2 garlic cloves, minced
10 ounces spinach, thawed and well drained (frozen chopped)
15 ounces part-skim ricotta cheese
6 ounces part-skim mozzarella cheese, shredded
6 ounces provolone cheese, cut into very small pieces (shredded)
3 ounces reduced-fat cream cheese
1/2 cup parmesan cheese, shredded (divided)
1 egg
8 ounces manicotti, cooked al dente' and drained (14 count)
16 ounces spaghetti sauce (with meat)

Steps:

  • Preheat oven to 350°F Spray a 9x13 pan with nonstick cooking spray (or using additional sauce, lightly spread some sauce on the bottom of the pan). Set aside.
  • Spray large nonstick skillet with cooking spray. Add mushrooms and garlic; cook 5 minutes on medium heat, stirring frequently. Remove from heat.
  • In a large bowl, mix thoroughly the mushroom mixture, spinach, ricotta cheese, provolone, cream cheese, half of Parmesan cheese, and the eggs.
  • Spoon (or use a pastry bag with a large tip) about 2 tbsp of filling mixture into the manicotti shells and then place them into the 9x13 pan.
  • Drizzle remaining sauce over top. Top with remaining Parmesan cheese and bake 55 minutes or until heated through.

Tired of tomato sauce with your pasta? This white sauce is a nice change of pace. Mushrooms and Italian sausage compliment each other well. Don't skip the steps in sauteeing the mushrooms -- this gives the dish its great flavor. A great recipe for entertaining! I made the stuffed pasta ahead of time, covered it and kept it in the refrigerator for several hours. Then quickly made the sauce just before baking. A hit at our dinner party!

1 lb Italian sausage, bulk
1/2 cup green onion, thinly sliced
1 garlic clove, minced
2 tablespoons butter
8 ounces fresh mushrooms, finely chopped
1 (10 3/4 ounce) can cream of mushroom soup, undiluted
1/2 cup sour cream
1/4 teaspoon black pepper
1 (8 ounce) package manicotti pasta, cooked as directed, and drained (rinse with cold water)
1 (5 ounce) can evaporated milk
1 (10 3/4 ounce) can cream of mushroom soup, undiluted
2 tablespoons butter
8 ounces fresh mushrooms, sliced
1 tablespoon minced fresh parsley or 1 teaspoon dried parsley
1/2 cup shredded parmesan cheese
2 cups shredded mozzarella cheese, divided

Steps:

  • Preheat oven to 350. Cook pasta, as directed. Drain and rinse in cold water. (Handle the pasta carefully to avoid tearing the manicotti.).
  • Crumble the italian sausage into a skillet, then cook until no longer pink. Crumble the cooked meat into small pieces. Drain and set aside.
  • In the same skillet, melt the butter, then saute the mushrooms and onions until tender. Add the garlic and cook 2 minutes longer.
  • Transfer vegetables to a bowl, add the sausage, soup, sour cream and pepper. Stir well. Set the skillet aside.
  • Place the meat/mushroom mixture in a large Ziploc bag - snip a hole in one corner. Stuff the manicotti shells and place in a lightly greased 13"x9"x2" baking dish.
  • For the Sauce:.
  • Using the same skillet, melt the butter and saute the sliced mushrooms until tender.
  • Stir in the milk, soup, parsley and heat through. Add the parmesan cheese and HALF the mozzarella. Stir thoroughly. Pour over the stuffed pasta.
  • Cover with aluminum foil and bake at 350 for 25 minutes.
  • Uncover, sprinkle with remaining 1 cup mozzarella, and heat for additional 10 minutes. Enjoy!

4 uncooked manicotti pasta shells
1 tablespoon butter or margarine
2 cups sliced fresh mushrooms (5 oz)
2 tablespoons chopped onion
2 cloves garlic, finely chopped
1/3 cup dry sherry, dry white wine or Progresso™ chicken broth (from 32-oz carton)
1 teaspoon lemon juice
1/4 teaspoon lemon pepper
1/8 teaspoon salt
1/2 cup whipping cream
1 package (3 oz) cream cheese, softened
3 tablespoons crumbled feta cheese
2 tablespoons chopped onion
1/2 teaspoon Worcestershire sauce
1/4 cup diced cooked ham
1 tablespoon chopped fresh chives or 1 teaspoon freeze-dried chives

Steps:

  • Heat oven to 375°F. Cook and drain manicotti shells as directed on package.
  • In 3-quart saucepan melt butter over medium heat. Cook mushrooms, 2 tablespoons onion and garlic in butter about 3 minutes, stirring frequently, until vegetables are crisp-tender. Stir in sherry, lemon juice, lemon pepper and salt. Cook over medium-high heat about 4 minutes, stirring occasionally, until almost all liquid has evaporated. Stir in whipping cream. Heat to boiling, stirring constantly. Boil over medium-high heat about 1 minute, stirring frequently, until slightly thickened.
  • In small bowl, mix cream cheese, feta cheese, 2 tablespoons onion and the Worcestershire sauce with fork until well blended. Stir in ham and chives. Fill each shell with about 3 tablespoons of the cheese mixture, using small spoon.
  • Pour half of sauce unto ungreased 8-inch square (2-quart) glass baking dish. Arrange filled shells in dish. Spoon remaining sauce over shells. Cover and bake about 20 minutes or until hot and bubbly.

8 ounces asparagus, fresh
8 manicotti
2 ounces swiss cheese or 2 ounces provolone cheese, in 8 1/4-oz slices
4 ounces turkey or 4 ounces ham, in 8 1/2-oz slices
1 tablespoon olive oil
3/4 cup onion, chopped
1 cup chicken broth
2 tablespoons white wine
8 ounces mushrooms, sliced
2 tablespoons flour
2 tablespoons parsley, minced

Steps:

  • Preheat oven to 350. Coat a 7x10" casserole with cooking spray.
  • Cook manicotti as directed on package. Rinse with cold water, drain and arrange in a single layer on a plate.
  • Steam asparagus lightly.
  • Stack one slice of ham on top on each cheese slice. Arrange 2-3 spears of asparagus at the end of each stack. Roll up tightly. Insert into manicotti. Arrange in casserole dish.
  • Heat olive oil in skillet over medium high heat. Add onion and mushrooms and cook till golden. Add flour to skillet and stir till blended. Add chicken broth and wine. Continue stirring till mixture comes to a boil. Reduce heat and simmer til thickened. Stir in parsley.
  • Pour sauce over manicotti. Cover and bake for 20 minutes Remove cover and bake 10 mins more.

This is my most famous dish, Manicotti con Spinaci e Funghi, I sometimes make it without the spinach and its just as good, also I really like garlic so if you don't like a very strong garlic taste I would only use one clove instead of the 2-3 i would normally use.

16 ounces manicotti (you might only use 1 box but count on some noodles splitting while they cook)
2 tablespoons extra virgin olive oil
2 eggs
6 ounces mushrooms, I like to use fresh, it really makes a HUGE difference, a whole small box like you buy at the grocer
2 -3 garlic cloves, depending on size, if your not a big fan of garlic just use 1
6 ounces chopped fresh spinach, you can use frozen you will need about 10 oz thawed and dried
1 (15 ounce) container ricotta cheese
1/3 cup chopped basil leaves
1 teaspoon salt
26 ounces of your own spaghetti sauce or 26 ounces about 1 1/2 jars store bought spaghetti sauce
1/2 cup parmesan cheese, again I like to use fresh, the taste is much better. Have extra for the dinner table

Steps:

  • Preheat your oven to 350°F.
  • Cook manicotti noodles for 7 minutes, drain and rinse with cool water; set aside.
  • Heat oil or butter in a large pan over about medium heat, sauté mushrooms and garlic till mushrooms are tender.
  • Add spinach and continue cooking about 5 minutes, careful not to overcook mushrooms and garlic. Drain and set aside.
  • Beat eggs lightly in a large bowl and ricotta cheese, basil and salt. Stir in mushroom mixture. If this ends up being a little too runny for stuffing your manicotti, you can use regular parmesan cheese like you.
  • Keep in your fridge as a kind of filler to thicken it up a bit.
  • Spread about a cup of sauce in the bottom of a large baking dish. Fill manicotti with mushroom/cheese mix place in dish and cover with sauce. Sprinkle the fresh parmesan cheese on top and cover with foil.
  • Bake for 30 minutes. Uncover and place bake in over for 5-10 minutes or until cheese is melted and lightly browned.

GARLICKY SHRIMP MANICOTTI



Garlicky Shrimp Manicotti image

We love shrimp, we love pasta . . . this recipe combines the best of both! While these are perfectly delicious reheated the next day, I would advise baking any leftovers only when needed as the pasta does tend to soften after reheating, making removal from the baking dish (and therefore a pretty presentation) more difficult. Preparation time does not include time to make the marinara sauce or the home-made manicotti.

1/2 tablespoon olive oil
1 lb raw shrimp, peeled and cut into thirds
1 garlic clove, finely minced
1/8 cup fresh parsley, chopped
fresh ground black pepper
8 ounces mozzarella cheese (fresh or otherwise, but NOT grated)
2 cups marinara sauce (I use my My "base for Everything" Zippy Marinara Sauce)
9 fresh manicotti crepes (I use my Fresh-Made Manicotti or Cannelloni Crepes Shells)

Steps:

  • Pre-heat oven to 400°F.
  • Heat the oil in a non-stick frying pan over medium heat (TIP: you can probably use the same pan as you made your manicotti in if you followed my recipe).
  • Add the shrimp pieces and the garlic, and cook quickly, stirring, until the shrimp just turns pick; remove from heat.
  • Stir in the parsley and season to taste with pepper; set aside.
  • Divide the mozzarella in half; cut one of the halves in nine equally-sized strips and cut the other half in small cubes.
  • Using a small amount of the marinara sauce, coat the bottom of as many oven-proof baking dishes as needed--manicotti expand during cooking, so don't overcrowd and also bear in mind whether you'll be eating them all at one meal or will have leftovers (see comment in description about re-heating).
  • Divide the shrimp mixture equally between the 9 manicotti shells, placing it in a vertical strip on each.
  • Lay one strip of mozzarella on each over the shrimp mixture.
  • With the vertical strip facing you, bring the left and right sides of the crepe towards the center, folding one over the other and using your hands to make a nice compact tube.
  • Place seam-side down in your baking dish and repeat with remaining.
  • Top manicottis with the marinara sauce and sprinkle mozzarella cubes over all.
  • Bake for 25-35 minutes, or until the cheese has melted and the marinara is bubbly.
  • Allow to rest 5 minutes before serving.

Steps:

  • Preheat oven to 375.
  • In a large bowl combine 1 cup of the Mozzarella with all of the Cheddar cheese, mushrooms, olives, onion, bread crumbs, egg, milk, parsley, and pepper until mixed well. Set aside.
  • Combine spaghetti sauce and water and pour half the sauce into a shallow 3 quart casserole or baking dish.
  • Stuff manicotti shells with cheese mixture and arrange side by side in sauce. Pour remaining sauce over top.
  • Bake, covered, in a 375F degree oven for about 1 hour. Remove cover and sprinkle with remaining Mozzarella cheese, and return to oven, uncovered, for about 10 more minutes or until cheese is melted.
  • Serve with Parmesan cheese, your favorite garlic bread and side salad.
