Easy Homemade Berry Syrup image

This berry syrup is easy and super yummy on so many things, especially cheesecake and French toast. The syrup can also be used for pancakes, waffles, crepes, etc.

2 (12 ounce) packages frozen mixed berries
2 ¼ cups warm water, divided
½ cup white sugar
2 tablespoons cornstarch

Steps:

  • Pour frozen berries and 2 cups water into a medium saucepan and cook over medium heat, stirring occasionally, until they have thawed but are not hot. Add sugar and bring to a simmer; cook for about 5 minutes, stirring frequently.
  • Mix remaining 1/4 cup water and cornstarch together in a bowl. Add to the berry mixture and cook over medium-low heat to thicken slightly, about 3 minutes.

Great for pancakes or for drizzling over cheesecake. Adjust sugar if you get less than 5 cups juice!

6 1/2 cups fruit (strawberries, raspberries, etc.)
6 3/4 cups sugar

Steps:

  • Wash, stem, and crush fruit in saucepan.
  • Heat to boiling and simmer about 10 minutes.
  • Pour hot fruit through colander or strainer to remove seeds, then again through cheesecloth or a jelly bag.
  • Discard pulp.
  • The yield of juice should be about 5 cups.
  • Combine juice with sugar and boil in large saucepan for 1 minute.
  • Skim off foam.
  • it is ready to serve or to can in 1/2 pint jars.

In 2007, IHOP recipe developers did the unimaginable: They cut up a whole cheesecake, added chunks of it to pancake batter and topped the finished stack of flapjacks like a big dessert, with sweet strawberry sauce. Hey, when you serve 700 million pancakes every year, you have to mix things up sometimes. The new addition to the menu was a huge hit - with everyone except the weight-watching crowd. It comes in at a whopping 1,100 calories an order! Our advice: Just eat one or two instead of the whole stack.

1 1/2 cups strawberries, hulled and sliced
2 tablespoons seedless strawberry jam
1 1/4 cups all-purpose flour
1 1/4 cups buttermilk
1 large egg
1/4 cup vegetable oil
1/4 cup granulated sugar
1 teaspoon baking powder
1 teaspoon baking soda
Pinch of salt
2 cups chopped frozen cheesecake
Cooking spray
Butter, confectioners' sugar or whipped cream, for topping (optional)

Steps:

  • Mix the strawberries, jam and 2 tablespoons warm water in a bowl; set aside. Preheat the oven to 200 degrees F.
  • Pulse the flour, buttermilk, egg, vegetable oil, granulated sugar, baking powder, baking soda and salt in a blender until smooth. Transfer to a bowl and stir in the cheesecake pieces, keeping them whole.
  • Coat a large nonstick skillet or griddle with cooking spray and heat over medium heat. Working in batches, pour about 1/4 cup batter into the skillet for each pancake. Cook until bubbly on top, about 4 minutes, then flip and cook until the other side is golden brown, about 2 more minutes. Transfer the finished pancakes to a baking sheet and keep warm in the oven. Serve the pancakes topped with the strawberry sauce; top with butter, confectioners' sugar or whipped cream, if desired.

2 cup(s) complete buttermilk pancake and waffle mix
1 1/4 cup(s) water
1 cup(s) small curd cottage cheese
1 tablespoon(s) sugar
1 teaspoon(s) vanilla extract
BERRY-LEMON SYRUP
1 cup(s) syrup (maple or syrup of your choice)
1 cup(s) raspberries, blueberries, sliced strawberries or combination
1/2 teaspoon(s) shredded lemon peel, optional

Steps:

  • For the berry-lemon syrup: Combine syrup ingredients in a small saucepan. Heat through, stirring occasionally. Keep warm while preparing pancakes.
  • For pancakes preheat the griddle to 325 degrees F.
  • Combine ingredients in a medium bowl; stir well until just blended. Do not over stir - this will make the pancakes tough.
  • Pour batter by 1/4 cupfuls onto low-medium heat, well-greased griddle. Cook until covered with bubbles and the edges look dry.
  • Turn pancakes. Pancakes should only be turned once to retain fluffy consistency.

  • To assemble, stack 3 pancakes on each plate. Top each stack with 2 tbsp mascarpone, 1 tbsp of lemon curd and 2-3 tbsp of the blueberry compote. Sprinkle with the remaining lemon zest and serve.
