GROUND BEEF WELLINGTON
Trying new recipes is one of my favorite hobbies. It's also the most gratifying. What could beat the smiles and compliments of the ones you love? This recipe is easy yet fancy, perfect for when it's just you and one kid or a friend.

- In a saucepan, saute mushrooms in butter until softened. Stir in flour and 1/8 teaspoon pepper until blended. Gradually add the cream. Bring to a boil; cook and stir until thickened, about 2 minutes. Remove from the heat and set aside., In a bowl, combine the egg yolk, onion, 2 tablespoons mushroom sauce, salt and remaining 1/8 teaspoon pepper. Crumble beef over mixture and mix well. Shape into 2 loaves. Separate crescent dough into 2 rectangles on a baking sheet. Seal perforations. Place a meat loaf on each rectangle. Bring dough edges together and pinch to seal. If desired, brush with egg wash. Bake at 350° until golden brown and a thermometer inserted into meat loaf reads 160°, 24-28 minutes., Meanwhile, warm remaining sauce over low heat; stir in parsley. Serve sauce with Wellingtons.

BACON BURGER WELLINGTON
From the "more is more files," we bring you the positively overstuffed Bacon Burger Wellington.

- Preheat the oven to 425, and line a baking sheet with parchment paper.
- Make a bacon weave with 4 slices of bacon. Divide burger patties in half and place on bacon weave. Place 4 cheese squares in between each half patty. Seal sides and cook in a cast-iron pan on medium-high heat until medium rare.
- Remove from heat and set aside while you prepare the Wellington wraps.
- Lay out a puff pastry rectangle and spread mustard in the center. Place wrapped burger in the center. Remove excess puff pastry and fold dough around the wrapped burger, forming a tightly sealed package. Seal sides with egg wash and top with sesame seeds. Repeat with remaining burgers.
- Place on a baking sheet and bake for 20 to 25 minutes until puff pastry is golden.
- Let rest for 5 minutes, and serve with lettuce, tomatoes and your favorite condiments.

- 1. Preheat the oven to 400 degrees. Line a baking sheet with parchment paper. mix the beef, onion, garlic, salt and pepper together. Shape into 4 1/2 pound burgers. Take a cube of cheese and press into the center of each burger.
- 2. Cut each puff pastry sheet in half. Place 2 pickles, 2 slices of bacon, and 2 slices of cheese on each puff pastry sheet. Top with the burger patty. Fold the sides up and seal the burger cutting off any extra pastry. Turn over and place seam side down prepared baking sheet.
- 3. Brush each with egg mixture and bake 45 minutes.

- In a large bowl, combine together the ground sirloin, ground pork, Worcestershire sauce, salt, pepper, garlic powder, and 1 tablespoon yellow mustard until evenly mixed through. Divide into 4 equal pieces and then shape each portion into a very large burger patty, placing on a plate or baking sheet. Continue shaping the rest of the patties.
- Place a large griddle pan or grill pan over medium-high heat. Once very hot and smokey, grease with a bit of canola oil. Cook the patties, in batches (depending on how big your pan is) for about 2 to 4 minutes on the first side, or until charred and browned. Flip over and continue to cook for another 2 minutes. We're not trying to cook them all the way at this point, because they'll continue to cook in the oven. Transfer to a plate or baking sheet and continue cooking the rest. Let cool to room temperature.
- Working with one sheet of puff pastry at a time, cut it in half. Roll out each half slightly to make them larger. Spread the center of each half with mustard and ketchup. Place two full slices of bacon in the center of each, you might have to cut the bacon in half so you'll end up with four half slices for each one. Top with a slice of cheese, and a few pickles. Place the cooled burger on top and then wrap the puff pastry over everything.Turn over and place on the prepared baking sheet. Repeat this with the second puff pastry sheet and remaining burger ingredients.

- Heat large skillet over medium heat until hot. Add patties; cook 10 to 12 minutes or until thoroughly cooked, turning once. Remove patties from skillet; drain on paper towels. Cool 5 minutes.
