I was inspired to try to make these at home after watching the Travel Channel when they aired a piece about a place called Ted's Restaurant in Meriden, CT. Where he makes these awesome looking, gooey cheese covered burgers. I can't think of anyone who has a steam box like the one Ted uses in his restaurant, and after viewing the episode, I wanted one! So, I grabbed my patty press from the cupboard and went on to try to make these awesome burgers at home with a large frying pan, glass lid, and the wire rack from my toaster oven. Since no flipping is involved, I decided to place a slice of onion on each burger while it steamed. I was very delighted to find that the burgers not only came out juicy and flavorful, but was also surprised on how fast and easy it was, and because there are no grease splatters, clean up was a cinch!

Number Of Ingredients 6

12 ounces ground beef, I used ground chuck
4 ounces cheddar cheese, 2 slices (I use Cabot, seriously sharp vermont cheddar)
2 slices onions
1 teaspoon seasoning salt
1 teaspoon ground black pepper
2 cups water

Steps:

  • divide ground beef in half and form into 2 six ounce patties.
  • season with seasoning salt and pepper to your liking.
  • place a metal rack in the bottom of the frying pan.
  • add water to a level just below the rack.
  • heat water on high heat until water begins to steam, reduce heat to medium.
  • place burgers on rack and cover.
  • steam for about 10 minutes.
  • top with cheese, cover and steam an additional 30 seconds to 1 minute or until cheese is melted.
  • top with your favorite toppings and enjoy!

Fill these steamed Chinese bread rolls with BBQ pork and pickled vegetables for a perfect Chinese New Year party nibble

Number Of Ingredients 7

525g plain flour, plus extra for dusting
1½ tbsp caster sugar, plus a pinch
1 tsp fast-action dried yeast
50ml milk
1 tbsp sunflower oil, plus extra for brushing and for the bowl
1 tbsp rice vinegar
1 tsp baking powder

Steps:

  • Mix together the flour, caster sugar and ½ tsp salt in a large bowl (see tip). Dissolve the yeast and a pinch of sugar in 1 tbsp warm water, then add it to the flour with the milk, sunflower oil, rice vinegar and 200ml water. Mix into a dough, adding a little extra water if needed.
  • Tip the dough onto a lightly floured work surface and knead for 10-15 mins, or until smooth. Put in a lightly oiled bowl, cover with a damp cloth and leave to rise for 2 hrs, or until doubled in size.
  • Tip the dough out onto a clean work surface and punch it down. Flatten the dough with your hands, then sprinkle over the baking powder and knead for 5 mins.
  • Roll out the dough into a long sausage shape, about 3cm thick, then cut into pieces that are about 3cm wide - you should have 18. In the palm of your hand, roll each piece of dough into a ball and leave to rest for 2-3 mins.
  • Use a rolling pin to roll out each ball, one by one, into an oval shape about 3-4mm thick. Rub the surface of the dough ovals with oil and brush a little oil over a chopstick. Place the oiled chopstick in the centre of each oval. Fold the dough over the chopstick, then slowly pull out the chopstick.
  • Cut 18 squares of baking parchment and put a bun on each. Transfer to a baking tray, cover with a clean tea towel and leave to prove in a warm place for 1 hr 30 mins, or until doubled in size.
  • Heat a large steamer over a medium-high heat. Steam the buns for 8 mins until puffed up (you'll need to do this in batches). Prise open each bun and fill with our barbecue pork and pickled carrot & mooli. Eat while they're still warm.

2 lb fresh angus hamburger, or, fresh ground chuck hamburger (do not use frozen patties)
1 or 2 pkg hamburger buns (amount depends on number of patties)
1 or 2 c mayonaise
1 or 2 whole tomatoes-diced
1 or 2 whole onions-diced
1 c mushrooms-diced
8 slice optional: bacon-cooked crisp, broken up or kept as slices
8 slice lettuce-one leaf for each cheeseburger
8 slice american cheese (one slice per patty)
Any other type of condiments: mustard, ketchup, etc.

Steps:

  • 1. Using fresh hamburger, season the meat the way you like, and then make as many patties as you may need. I usually make about eight round patties, and each one is about one-two inches thick, and about four inches diameter. Cook the hamburgers patties using skillet without a lid, or, if using a grill, on top of grill, using medium heat. Make sure hamburger meat is throughly cooked. Never smash down hamburger while cooking them, since this squeezes all the meat juices, making dry hamburgers. Add cheese to each hamburger. Optional: fry about eight bacon slices, and then place them on top of every cooked cheeseburger.
  • 2. Take hamburger buns out of plastic bag, and place bag aside for later use. Split open each hamburger bun, and sit the bottom bun on top of each cheeseburger-inside bun portion on top of cheeseburger. After that, the top half of bun-inside portion- sits on top of bottom bun. When finished, each cheeseburger has one bun sitting on top of each cheeseburger. Place a lid over cheeseburgers and buns (if using skillet), or shut the grill lid (if using grill)...add skillet to medium heat, or grill on medium heat (with lid closed)... for one minute or so..make certain to not overcook cheeseburgers. After about one minute, take off heat, and place every cheeseburger inside steamed buns..and then place every cheeseburger inside the bun plastic bag. Seal the end of plastic bag to hold in steam, keeping cheeseburgers and steamed buns warm.
  • 3. Sometimes I mix diced onions, diced tomatoes, mushrooms, real bacon bits, etc..to a bowl of mayonaise, and top the cheeseburger with a dab of it. Also, I like to spritz my lettuce lightly with water, and slightly freeze the lettuce, then top my cheeseburger with it, along with the mayonnaise mix.

4 slice vermont extra sharp cheddar cheese, sliced
4 hamburger buns
4 slice onion

Steps:

  • 1. using a patty press, or your hands, form burgers into 6 ounce patties. season with salt and pepper or as you like.
  • 2. in a large frying pan, place a wire rack. fill with water to just below the rack and heat on high with lid on until steam develops
  • 3. place burger patties on rack, cover and steam 10-12 minutes. add cheese and steam for up to 1 additional minute or until cheese melts. Since no flipping is involved place a slice of onion on the pattie if you desire.
  • 4. place burgers on bun and garnish. ENJOY! This recipe makes four 6 ounce hamburgers.

  • Make the dough. Place the flour, sugar, yeast, baking powder, oil and salt into the bowl of a stand mixer fitted with the dough hook. Mix on slow speed, gradually adding the water to make a soft, smooth dough. Remove the bowl from the mixer and cover it with cling film. Leave the dough to rise in a warm place for 30–60 minutes, until doubled in size.
  • While the dough is rising, prepare the filling. Place the mince, onion granules and garlic powder in a mixing bowl, season with salt and pepper and mix to combine. Divide the mixture into 8 portions and press each portion into the cookie cutter to make patties, each about 1cm deep and 5cm across. Cover and set aside.
  • Once the dough has doubled in size, turn it out onto a lightly flour-dusted work surface. Using your hands, roll out the dough into a log and divide it into 10 equal-sized pieces (each about 50g). Roll each piece into a ball, lightly dust with flour and place each onto a square of baking paper. Cover the dough balls with oiled cling film and leave to prove for 10 minutes, until puffy.
  • Once the dough balls are ready, knead one bun with green colouring to an even colour and another with red and leave the remaining 8 buns white. Roll the red and green buns each out into a rectangle and cut into thin strips about 5mm wide. Cover with oiled cling film ready for assembly.
