CHEESEBURGER MACARONI AND CHEESE
I love to play around with mac and cheese flavors to make them taste like classic dishes that we all love! This one tastes exactly like a big, juicy, all-American cheeseburger with lots of melty cheese, grilled onions, pickles, ketchup, and mustard. If you shut your eyes and take a bite, you'll be amazed! A green salad or Caesar salad is a great accompaniment for this.

- Preheat the oven to 375 degrees F (190 degrees C).
- Bring a large pot of lightly salted water to a boil and add oil. Cook cavatappi pasta in the boiling water, stirring occasionally, until tender yet firm to the bite, 7 to 10 minutes. Drain well in a strainer and set aside. Rinse and wipe out the pot.
- Melt 1 tablespoon butter in a skillet over medium heat. Add onion and cook until softened, 3 to 5 minutes. Add ground sirloin, breaking it up and cooking until brown all the way through, 7 to 10 minutes more. Season with salt and pepper.
- Meanwhile, heat milk in a small saucepan over medium-low heat, making sure it does not boil.
- Melt 1/2 cup of butter in the large pot over low heat and add flour. Cook for 2 minutes, stirring with a whisk. Add hot milk to the pot, whisking constantly, until thickened and smooth, 3 to 5 minutes. Remove from heat and add American cheese, Cheddar cheese, and Cheddar-Jack cheese. Season with 1 tablespoon salt, a pinch of nutmeg, and black pepper to taste. Stir until melted, about 2 minutes more. Add ketchup, mustard, and dill. Stir cooked pasta and sirloin mixture into the cheese. Pour macaroni and cheese into a large baking dish.
- Arrange sliced tomatoes on top of macaroni and cheese and season with salt and pepper.
- Combine break crumbs, potato chips, Parmesan cheese, and olive oil in a resealable plastic bag. Seal bag and shake to combine. Sprinkle topping evenly over tomatoes in the baking dish.
- Bake in the preheated oven until sauce is bubbly and bread crumb topping is browned, 30 to 35 minutes.

- In a skillet over medium heat, cook ground beef until it is brown. (Or use your Ninja)
- Add to a 6 quart slow cooker.
- Add in onion, seasonings, Worcestershire sauce and broth. Stir to combine.
- Cover and cook on low for 6-8 hours or high for 3-4.
- 15 minutes before serving stir in the pasta. It will look very watery but don't worry the pasta will soak it up. Cover and cook for 15 minutes until the desired tenderness is reached.
- Stir in the cheese until melted.

- Preheat the oven to 400°F (200°C).
- In a medium 8-inch (20-cm) cast-iron skillet, press down half of the ground beef with a spatula to mold into a patty. Season with salt and pepper.
- Place the cast-iron skillet over medium-high heat and sear the patty until browned, about 4 minutes on each side.
- Remove the patty from the skillet and set aside. Repeat with remaining beef.
- Return the pan to low heat and add the onion. Cook, stirring occasionally, until the onion is caramelized, about 20 minutes.
- Add the garlic and spinach, stirring until the spinach is cooked down, about 5 minutes.
- Lay one sheet of puff pastry on a baking sheet and top with 1 patty.
- Layer 4 slices of cheese over the patty, then top with the caramelized onion mixture.
- Top with the remaining 4 slices of cheese and the other patty.
- Cover with the other sheet of puff pastry.
- Trim the edges of the pastry with a knife and discard.

- Combine crushed tomatoes and water in pot and bring to a boil; add macaroni and stir. Meanwhile rinse frozen veggies under hot water to thaw, drain and add to pot along with ground beef; stir.
- In a small bowl combine milk and cheese packet stirring until there are no lumps; stir into pot.
- Break cheese slices into small pieces and melt on top of mixture and then stir.

- Set a large pot of water to boil, add a pinch of salt.
- When water is boiling add pasta and cook per the time on the box less 1 or 2 minutes so the pasta is cooked al dente.
- In a large skillet add the ground beef to brown, when almost done, drain off excess fat and add the garlic powder, onion powder, basil, oregano salt and pepper. Cook so no longer pink. Take off the heat.
- In a medium sauce pan place on medium heat, add the butter until it melts, then add the flour and cook on low for 1 minute. (this cooks out the flour taste, but do not brown, you are making a roux)
- While the roux is cooking, warm the milk in the microwave for about 1 and 1/2 minutes, just to take the chill off.
- After the flour butter mixture has cooked one minute, add the milk a little at a time mixing with a whisk. When the milk is all added take a spatula and make sure that the roux is not stuck on the sides.
- Stir constantly with the whisk and as it starts to thicken about 5 minutes add the cheddar cheese and and parmesan cheese. Heat while constantly whisking until hot, thick and bubble, about 10 minutes
- Finally add the remaining 1/2 teaspoon of garlic powder and onion powder. Take off the heat.
- In a large mixing bowl, mix half at a time, the cooked pasta, the ground beef, and the cheese sauce.
- When all mixed put in a greased 13×9 baking dish. Bake at 350° for 35 minutes.
