CHEESE SCONES

Cheese Scones image

Found this recipe on the internet. It's a nice twist on the traditional English scone (see recipe #133633).

Provided by Kellogs

Categories     Scones

Time 22m

Yield 18 scones, 6-8 serving(s)

Number Of Ingredients 8

2 cups sifted all-purpose flour (256gm)
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt (3ml)
1/4 cup margarine or 1/4 cup butter
1 cup milk
2/3 cup grated cheddar cheese
1/4-1/2 teaspoon dried oregano

Steps:

  • Sift the flour, sugar, baking powder, baking soda and salt together. Add grated cheese and dried oregano and mix.
  • Cut in the margarine or butter till mixture resembles fine breadcrumbs.
  • Add the milk and mix to make a smooth dough. (add more milk if necessary to ensure mix is not too dry) Knead very lightly for ten seconds on a lightly floured surface.
  • Roll or pat to about 3/4" thick (2 cm) and cut into individual scones.
  • Top each scone with a little additional cheese and bake for approximately 12 minutes. Brush the tops with melted butter after removing from the oven.

CHEESE SCONES

Cheese Scones image

These foolproof cheese scones are made with basics from your kitchen cupboard and perfect when you're craving carbs.

Provided by ZiggyChew

Time 23m

Yield Makes 5 large scones

Number Of Ingredients 6

450g of self-raising flour
1 generous tsp. of baking powder
50g of butter
55g of grated cheddar cheese
1 medium egg
270ml milk

Steps:

  • Preheat the oven to 220C. Sift the flour and the baking powder into a bowl in order to allow air into the mixture. This is an important step.
  • Rub in the butter until a breadcrumb like consistency is achieved. Cold, dry hands make this step easier.
  • Grate the cheese. Stir most into the flour mixture but keep a little back for sprinkling on top of the scones.
  • Crack the egg into a measuring jug and whisk lightly. Top the beaten egg up with milk until the mixture reaches the half-pint or 285ml mark. Whisk again to combine.
  • Make a well in the centre of the dry ingredients and pour the majority of the egg mixture into the bowl, keeping back a little to brush the scones with before baking.
  • Stir the mixture to combine and then knead very briefly, just enough to bring it together. Be careful not to overwork the dough.
  • Roll out the dough quite thickly (1 1/2 inches) and cut out circles with a scone cutter or a glass. Don't twist as you cut or the scones will rise unevenly. Alternatively, you can cut the dough into traditional wedges.
  • Place the scones on a baking tray. Glaze the tops with the egg and milk mixture then sprinkle a little cheese over each one.
  • Put straight into the very hot oven and bake for around 13 minutes or until well risen and browned. Afterwards, cool on a rack for five minutes before eating warm with butter.

CLASSIC CHEESE SCONES

Classic cheese scones image

Indulge in some cheese scones for afternoon tea or as part of a picnic. They're also great served alongside soups and you can freeze them for later use

Provided by sarahheron

Categories     Afternoon tea, Side dish, Snack, Supper

Time 35m

Yield Makes 5-6

Number Of Ingredients 7

225g self-raising flour, plus extra for dusting
pinch of salt
pinch of cayenne pepper
1 tsp baking powder
55g chilled butter, cut into cubes
120g mature cheddar, grated
90-100ml milk, plus 1 tbsp for glazing

Steps:

  • Heat the oven to 200C/180C fan/gas 6 with a large baking tray inside. Sift the flour, salt, cayenne pepper and baking powder into a bowl, then sift again to make sure the ingredients are thoroughly combined.
  • Add the butter to the bowl and combine with your fingertips to make breadcrumbs. Sprinkle 100g of the cheese into the breadcrumb mixture and rub together until evenly distributed. Try not to mix too much as the heat from your hands may start to melt the butter.
  • Make a well in the centre of the mixture and pour in enough milk to give a fairly soft but firm dough. Do not pour in all the milk at once as you may not need it all to get the right consistency.
  • Lightly flour a surface and roll out the dough to approximately 2cm thick. Cut out the scones with a medium (about 8cm) cutter, then put on a sheet of baking parchment, glaze with a little milk and sprinkle with the remaining cheese. Slide onto the hot oven tray.
  • Bake in the oven for 15-20 mins or until golden brown and cooked through.

If you don’t have a food processor, put the dry ingredients in a large mixing bowl, add the butter and rub it in with your fingertips until the mixture resembles very fine breadcrumbs.
  • Tip the mixture into a large mixing bowl (if it’s not already in one), then mix in the 100g finely grated cheese.

  • Preheat the oven to 220°C, fan 200°C, gas 7. In a large bowl, mix together the flour, salt, mustard, cayenne and a good grind of black pepper. Add the butter and either pulse in a food processor or rub in by hand until it has a crumb-like texture.
  • Reserve a large handful of cheese for later, then mix the rest into the flour mixture thoroughly. Combine the milk with 100ml water, then use a knife to quickly mix in the liquid until it’s just coming together as a dough, or blitz together briefly if you’re using a food processor.
  • Tip out onto a lightly floured surface. Flatten with your hands into a rectangle, about 3-4cm thick. Cut out the scones using a floured 7cm fluted or straight cutter, re-shaping the trimmings as needed, to get 12 scones. Place on a baking tray lined with baking paper. Brush liberally with the beaten egg and scatter over the reserved cheese. Bake for 15-18 minutes until well-risen and crisp. Cool on a wire rack for 10 minutes, then split open and enjoy with butter and chutney, if you like.

  • Pre-heat the oven to 220°C/430°F and line a baking tray with baking paper or a silicone baking liner and sprinkle lightly with flour. Set aside.
  • In a large bowl, whisk together flour, baking powder, mixed herbs, garlic powder (if using) and salt. Add the cubed butter and using a pastry cutter or your hands, combine with the dry ingredients until the mixture resembles coarse sand. Stir through the grated cheese, reserving 1/4 cup to sprinkle on top if desired.
  • Add the milk (starting with 1 cup and adding more as needed) and stir together until a shaggy dough forms. I use a butter knife for this step - that's the original way to do it and it works really well! You want the dough to hold together but not be too wet. If you accidentally add too much milk, add a little extra flour.
  • Tip the dough onto the prepared baking tray and use your hands to form it into a rectangle. Cut the dough into 10 evenly sized pieces. You can also make a circle and cut the dough into triangles. It doesn't matter what shape the scones are, as long as they are all roughly the same size. Sprinkle with the remaining grated cheese.
