CHEESEBURGER PIE (JAMIE DEEN)

DS and I saw this made on one of Paula Deen's shows. DS wanted to try it so we did. It was lots of fun and pretty tasty. I have changed it slightly since as written didn't work for us. (I can't divide puff pastry into 5 neat squares!) This recipe could easily be adapted to suit many tastes - add your own condiments or change it up entirely! We added caramelized onions. Times do not include puff pastry thaw time.

1 lb lean ground beef
1/2 cup sweet onion
1 tablespoon steak seasoning (such as Montreal)
1 tablespoon steak seasoning, sauce
4 slices cheese (American, Swiss, sharp cheddar or one of your choosing)
1 sheet frozen puff pastry
1 egg yolk
1 teaspoon water

Steps:

  • Let frozen puff pastry sit at room temperature for approximately 20 minutes to thaw enough to easily work with it.
  • Preheat oven to 375°F and preheat grill or stovetop pan.
  • Mix ground beef, steak seasoning and steak seasoning sauce (use your hands, if necessary).
  • Form meat mixture into 4 smallish flat patties.
  • On grill (or stove-top), cook hamburgers to medium or medium-well.
  • Remove the burgers and top each with a slice of cheese.
  • Roll out the puff pastry, flattening slightly, and cut into 4 squares.
  • Cover each burger with a piece of puff pastry, flipping it over and wrapping around the bottom and pinching to seal the edges.
  • Place pies on ungreased baking sheet, pinched side down.
  • Whisk egg yolk and 1 tsp water.
  • Brush each pie with egg wash.
  • Bake for 15 minutes or until pie is golden brown.
  • Serve with condiments of your choosing.

1 sheet frozen puff pastry dough*
5 slices cheese
1 tablespoon steak seasoning sauce
1 egg yolk
1 tablespoon Paula Deen Steak Seasoning Rub
1 lb lean ground beef
1/2 cup sweet onions

Steps:

  • *Frozen puff pastry dough should sit at room temperature for about 20 minutes.
  • Preheat the oven to 375 degrees F and preheat the grill.
  • Mix the ground beef, onion, steak seasoning and seasoning sauce (using your hands is the most efficient way to do this). Form into 5 small flat patties. Grill the hamburgers to medium-well. (You may also pan-fry the patties.) Remove from the grill and top each burger with a slice of cheese of your choice.
  • Roll the puff pastry sheet to flatten slightly. Cut it into 5 relatively even rectangles.
  • Cover each burger with a piece of puff pastry and wrap it around the bottom, pinching all of the edges to seal. Place on an un-greased baking sheet, pinched side down.
  • Whisk together the egg yolk and 1 teaspoon water to make an egg wash. Brush each wrapped pastry with the egg wash. Bake for about 15 minutes, until the puff pastry is nice and brown.

BUTTERMILK CRUSTED CHEESEBURGER PIE

This recipe combines ground beef with cheese and mixed vegetables and covered with a crispy, buttermilk crust. It takes a while to prepare, but it's worth it.

2 pounds ground beef
1 onion, chopped
¾ tablespoon salt
¼ tablespoon ground black pepper
¼ tablespoon chili powder
1 (28 ounce) can whole peeled tomatoes
1 (15 ounce) can whole kernel corn, drained
1 (15 ounce) can peas
1 (15 ounce) can green beans, drained
5 cups buttermilk baking mix
1 ⅓ cups milk
5 potatoes, cooked and mashed
8 ounces sliced process cheese food

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • In a large saucepan over medium high heat, brown the ground beef for 5 to 10 minutes; drain excess fat. Add the onion, salt, ground black pepper, chili powder, tomatoes, corn, peas and green beans. Reduce heat to low and let simmer.
  • Meanwhile, in a large bowl, combine the buttermilk baking mix and the milk. Mix well to form a dough. Split in half and roll dough out to line the bottom of a 9x13 inch baking dish. Make sure dough covers the bottom and sides of the dish.
  • After the beef mixture has simmered for about 15 to 20 minutes, pour into the baking dish over the dough. Spoon the mashed potatoes over the beef mixture, spreading evenly. Layer the cheese over the potatoes. Roll out the other half of the dough to fit over the top. Trim the edges and seal .
  • Bake at 450 degrees F (230 degrees C) for 25 to 35 minutes, or until golden brown.
