Easy Cheeseburger Gnocchi Skillet image

Delicious and easy Cheeseburger Gnocchi Skillet is bursting with flavor and is healthy, too!

1 TBS butter
17.6 ounces potato gnocchi
1 pound 96/4 lean ground beef
1/4 cup diced yellow onion
1 tsp minced garlic
1/2 tsp salt
1 TBS Hamburger seasoning ((I used McCormick Grill Mates seasoning))
14.5 ounces diced tomatoes
1 cup beef broth
1/3 cup reduced fat shredded cheese

Steps:

  • Melt butter in skillet over medium-high heat. Add gnocchi to skillet and cook for 3-4 minutes until it turns golden brown on each side.
  • Remove gnocchi from skillet and set aside.
  • Add onions, garlic and beef to skillet. Add salt and hamburger seasoning and cook until beef is no longer pink. Drain if necessary.
  • Place beef mixture, diced tomatoes, beef broth and gnocchi in skillet and cook until it starts bubbling. Reduce heat to low-medium and cook until liquid is minimal.
  • Sprinkle cheese on top and place a lid over skillet for 2 minutes to melt cheese.
  • Serve and enjoy!

1 (16 oz) package potato gnocchi
1/2 lb lean ground beef
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon smoked paprika
1 teaspoon cumin
1 teaspoon mustard powder (optional)
2 cups diced onion (about 1 whole onion)
3-4 cloves garlic, minced
1 (10-oz) can Ro-Tel Diced Tomatoes and Green Chiles
1 cup beef broth (or water)
1/4 cup heavy cream
1 cup shredded sharp cheddar cheese
1/3 cup thinly sliced scallions

Steps:

  • Melt butter in a 12-inch skillet over medium-high heat. Add gnocchi in a single layer and cook on one side for 2-3 minutes until browned and toasted. Shake the pan to toss the gnocchi and continue cooking for another 2-3 minutes, tossing occasionally, until both sides are toasted. Remove gnocchi to a plate and set aside.
  • Turn the heat to high and return skillet to stove. When the pan is very hot and smoking, add the beef and season with salt, pepper, cumin, paprika, and mustard powder if desired. Add the onion and garlic, and cook, stirring occasionally, until beef is browned and onions are golden. Drain if necessary.
  • Add the tomatoes, broth, and gnocchi back into the skillet. Stir to combine. Bring to a boil, then cover, reduce heat to medium-low, and simmer for 5 minutes until the gnocchi is tender and liquid is mostly absorbed.
  • Off heat, then add the cream and 1/2 cup cheese and stir to combine. Top with remaining cheese and scallions. Place the skillet under the broiler in the oven until cheese is browned and bubbly, about 3 minutes. Serve and enjoy!!

1 package (16 oz) potato gnocchi
1/2 cup chopped onion
32 (1-inch) frozen beef meatballs, thawed (from 22-oz bag)
1 cup Progresso™ beef flavored broth (from 32-oz container)
1 can (14.5 oz) Muir Glen™ organic diced fire roasted tomatoes, drained
1 cup shredded sharp Cheddar cheese (4 oz)
3/4 cup coarsely chopped cooked bacon
2 tablespoons sliced green onions
2 tablespoons chopped dill pickles

Steps:

  • In 12-inch nonstick skillet, melt 1 tablespoon of the butter over medium-high heat. Add gnocchi; cook 4 to 6 minutes, stirring occasionally, until lightly browned. Transfer gnocchi to plate; set aside.
  • Reduce heat to medium; melt remaining 1 tablespoon butter in skillet. Add onion and meatballs; cook 4 to 6 minutes, stirring occasionally, until onions are tender and meatballs are heated through. Add broth, tomatoes and gnocchi to skillet; heat to boiling. Cover; reduce heat to medium-low. Simmer 3 to 5 minutes or until gnocchi is tender; turn off heat.

I love to play around with mac and cheese flavors to make them taste like classic dishes that we all love! This one tastes exactly like a big, juicy, all-American cheeseburger with lots of melty cheese, grilled onions, pickles, ketchup, and mustard. If you shut your eyes and take a bite, you'll be amazed! A green salad or Caesar salad is a great accompaniment for this.

1 (16 ounce) package cavatappi (corkscrew macaroni)
1 tablespoon unsalted butter
1 medium red onion, chopped
1 pound lean ground sirloin
salt and ground black pepper to taste
1 quart milk
½ cup unsalted butter
½ cup all-purpose flour
16 slices deli-style American cheese, cut into pieces
1 cup shredded extra-sharp Cheddar cheese
2 cups shredded Cheddar-Monterey Jack cheese blend
1 pinch ground nutmeg
½ cup ketchup
⅓ cup yellow mustard
1 ½ tablespoons chopped fresh dill
4 small tomatoes, sliced
1 cup panko bread crumbs
1 cup crushed potato chips
¼ cup shredded Parmesan cheese
1 tablespoon extra-virgin olive oil

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Bring a large pot of lightly salted water to a boil and add oil. Cook cavatappi pasta in the boiling water, stirring occasionally, until tender yet firm to the bite, 7 to 10 minutes. Drain well in a strainer and set aside. Rinse and wipe out the pot.
  • Melt 1 tablespoon butter in a skillet over medium heat. Add onion and cook until softened, 3 to 5 minutes. Add ground sirloin, breaking it up and cooking until brown all the way through, 7 to 10 minutes more. Season with salt and pepper.
  • Meanwhile, heat milk in a small saucepan over medium-low heat, making sure it does not boil.
  • Melt 1/2 cup of butter in the large pot over low heat and add flour. Cook for 2 minutes, stirring with a whisk. Add hot milk to the pot, whisking constantly, until thickened and smooth, 3 to 5 minutes. Remove from heat and add American cheese, Cheddar cheese, and Cheddar-Jack cheese. Season with 1 tablespoon salt, a pinch of nutmeg, and black pepper to taste. Stir until melted, about 2 minutes more. Add ketchup, mustard, and dill. Stir cooked pasta and sirloin mixture into the cheese. Pour macaroni and cheese into a large baking dish.
  • Arrange sliced tomatoes on top of macaroni and cheese and season with salt and pepper.
  • Combine break crumbs, potato chips, Parmesan cheese, and olive oil in a resealable plastic bag. Seal bag and shake to combine. Sprinkle topping evenly over tomatoes in the baking dish.
  • Bake in the preheated oven until sauce is bubbly and bread crumb topping is browned, 30 to 35 minutes.
