An easy version of a classic school-lunch favorite is the cheese zombie and will be sure to delight any youngster.

1 (8-ounce) tube crescent rolls
4 to 8 thin slices orange cheese (sliced cheddar, American cheese, or Velveeta)

Steps:

  • Gather the ingredients.
  • Preheat oven to 350 F.
  • Open the tube of crescent rolls. Gently unroll the dough to form 2 rectangles (ignore the dotted lines that separate the dough into 8 triangles).
  • Cover one side of each rectangle with your desired amount of cheese slices.
  • Fold the other side of the rectangle over the cheese to form a smaller, enclosed rectangle.
  • Gently pull the edges of the top layer of dough over the sides of the rectangle, pinching the edges to seal the dough into a pocket that the cheese is enclosed in.
  • Repeat this process with the second dough rectangle.
  • Bake on a cookie sheet for 15 minutes until lightly browned.
  • Slice in half and serve immediately.
  • Enjoy.

Number Of Ingredients 8

To make 2 ½ pounds of dough:
2 cups warm water
1½ - 2 Tablespoons yeast
6 cups bread flour
¼ cup sugar
1 - 1 ½ teaspoons salt (depending on taste)
¼ cup butter
Fillings: If traditional filling is desired use 1 ½ to 2 oz. of cheese (think creamy cheeses) per zombie

Steps:

  • Dissolve yeast in warm water. Add remaining ingredients and mix with dough hook about 10 minutes until the dough no longer sticks to the sides of the bowl. Dough should be soft and pliable. Let dough rest a few minutes then divide into 1-pound portions. Roll the portions into logs. Cut each log into 5 equal pieces. Load the cheese on top of each dough slice, then pull dough up from the sides to cover filling. Pinch closed very carefully. Place zombies pinched side down on parchment paper or a greased cookie sheet pan (parchment works best). Brush with egg wash. Let rise until almost doubled in size. Bake @350 degrees until brown on top, about 15 to 20 minutes. You know you are a true ZoMbiE mAkeR when you don't have a single "leaker" ;)

Cheese Zombies are pillowy soft, buttery bread rolls filled with gooey, cheesy goodness. Fresh and warm out of the oven, they are completely irresistible!

1/2 cup warm water
1 1/2 tablespoons active dry yeast
1/3 cup plus 1 teaspoon granulated sugar (, divided)
1 cup lukewarm whole milk
1/4 cup unsalted butter (, softened)
1 teaspoon salt
1 large egg (, lightly beaten)
4 1/2 cups unbleached all-purpose flour (, spooned and leveled)
8 ounces Velveeta processed cheese (, cut into 16 cubes)
1/4 cup unsalted butter (, melted)

Steps:

  • Line two baking sheets with parchment paper. Set aside.
  • In a large bowl, combine water, yeast, and 1 teaspoon sugar. Stir to dissolve and set aside until foamy, 5-10 minutes.
  • Add milk, softened butter, salt, remaining 1/3 cup sugar, egg, and 2 cups of the flour. Mix until well combined, and then add remaining flour, 1/2 cup at a time, until dough just starts to clear the sides of the bowl (you may not need it all.)
  • Transfer to a lightly floured surface and knead until a soft, elastic dough forms.
  • Transfer dough to a lightly oiled bowl, cover, and let rise in a warm place for about 15 minutes.
  • Turn the dough out into a rectangle and divide into 16 equal pieces. Shape pieces into rounds, then flatten slightly. Tuck a cube of cheese into the center of each round and pinch the dough around the cheese, tightly together at the bottom, working to shape each one into a round, tight ball.
  • Place rolls, pinched-side down on the prepared baking sheets, spacing them about 2 inches apart. Cover with plastic wrap and let rise again in a warm place for about 30 minutes.
  • Preheat oven to 375° F.
  • Brush the tops of the rolls with melted butter. Bake for 15 minutes, switching baking sheets halfway through baking time. Brush the tops with remaining butter and bake for 5 more minutes or until golden brown.
  • Remove from the oven and cool slightly before serving, but still hot enough that you get that awesome gooey cheese when you break them open!
  • NOTE: Do not substitute the Velveeta for real cheddar cheese. It won't melt properly and will make them greasy. For helpful tips refer to the full article and be sure to watch the video for visual help.

This is posted in response to a request. I had a hard time finding it as half the school calendars in the country have it listed as a menu item but not one offered a description of the dang things.

32 ounces frozen bread dough
16 ounces cheddar cheese (or cheese of your choice, including blends)

Steps:

  • Thaw bread dough and divide in half. Using whatever means you feel is necessary, spread dough in a 13x18 inch jelly roll pan, or any pan with low sides.
  • Shred your cheese and reserve 4 ounces. Spread 12 ounces of cheese over bread dough. Roll second half of dough into a 13x18 inch square and place on top of the cheese. Press down the edges a bit to keep the top and the bottom the same size during baking.
  • Bake at 350° for 45 minutes Sprinkle remaining 4 ounces of cheese on the top of the bread and bake another 5 minutes
  • Let this cool for about 20 mins before cutting into 12 squares. Serve with soup or steamed veggies.
  • Variations: add fun things to the cheese in the middle like chopped red pepper, chopped mushrooms, sliced green onion, or chopped black olives. I do NOT recommend spinach as a potential add-in since it's so water-filled. I know, I know, so are mushrooms, but not as much.

Number Of Ingredients 9

3 active dry yeast
2 1/4 cups warm water (110 degrees)
1/2 cup granulated sugar
1/2 cup vegetable oil
3/4 cup instant non-fat powdered milk
6 1/2 cups flour
1 1/2 teaspoons salt
1 1/4 lbs American cheese or 1 1/4 lbs Velveeta cheese
1 little butter (brush on after baking - see note)

Steps:

  • n a large mixing bowl, mix yeast with water, let sit five minutes until it begins to get bubbly. Add the sugar, oil and powdered milk and mix on low with a paddle attachment.
  • Change to a dough hook and add the flour and salt and knead about 8 minutes until dough is smooth and elastic.
  • Divide into 2 equal parts, form each into a ball. Place each in a bowl sprayed with cooking spray or coated with oil, smooth side down, turning the smooth side back up (so it is covered with a light coating of the oil). Cover the bowl with plastic wrap and let rise in warm place for an hour or so until doubled in size. When risen, save the plastic wrap to cover the tray of Zombies while it rises.
  • On a lightly sprayed or oiled half sheet pan (17 x 12 x 1), stretch one ball of dough evenly to the edges and slightly above. Top with sliced cheese and any other filling if using. Take the second ball and stretch it out on a counter next to the tray so it is a rectangle several inches smaller than the tray.
  • Pick it up (it will hopefully just stretch to about the size of the tray as you do so) and place over the top of the cheese. Gently, trying not to disturb the cheese, stretch and pinch the edges of the top layer to the bottom, sealing well.
  • Cover lightly with plastic wrap and let rest until doubled in size, about 30 minutes to an hour. Bake 18-20 minutes at 400 degrees until the top is golden brown, rotating the tray about 3/4's way through.
  • Remove from oven and brush with butter, let cool several minutes, slice and serve.
  • NOTES:.
  • Butter - the easiest way to brush with butter is to open a stick of cold butter and rub the end across the top of the hot dough.
  • This seems like a lot of cheese, but don't skimp or they're really not as good.
  • All kinds of add-ins or changeups can be made to the original filling. Just be sure to use a good melty cheese.
  • Zombies may be reheated in the microwave. Wrap in a napkin or paper towel, heat on 70 percent power for one minute, then turn and cook on high for 30 seconds.
  • Zombies may be frozen, then wrapped, for later. Reheat from frozen, as above, on 70 percent power for one minute, then turn and cook on high for 45 seconds.

4 mozzarella string cheeses, halved crosswise
4 pimiento-stuffed green olives, halved lengthwise
1 camembert cheese, 10 ounce (300 G) wedge
6 wax-coated mini cheese wheels
6 large bloody eyeball candies
1 teaspoon marshmallow fluff
12 oz white chocolate, roughly chopped
6 large strawberries
12 googly eye candies
1 cup sour cream
¼ cup lime juice
2 medium avocados
2 jalapeñoes, seeded and roughly chopped
½ bunch scallions, chopped
½ bunch fresh cilantro, stems removed
2 teaspoons kosher salt
½ teaspoon freshly ground black pepper
4 garlic cloves
¼ cup cherry pie filling
¼ cup pimiento-stuffed green olives
8 oz cheddar cheese, sliced
8 oz sliced mozzarella, or Provolone cheese
1 ½ oz Halloween-shaped vegetable chips
1 ½ oz Halloween-shaped pretzels
2 oz Halloween-shaped cheddar puffs
2 oz Parmesan crisps
2 tablespoons water
Casket-shaped cookie cutter
plastic skull
3 plastic cauldrons, mini
Pumpkin-shaped cookie cutter
Ghost-shaped cookie cutter
1 toy shovel
1 medium cast-iron cauldron
Mini orange battery-operated tea light
Plastic skeleton hand
1 dry ice cube
toy spider

Steps:

  • Make the cheese fingers: On one end of a string cheese half, cut a small piece of cheese to create a nail bed. Carve out 3-4 more small pieces ¼ inch (6 mm) up from the first cut to create knuckle creases. Place an olive half cut-side down at the tip of a string cheese half for a fingernail. Repeat with the remaining string cheese and olive halves.
  • Make the Camembert casket: Lightly press the casket cutter through the top of the wedge of Camembert cheese. Using a sharp paring knife, cut away the excess cheese from the outside of the cutter and reserve for another use. Remove the casket from the cutter.
  • Make the cheese zombies: Unwrap the wax seal from around a mini cheese wheel and slightly open up the remaining wax. Dab a bit marshmallow fluff on the back of a large bloody eyeball candy, then press onto one side of the wax seal. Repeat with the remaining cheese wheels and eyeball candies.
  • Make the mummy berries: Dip the strawberries in the melted white chocolate, then place on a sheet of parchment paper and let set for 2 minutes. Place 2 googly eye candies on each strawberry, then let the chocolate set completely, about 3 minutes.
  • Transfer the remaining melted chocolate to a piping bag and cut a small hole at the tip. Starting right below the eyes, drizzle the chocolate over the strawberries in a zigzag pattern, first from left to right, then right to left, to make a mummy effect.
  • Make the blood of Frankenstein dip: In a food processor or blender, combine the sour cream, lime juice, avocados, jalapeños, scallions, cilantro, salt, pepper, and garlic. Process until well combined, 2-4 minutes. Transfer to a mini cauldron for serving.
  • Add the cherry pie filling and pimiento-stuffed green olives to mini cauldrons.
  • Make the cheese cutouts: Using a pumpkin cookie cutter, cut out shapes from the sliced cheddar cheese. Use a ghost cookie cutter to cut out shapes from the sliced mozzarella cheese.
  • Assemble the board: Place the plastic skull on a large board or flat platter. Set the mini cauldrons with the blood of Frankenstien dip, cherry pie filling, and green olives on the board. Arrange the pumpkin and ghost cheese cut-outs, cheese fingers, Camembert casket (with the toy shovel, if using), cheese zombies, and mummy berries on the board. Fill in empty spaces with the Halloween-shaped vegetable chips, pretzels, cheddar puffs, and Parmesan crisps. Decorate the board with the cast iron cauldron, mini orange tea lights, skeleton hand, and plastic spiders. Just before serving, use tongs to carefully add the dry ice cube to the cast iron cauldron, then fill with the water.
