ to 3 pounds petite sirloin (thinly sliced sirloin)
1 teaspoon Lawry's Seasoned Salt (or other all-purpose seasoning, divided)
1 teaspoon garlic pepper (divided)
8 hoagie rolls
6 tablespoons softened butter
7 ounces sliced Provolone cheese ((7 1-ounce slices) I used Tillamook Farmstyle Thick Cut)

Steps:

  • Before starting, place beef in the freezer for about 20 to 30 minutes. This will make it easy to slice thinly.
  • Add 2 tablespoons vegetable oil to a large, deep (14-inch) sauté pan and place over MEDIUM-LOW heat. Add onion and bell peppers. Allow to cook, stirring occasionally, until very tender. If they are beginning to brown, turn the heat under the skillet down a bit. While the veggies are cooking, prepare the steak, returning to stir every now and then.
  • Remove steak from freezer and place it on a cutting board. Use a sharp knife to trim edges of excess fat and then slice it as thinly as possible across the grain. Chop the sliced steak into very small pieces. Keep chopping until you can chop no more! You want little ¼-inch-ish pieces. Check on those veggies periodically while you're prepping the beef.
  • When the veggies are tender, transfer them to a dish and return the skillet to the heat. Add additional oil and place over MEDIUM-HIGH heat. Add half of the chopped steak and cook, stirring frequently, for about 4 to 5 minutes, or until no pink remains. Season with ½ teaspoon each seasoned salt and garlic pepper while cooking. Transfer first batch of steak with a slotted spoon to dish with onions and peppers, leaving juice behind in pan. Add additional oil, if needed and repeat with remaining steak and seasoning.
  • Preheat oven to 400 degrees F.
  • Split open the hoagies rolls but do not separate them. Spread them with the softened butter and place them on a baking sheet. Transfer the baking sheet to the oven and bake for 3 to 5 minutes or until lightly golden and toasted.
  • Drain off all of the juices from the pan and return to the stove. Add back all of the steak and the onions and peppers. Place 7 provolone slices over the mixture in a circle and cover the pan. Cook on MEDIUM until cheese melts, about 4 to 5 minutes, then stir and use tongs to transfer to the toasted sandwich rolls.

2 tablespoons grapeseed oil
2 cups thinly sliced yellow onions
Salt and freshly ground black pepper
4 tablespoons unsalted butter, softened
Four 9-inch sub rolls
2 pounds shaved beef steak, such as rib-eye or sirloin
12 thin slices provolone

Steps:

  • In a large saute pan or griddle, heat the oil over medium-high heat for 1 minute, and then add the onions, 1 tablespoon salt and 1 teaspoon pepper. Cook the onions until caramelized, stirring throughout the process, 5 to 6 minutes. Remove and keep warm.
  • Spread the softened butter on the interiors of the rolls and cook, butter-side down, on a griddle until browned, 1 to 2 minutes. Remove the rolls, add the raw steak to the griddle and sprinkle with salt and pepper. Cook briefly, shredding the meat into small pieces with two metal spatulas. Add the onions and cook for 2 minutes.
  • Portion the meat into four piles, and top each pile with 3 slices of the provolone. Continue to cook until the cheese melts (putting on the lid and adding a little water to the pan can help with this step). Cover each pile with a browned roll, and slide a spatula under the meat to pick it up with the roll.

Steps:

  • Place steak in freezer for 30 to 45 minutes; this makes it easier to slice the meat. Remove the meat from the freezer and slice very thinly.
  • Heat griddle or grill pan over high heat. Brush steak slices with oil and season with salt and pepper. Cook for 45 to 60 seconds per side.
  • Place several slices of the meat on the bottom half of the roll, spoon some of the cheese sauce over the meat, and top with the mushrooms, onions, and peppers.
  • Melt butter in a medium saucepan over medium heat. Whisk in the flour and cook for 1 minute. Slowly whisk in the warm milk, and cook, whisking constantly until thickened, about 4 to 5 minutes. Remove the mixture from the heat and whisk in the provolone and Parmesan until combined; season with the salt and pepper.
  • Heat oil and butter in a large saute pan over high heat. Add the mushrooms and cook until the mushrooms are golden brown. Stir in the parsley and season with salt and pepper.
  • Heat butter and oil in a large saute pan over medium heat. Add the onions, season with salt and pepper, and cook slowly until golden brown and caramelized, stirring occasionally, approximately 30 to 40 minutes.
  • Heat the oil in medium saute pan over high heat. Add the peppers and cook until soft. Season with salt and pepper.
